BANANA CREAM PIE DIP
A ring of caramelized bananas adds a bit of flair to this crust-less version of a classic banana cream pie. Scoop it up with vanilla wafer cookies to add some crunch.

- Put the banana pudding mix in a medium bowl. Slowly pour in the milk while beating with an electric mixer on medium speed. Once all the milk has been added, increase the speed to high and beat until smooth and fluffy, about 2 minutes. Add the vanilla and salt and mix until combined. Roughly chop 2 of the bananas and stir them into the pudding mixture to combine. Transfer to a 9-inch pie dish. Refrigerate, covered, until chilled, about 2 hours.
- Thinly slice the remaining banana into rounds. Decorate the outer rim of the dip with a ring of overlapping banana rounds. Sprinkle the bananas with the sugar. Use a kitchen torch to caramelize and slightly burn the sugar on the bananas. Cover the top with whipped cream, making sure not to cover the bananas. Serve with vanilla wafers for dipping.
CREAMY SHRIMP AND BANANA PEPPER DIP
Sweet banana peppers lend a slightly tangy flavor to this creamy shrimp dip. Sprinkle with chopped green onions and serve with tortilla chips.

Steps:
- Chop 3 banana peppers; place in medium bowl. Reserve 2 Tbsp. onions. Add remaining onions to peppers along with the shrimp, corn and shredded cheese; mix lightly.
- Blend salsa and cream cheese in blender until smooth; pour into medium saucepan. Cook on medium heat 3 min. or until cream cheese is melted, stirring constantly. Add shrimp mixture; cook and stir 5 min. or until heated through. Pour into serving dish.
- Slice remaining pepper; place over dip. Sprinkle with reserved onions.

STUFFED BANANA PEPPERS
Steps:
- Mix sausage, cheese, bread crumbs, salt and pepper, and egg together in mixing bowl. Season to taste. Adjust mixture with additional cheese and bread crumbs if too dry or moist - medium moisture for stuffing desired. Make a radial slice around the top of the banana pepper leaving the top intact. Pull back top and remove seeds if so desired. Gently stuff mixture into peppers. Place olive oil in hot saute pan. Gently place peppers in the pan and fry each side until browned. Place marinara sauce in middle of plate. Arrange peppers on top of marinara and grate the dry ricotta cheese on top of the hot peppers.

- Mix softened cream cheese, all the cheeses, and the peppers and spread in a pie dish . Sprinkle bread crumbs on top, drizzle olive oil. Bake at 425 degrees fahrenheit for 15-20 minutes or until bubbly. Serve with crackers or tortilla chips.
THE BEST DAMNED FRIED BANANA PEPPERS EVER
This recipe comes from my long time friend, Tracy. I really can not believe she shared it with me.....all this time, I thought she cast some magic spell over the frying pan to make them taste so good! Turns out it was just the saltine crackers! The mystery is over...... Do keep in mind, that this is NOT a "batter" recipe (if you love breading, you may want to try something else). The coating is light and crispy and you end up with more coverage on the 'interior' part of the pepper than the exterior. I think they are wonderful this way!

Steps:
- Heat vegetable oil in frying pan over medium heat.
- In medium bowl, mix together equal parts corn meal and crushed saltines.
- Prepare another shallow bowl of buttermilk.
- Dip banana peppers in buttermilk.
- Coat with cornmeal/cracker mixture.
- Fry in veg oil over medium heat until golden brown.
- Drain/cool slightly on paper towels.
- Enjoy alone or with cocktail sauce!

Steps:
- In saucepan, melt butter over medium heat; cook onion for 3 minutes, or until softened but not browned. Push to side of pan.
- Add banana slices to pan and cook for 1 minute. Add curry powder and cook for 1 minute, stirring banana and onion together.
- Add water and bring to boil; reduce heat and simmer for 10 minutes or until thickened and liquid is reduced by half.
- Remove from heat; stir in jam.
- Transfer to food processor or blender; process until smooth.
- Add sour cream, mayonnaise, salt, and pepper to taste; process just until combined.
- (Can be covered and refrigerated for up to 1 day. Let stand at room temperature for 30 minutes before serving.).
