BREAKFAST QUESADILLAS

- In a small bowl, whisk the eggs. Coat a large skillet with cooking spray. Add eggs; cook and stir over medium heat until completely set., Place tortillas on a griddle. Spoon eggs over half of each tortilla; sprinkle with cheese, bacon and onion. Fold over and cook over low heat until cheese is melted, 1-2 minutes on each side. Serve with sour cream and salsa.

- Fry the bacon in a skillet over medium heat until crisp. Remove to a paper towel-lined plate and pour off the excess grease.
- Return the skillet to the stove over high heat. Add a couple tablespoons of butter. When it's melted and the skillet is hot, add the onions, bell peppers and jalapenos. Stir the veggies around and cook until starting to soften and turn golden brown.
- Meanwhile, mix together the half-and-half, eggs and some salt and pepper in a bowl. Pour the egg mixture into the skillet with the veggies. Scoot the eggs around the skillet with a spatula, cooking slowly, until the eggs are done. Turn off the heat and set aside.
- To assemble the quesadillas, set a griddle or skillet over medium-low heat and add some butter. Toss together the grated Cheddar and Monterey Jack in a bowl. Put a tortilla on the griddle and add a layer of cheese, a layer of the cooked eggs and veggies, a layer of bacon slices, a layer of avocado if using and another layer of cheese. Top with a second tortilla. Cook on both sides, flipping carefully, until the cheeses are totally melted and the filling is hot. Repeat with the other tortillas and ingredients.
- Slice the 3 quesadillas into 4 wedges each. Serve on a plate with sour cream and pico de gallo or salsa (or grab them and head out the door!).
MAKE-AHEAD BREAKFAST QUESADILLA RECIPE BY TASTY

FAST BREAKFAST QUESADILLA
I *love* quesadillas, so I came up with this one for a quick and easy breakfast. You can substitute add or take away pretty much anything. It's easily modified for the pickiest of eaters. Toppings are not included in nutritional facts.

Steps:
- Crack egg into small bowl.
- Salt and Pepper and desired.
- Add Tbs milk and whisk until scrambled.
- Spray a regular dinner plate with nonstick cooking spray.
- Place one tortilla on plate.
- Sprinkle liberally with shredded cheese.
- Pour egg mixture on top of cheese in a spiral shape.
- Place in microwave for one minute.
- Cut meat into small pieces (less than bite size).
- Sprinkle on top of egg and cheese from microwave, and top with some more cheese.
- (I tend to add onions and jalapeno peppers here; totally optional).
- Place 2nd tortilla on top and microwave for 30 secs - 1 minute (until egg is done to your liking and cheese is melted).
- Cut with pizza cutter, add whatever toppings you desire, and serve.

- In a small sauté pan heat 1 tablespoon of olive oil over medium-high heat. Add the red pepper and cook for 2 minutes, stirring occasionally. Add garlic powder and a big pinch of salt, stir, and reduce heat to low. Cook for about 12 minutes, stirring occasionally, and adding a splash of water to the pan if it gets dry. The peppers will be charred and soft when finished.
- In a separate sauté pan heat the remaining olive oil over medium flame. Add the red onion and cook for 6 minutes, stirring occasionally. Add the garlic, cilantro, and crushed red pepper, stir to combine and cook for another minute before adding the beans. Simmer on low for 12 minutes. Add salt and pepper according to taste.
- While the beans are simmering away, make your eggs! In a medium size bowl, beat eggs, milk, water, salt and pepper until light and fluffy; about 2 minutes. Using a nonstick frying pan, melt 1 1/2 tablespoons of butter, and cook eggs over very low heat, stirring almost constantly. Cook until you reach desired consistency; I find this is about 4-5 minutes for us.

- Heat a non-stick pan over medium heat. Cook Sausage or Bacon until browned and cooked through then remove to a plate. If using cooked ham, you can heat it up or just add it over the cheese in step 4. Wipe excess oil from skillet if needed. Reduce heat to low.
- In a measuring cup, add 2 eggs with a pinch of salt and pepper, or add seasoning to taste. Beat with a fork. Add beaten eggs and swirl to spread evenly over the bottom of the pan. Cook over low heat until When eggs are nearly cooked through (if you tilt the pan they shouldn't run).
- Sprinkle the top with 2 Tbsp shredded cheese then cover with a tortilla. The cheese will make the tortilla stick to the egg. Use a large spatula to get under the egg and quickly flip over.
- Sprinkle another 2 Tbsp of cheese or add cheese to taste. Sprinkle your cooked protein (sausage, bacon or ham) over half of the surface and fold the tortilla in half. Sautee on both sides until golden brown.* Remove from skillet and use a pizza cutter to cut quesadilla into wedges and serve warm.
