Steps:

  • Preheat the oven to 375 degrees F. Spray an 8-inch square glass or ceramic baking dish with nonstick cooking spray. You want the mixture to be 3 to 4 inches high in the dish so it doesn't dry out.
  • Combine the oats, 1 tablespoon of the dark brown sugar, baking powder, cinnamon, nuts, if using, and salt in a large bowl.
  • Mash 1/2 of the banana in a medium bowl. Whisk in the milk, melted butter, vanilla and egg until combined.
  • Stir the wet ingredients into the dry ingredients until fully incorporated. Very gently fold in the blueberries with a rubber spatula.
  • Pour the oatmeal into the prepared baking dish and smooth the top. Thinly slice the remaining 1/2 banana crosswise and arrange the slices in an even layer over the top. Sprinkle with the remaining 1 tablespoon dark brown sugar (see Cook's Note). Bake until the top is slightly browned and the oats are tender, 35 to 45 minutes. Enjoy!

Nonstick cooking spray
1 1/2 cups rolled oats
2 tablespoons dark brown sugar
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/4 cup chopped walnuts or almonds, optional
1/8 teaspoon fine table salt
1 very ripe large banana
1 cup nonfat milk
1 tablespoon unsalted butter, melted
1/2 teaspoon pure vanilla extract
1 large egg
1/2 cup blueberries

BANANA OATMEAL COOKIE

This recipe has been handed down in my family for generations. It's a good way to use overripe bananas. It's also a moist cookie that travels well either in the mail or car. This is usually the first cookie to disappear at my house.

Steps:

  • Heat oven to 350.
  • Mix flour, baking soda, salt, cinnamon and oats in large bowl. Set aside.
  • Cream butter and both sugars. I do this by hand with a whisk, but a hand mixer would work well too.
  • Add honey and egg and stir well with rigid spoon.
  • Add smashed bananas.
  • Stir in the dry ingredients.
  • Add blueberries, about a cup, or as many as you wish. Make sure that they are thawed and drained well if you are using frozen ones so the cookies do not get too mushy.
  • Drop by rounded teaspoon on greased cookie sheets.
  • Bake for 10 minutes. They will be very lightly browned on the bottom edges. They might look like they are not quite done, but as long as they are set, they should be good. If you cook them too long they will be dry.
  • Cool on wire racks and keep airtight, with wax paper or plastic wrap between layers of cookies so they don't stick together. Enjoy!
