GERMAN CHICKEN
Boneless chicken breasts cooked over sauerkraut and covered in BBQ sauce. This sounds a little different, but I assure you, it is delicious! It is one of my family's favorites. The BBQ sauce makes the sauerkraut a little sweet. I like to serve this dish with mashed potatoes.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a 9x13 inch baking dish, place the sauerkraut in a single layer. Place the chicken breasts on top of the sauerkraut. Pour the barbecue sauce over the chicken. Cover and bake in the preheated oven for 30 minutes or until the chicken is cooked and the juices run clear.

Steps:
- Fill a large pot with water and bring to a boil.
- Add chicken and vegetables (except leeks and parsley).
- Add salt, pepper and bouillon cubes as well as Maggi.
- Cook for 1-2 hours until chicken starts falling off the bone.
- Remove the chicken from the pot and let cool off until you can strip it off the bones and put back into the pot.
- In the meantime add the sliced leeks and any other frozen vegetables you like (corn, peas, brussel sprouts or frozen cauliflower work well).
- Add noodles and fresh parsley and cook all for another 10 - 15 minutes.
- Season to taste and serve with fresh baguette.

A quick and easy way to prepare a nice chicken casserole. Not quite sure why it's called German style since the cheese used is Italian, but that's the name it had when I found it for a request on the recipe request board.

Steps:
- Preheat oven to 350ºF.
- Melt butter in large saucepan over medium low heat.
- Whisk in flour and stir 3 minutes.
- Gradually whisk in broth and milk.
- Simmer until thick, about 10 minutes.
- Blend in lemon juice and seasonings.
- Combine cooked noodles and half the sauce, tossing gently to blend.
- Place in the bottom of a buttered 2-quart casserole.
- Top with chicken and remaining sauce.
- Combine Parmesan cheese and paprika, and sprinkle over casserole.
- Bake until bubbling and golden brown, about 30 minutes.

- Cut each chicken breast in to two, thin cutlets, by slicing them through the side, as if you were butterflying them, but go ahead and cut right through. Salt and pepper both sides of each of your 4 chicken cutlets. Place them between two sheets of plastic wrap and pound them thin using a meat mallet or rolling pin, to 1/8 inch thick. Set the cutlets aside.
- Melt 2 Tbsp of butter in a medium sauté pan and add enough oil to fill the pan to 1/8 inch deep. Heat the oil and butter over high heat until it begins to crackle. (Tip: Toss a pinch of bread crumbs into the hot oil, if crackle and crisp up nicely, but don’t burn, then you know your oil is ready.)
- While the oil is heating, place the flour and breadcrumbs each in their own shallow dish. Place the beaten eggs in a shallow bowl.
