- Beat pudding mix, milk and rum extract in medium bowl 2 minutes, using wire whisk. Refrigerate 10 minutes. Fold in whipped topping.
- Cut each brownie into 12 squares. For each serving, spoon about 2 tablespoons pudding mixture into 6- to 10-inch parfait glass. Top with 4 brownie pieces and 4 raspberries; press lightly. Repeat layers. Top each with 2 tablespoons pudding mixture. Refrigerate 30 minutes. Garnish with remaining raspberries.

- In medium bowl, fold chocolate syrup into whipped topping. Set aside.
- In large microwavable bowl, microwave raspberry jam on High 30 seconds or until melted. Add strawberries, raspberries and blackberries; toss until well coated.
- To assemble, divide 2 cups of the cake cubes evenly among 8 parfait, wine or champagne glasses. Layer each with half of the chocolate whipped topping and half of the berry mixture. Repeat layers with remaining 2 cups cake cubes, chocolate whipped topping and berries. Serve or refrigerate.

- For the brownie crumbles: In the bowl of a food processor, add walnuts and process on high until the nuts are finely ground. Add the cocoa powder and kosher salt. Pulse to combine.
- Remove the pits from the dates. Turn on the food processor and as it is running, add the dates one at a time. Stop processing once the mixture is crumbly but easily formable. Add the almonds and pulse several times to combine.
- In a small square dish, press the brownie mixture into a layer at least 1 inch thick (even if it does not fill the entire dish), or thicker if desired. Place in the freezer for 15 minutes.
- For the berry compote: place the frozen berries, fresh lemon juice, and maple syrup in a skillet over medium heat. Stir for several minutes until fruit is thawed. In a small bowl, mix the cornstarch with 1 tablespoon water, then pour into skillet and heat until the sauce is thickened.
