BBQ PULLED PORK SANDWICHES

- Stud the roast with the cloves and rub with the Smokey BBQ Rub. Place the roast in a slow cooker and top with the onions. Cover the roast with 2 cups of water and slow cook for 8 to 10 hours. Remove the pork, discard the cloves and layer of fat, as well as any water and grease remaining in the pot. When the pork is cool enough to handle, use a fork or your hands to shred and pull the meat apart. Return the meat to the slow cooker along with the barbecue sauce. Heat for 1 to 2 hours. Serve on your favorite roll.
- Combine the granulated and brown sugars, chili powder, paprika, garlic powder, onion powder, pepper, salt, mustard and cayenne in a bowl and mix well. Store in an airtight container.

- Mix the paprika, garlic power, brown sugar, dry mustard, and salt together in a small bowl. Rub the spice blend all over the pork. Cover and refrigerate for at least 1 hour, or up to overnight.
- Preheat the oven to 300 degrees F. Put the pork in a roasting pan and roast it for about 6 hours. An instant-read thermometer stuck into the thickest part of the pork should register 170 degrees F, but basically, what you want to do is to roast it until it's falling apart.
- While the pork is roasting, make the barbecue sauce. Combine the vinegar, mustard, ketchup, brown sugar, garlic, salt, cayenne, and black pepper in a saucepan over medium heat. Simmer gently, stirring, for 10 minutes until the sugar dissolves. Take it off the heat and let it sit until you're ready for it.
- When the pork is done, take it out of the oven and put it on a large platter. Allow the meat to rest for about 10 minutes. While it's resting, deglaze the pan over medium heat with 3/4 cup water, scraping with a wooden spoon to pick up all of the browned bits. Reduce by about half. Pour that into the saucepan with the sauce and cook 5 minutes.
- While the pork is still warm, you want to "pull" the meat: Grab 2 forks. Using 1 to steady the meat, use the other to "pull" shreds of meat off the roast. Put the shredded pork in a bowl and pour half of the sauce over. Stir it all up well so that the pork is coated with the sauce.
- To serve, spoon the pulled pork mixture onto the bottom half of each hamburger bun, and top with some slaw. Serve with pickle spears and the remaining sauce on the side.
- Combine the cabbage, carrots, red onion, green onions, and chile in a large bowl. In another bowl, stir together the mayonnaise, mustard, vinegar, lemon juice, and sugar. Pour the dressing over the cabbage mixture and toss gently to mix. Season the cole slaw with the celery seed, hot sauce, salt, and black pepper. Chill for 2 hours in the refrigerator before serving.

- Whisk the tomato paste, brown sugar, vinegar, chili powder, mustard, garlic, paprika, Worcestershire, 1 1/2 tablespoons salt and 1 teaspoon pepper in the insert of a 6-quart slow cooker until smooth. Cut each rack of ribs in half and add to the slow cooker. Use your hands to rub the sauce on to the ribs. Cover with a lid and cook on low heat until tender, about 4 hours.
- Gently transfer the ribs to a baking sheet and cool for at least 20 minutes; this will help maintain the shape of the ribs as they grill. Whisk the sauce at the bottom of the slow cooker until smooth. Reserve 1/4 cup of the sauce to brush on to the ribs and save any remaining sauce to serve on the side (it will thicken as it cools).
- Preheat a grill or grill pan to medium-high heat. Lightly oil the grates. Grill the ribs, top-side down, until lightly charred in parts, 3 to 5 minutes. Flip, brush the top side of the ribs with the reserved barbecue sauce and grill until the underside of the ribs are lightly charred in parts, 3 to 5 minutes. Remove to a platter and serve immediately with the extra barbecue sauce on the side.

EASTERN NC PULLED PORK BBQ IN A CROCK POT
It's the best way to make BBQ short of having a pig pickin'! Eastern NC BBQ done the right way. No tomato in sight! The taste reminds me of Smithfield's, which is the best BBQ in my opinion. - Quarter and slice the onion into little arches. Place about half an onion's worth in the crock pot as to line the bottom.
- Place the whole pork shoulder into the crock-pot. Take just a small amount of sauce to dampen the shoulder.
- Cover with a generous coating of spice rub, if desired.
- Top with remaining onion slices. Take 75% of the sauce and pour it around the pork shoulder. Then pour the white and cider vinegars around the pork.
- Cover and cook on low for 8-12 hours.
- When cooking is complete, remove cover and then carefully pull the bone out of the pork shoulder (BE CAREFUL! IT WILL BE HOT!).
- Carefully remove the meat and half of the onions from the crock-pot and put into a large bowl, leaving behind as much of the cooked vinegar solution behind as possible. A slotted spoon may be needed.
- Then with two forks (or your hands once the meat has cooled a little, if you are so inclined), "pull" (shred) the meat.
- Pour in most of the remaining, "uncooked" sauce, saving a little to add to BBQ sandwiches as desired. (Personally, I prefer using Texas Pete on my sandwiches.).
- Serve as sandwich or BBQ plate.
- Enjoy!

- Trim fat off the pork but leave some.
- Mix all dry ingredients together and rub it over pork refrigerate 1 hours.
- Bring THE REST to a boil and simmer for 10min.
- Put liquid in crock pot
- Put pork in crock pot.
- Cook on low for 6 to 8 hours (till falling apart tender).
- Pull meat out and pull pork (you can chop it but I like it pulled).

- Cut pork meat into thin and long slices.
- In a blender, blend together soy sauce, banana ketchup, brown sugar, garlic, lemon-lime beverage, pineapple juice (if using), oyster (or hoisin) sauce, lemon juice (if using), pepper, and MSG.

PORK BARBECUE
I found this recipe in a taste of home magazine, and made a few adjustments and now I will never use another pork bbq recipe again! My husband kept saying it was some of the best he ever tasted! The Sweet Baby Ray's bbq sauce made alot of difference! You can find it in most grocery stores! The pork shoulder butt roast, is the most tender I think.

- Place pork in crockpot. Combine the water, soup mix and garlic; pour over the meat. Cover and turn crockpot on low for 6-7 hours. The pork will be very tender.
- Remove the meat and shred with a fork. Place in a seperate bowl.
- In a saucepan, mix together 2 Tablespoons of soup liquid that was left in the crockpot, the barbecue sauce, ketchup and brown sugar. Bring to a boil.
- Spoon sauce over shredded meat and mix together.
- Serve on steak rolls, and top with slices of american cheese.
