This is one of my stepmother's recipes. Tastes good topped with grated sharp cheddar cheese. Any leftovers will taste even better the next day.

- In a large skillet, combine the hot dogs, baked beans, ketchup, cider vinegar, Worcestershire sauce, garlic powder and parsley. Mix to blend, and bring to a boil. Turn heat to low, cover, and simmer for 25 to 30 minutes, stirring occasionally.

My version of beans and franks. One daughter likes the beans part and the other daughter likes the franks part. Even though this seems like it is mostly for kids, I eat this all the time myself. It only takes about 10 minutes to make.

Steps:
- Set your oven to 450 degrees Fahrenheit.
- Dump can of baked beans (we use Bush's vegetarian) into a casserole dish. (We use a medium sized glass bowlish looking thing).
- Set the dish aside.
- Cut up hotdogs into bite sized pieces; add to casserole dish, and mix until dogs are well coated with baked bean sauce.
- Cover the bean and dog mixture with tater tots. We usually use a couple handfuls; use as many as you'd like. Just make sure to cover the mixture completely.
- Place the casserole dish in the oven for 1/2 an hour or until tater tots are golden brown.
- When Redneck Casserole is all done, turn off the oven and sprinkle the top with cheese.
- Redneck Casserole is completely done when cheese is melted and you just can't take it anymore; dig in!
- (You can mix pretty much anything with this dish; sour cream, ketchup, mustard, hot sauce, etc.).

- Slice hot dog in bite-sized pieces. Add rest of ingredients to a greased 2 quart casserole dish, mix well.
- Cover & Bake at 350 degrees for 20 minute.

Steps:
- Season tomato slices with olive oil, cumin, chili powder and salt. Roast in a 350-degree oven until slightly caramelized. Chop roughly.
- Preheat a 10-inch sauté pan. Add some olive oil, the garlic, onions, peppers and the tomato. Cook until soft. Add more of the dry seasonings if necessary. Add the vinegar and remove from heat.
- Combine the vegetables with the beans and mix well. Add herbs. If mixture seems dry, add some reserved liquid from the beans.
- Place in a casserole dish, cover and bake at 325 degrees for 20 to 30 minutes.
- Uncover, sprinkle with cheese and return to oven to melt the cheese.
- Garnish with chopped scallion.

- Heat oven to 350. Coat 13 x 9 x 2 inch baking dish with nonstick cooking spray. Heat a large nonstick skillet over medium-high heat and cook hot dogs until nicely browned, about 3 minutes per side. My sons loved this dish when they were young and the oldest one still does. It's a quick fix for a busy week night or weekend. What I love about them you can add more beans or franks. You might want to add a little brown sugar or even barbeque sauce, but this is the way I make them everytime.
