  • sift flour, sugar, baking powder, soda salt.
  • add shortening mix.
  • then add eggs,bananas, vanilla and blend well.
  • drop on ungreased cookie sheet.
  • sprinkle with sugar and cinnamon mixture.
  • bake at 400F degrees for 12 minutes.

  • In a mixing bowl, beat together sugar, butter, sliced banana and vanilla. In a sperate bowl, stir together flour and salt. Gradually combine flour mixture into creamed mixture. Stir in chips.

  • Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  • Spread walnuts onto a baking sheet.
  • Bake in the preheated oven until walnuts are toasted and fragrant, 5 to 7 minutes. Remove from oven and cool; coarsely chop.
  • Whisk all-purpose flour, whole wheat flour, salt, and baking soda together in a bowl. Beat butter, brown sugar, and white sugar together in a bowl using an electric mixer until pale and fluffy; add egg and vanilla extract. Beat until just combined.   • Heat oven to 375°F. Mash 2 of the bananas to measure 1 cup mashed; reserve remaining 1/2 banana.   • Preheat oven to 350 degrees. Lightly spray two baking sheets with oil. In a mixing bowl, mash banana well. Add oil, sugar and vanilla, and mix with a strong fork. Add flour, baking soda, salt and cinnamon, and mix until just moistened.
  • Add oatmeal, walnuts and chocolate chips. Using your hands or a sturdy spoon, mix well, making sure oats are well moistened. (If dough is very slippery, add one or two extra tablespoons flour.)
  • Using clean, wet hands, re-wetting as needed, roll dough into balls slightly smaller than a golf ball, about 1 1/3 inches in diameter. Flatten slightly and place 2 inches apart on a baking sheet. Bake until lightly browned, 10 to 12 minutes. Remove from heat and allow to cool for 2 minutes, then transfer to a rack to cool completely. Store in an airtight container.

  • Process oats in blender or food processor at medium speed til finely ground. (about 1 minute).
