ROOT BEER FLOAT ICE CREAM

This ice cream has the great taste of a root beer float without the soda. It's a great summertime dessert. Root beer concentrate can be found in the spice section of the market.

Steps:

  • Whip eggs until foamy, then slowly pour in sugar while continuing to whip eggs until ribbony. Fold in cream, milk, vanilla extract, root beer extract until evenly mixed.
  • Freeze in ice cream maker according to manufacturer's directions, about 30 minutes.

Bittersweet Chocolate and Stout Beer Ice Cream image

Steps:

  • Heat the heavy cream in a saucepan over medium-low heat until it begins to bubble. Remove from the heat and stir in the chocolate and sugar until melted. Slowly stir in the stout beer. Cover and refrigerate until completely cooled.
  • Pour the chilled mixture into an ice cream maker and freeze according to manufacturer's directions until it reaches "soft-serve" consistency. Transfer ice cream to a two-quart lidded plastic container; cover surface with plastic wrap and seal. For best results, ice cream should ripen in the freezer for at least 2 hours or overnight.

Steps:

  • In a large bowl, mix all ingredients together until sugar dissolves.
  • Refrigerate mixture until well chilled (1-4 hours).
  • Pour chilled mixture into ice cream machine.
  • Freeze according to the manufacturer's instructions.
  • After the ice cream is made, transfer to an airtight container, press a layer of plastic wrap on to the surface of the ice cream, cover tightly with the container lid.
  • Place container in freezer until ready to serve.

  • Pour 6 ounces of the beer into a small saucepan. Bring to a simmer over medium high heat and simmer until the beer reduces by half (to 3 ounces.) Remove from heat.
  • In a large saucepan, add the egg yolks, sugar and salt and whisk together well. Whisk in the cream and cook, stirring constantly, until a custard is formed. You want it at 180 degrees, or to be thick enough to coat the back of a spoon.
  • Strain the mixture into a clean bowl using a fine mesh strainer. (This will remove any bits of cooked egg.)
