BARLEY PILAF
Barley can be found in two forms-hulled and pearled. Pearling removes almost a third of the grain, making it quicker cooking and reducing some nutrients. Hulled barley takes longer to cook but has a higher nutrient content and a pleasant, toothsome chewiness. This pilaf recipe is a simple way to enjoy hulled barley.

Steps:
- Melt the butter in a medium saucepan over medium heat. Add the onion and cook, stirring occasionally, until soft and lightly golden brown, about 6 minutes. Add the barley and stir until the grains are just coated in butter. Add the broth and 1/2 teaspoon of salt and bring to a boil. Reduce the heat to medium low, cover and simmer 20 minutes. Uncover and quickly stir in the spaghetti; cover and continue to simmer until most of the liquid is absorbed and the barley and spaghetti are tender, stirring once more, about 15 minutes more. Remove from heat and let sit, covered, for 10 minutes.
- Season to taste with salt and pepper and sprinkle with chopped chives.

LEMON-BARLEY PILAF

Steps:
- Melt butter in heavy medium saucepan over medium heat. Add onion; sprinkle with salt and pepper. Sauté until onion is beginning to soften, about 5 minutes. Add barley; cook 3 minutes, stirring constantly. Add chicken broth and bay leaf; bring to boil. Reduce heat to low, stir once, and cover. Cook until barley is almost tender, about 25 minutes.
- Add carrot and bell pepper; cover and cook until vegetables are tender, about 6 minutes. Remove pilaf from heat and stir. Cover and let stand 10 minutes. Discard bay leaf. Season to taste with salt and pepper. Stir in lemon peel and serve.

- Heat oil in large pot and add mustard seeds.
- Cook 60 seconds or till they start to pop.
- Add onions and garlic - cook till soft.
- Stir in ground coriander and turmeric - cook one minute more.
- Add barley and stir till well coated.
- Add stock, bring to the boil.
- Simmer on low for 25 minutes, stir occassionally.
- Add red lentils and simmer for another 20 minutes.
- Add cauliflower and peas and cook about 10 minutes till vegetables are tender and nearly all liquid is absorbed.
- Fluff the grains with a fork.
- Stir through coriander and season to taste.

- In medium sized pot heat, over medium high heat, the oil and saute the leek until just softened.
- Add the barley and continue sauteing for 2 minutes.
- Add salt, stock and raisins.
- Cook, covered, over medium heat until tender. Approximately 12-15 minutes.
- Let stand 5 minutes.
- Stir in the chives, basil, lemon zest and juice.
- Adjust seasonings if necessary.

- Bring the vegetable stock to boil in a saucepan. Stir in the barley. Lower the heat, cover, and simmer on very low heat until the barley is tender and the liquid is absorbed. Let stand about 5 minutes before adding the leeks and walnuts.
- While the barley cooks, heat the first 2 tablespoons of oil in a skillet over medium flame until shimmering. Add the leeks and sauté until tender, about 5 minutes. Season with salt and a generous grind of black pepper.
- Gently stir the leeks and walnuts into the cooked barley. Keep warm while you prepare the broccoli.
- Cut the broccoli florets from the thick stalk, leaving about an inch of stalk attached to the florets. Save the rest of the stalks for another purpose, perhaps a stir-fry. Cut the florets through the base of the head with a small knife, pulling the florets apart. Cut the larger florets in half down the middle.
