SOUTH CAROLINA BARBECUE SAUCE
Steps:
- Combine 2/3 cup yellow mustard, 1/2 cup brown sugar, 2 tablespoons cider vinegar, 1 tablespoon Worcestershire sauce and 2 teaspoons hot sauce in a small saucepan. Bring to a simmer over medium heat, whisking, until the sugar is dissolved, about 1 minute. Remove from the heat and stir in 3 tablespoons butter until melted; season with salt and pepper. Let cool.

BING BANG BEST BAR-B-QUE SAUCE

- Simmer all of the above ingredients on medium heat for 30 minutes.
- Then put in an ovenproof baking dish and bake in 375 degree oven for 1 hour till thick and rich.
- Use for coating meat, fish or poultry.
BBQ CHICKEN FLATBREAD

- Preheat the oven to 400 degrees F.
- Toss the chicken in half of the BBQ sauce to coat in a bowl. Place the flatbreads onto a baking sheet. Divide the other half of the BBQ sauce between the 2 flatbreads. Spread, leaving a slight edge all the way around the flatbreads. Top each with half of the provolone, chicken, red onion, jarred jalapenos and habanero pepper.
- Bake until the flatbreads are golden and the cheese is melted, 10 to 12 minutes.
- Transfer to a cutting board and drizzle over the ranch dressing. Garnish with the cilantro and slice.

- Add all ingredients but the Jack Daniels and ketchup into a food processor. Mix together until well ground and blended. Add the Jack Daniels and the ketchup. Blend again.
- Mixture is ready for use.
BBQ LASAGNA
Steps:
- Preheat the oven to 400 degrees F.
- Boil the lasagna noodles for 9 minutes in a pot of salted water. When cooked, drain and transfer to an ice bath for 1 minute. Lay out the noodles on a large cookie sheet and spray with cooking spray.
- In a 4-inch-deep full-size hotel pan, spread a layer of the barbecue sauce over the bottom. Arrange 5 slightly overlapping noodles to fully cover the bottom of the dish. Then spread a layer of pulled pork, followed by 5 ounces of the barbecue sauce and 1 quart of cheese. Continue layering with 5 more noodles, followed by a layer of smoked chicken, 5 ounces of barbecue sauce and 1 quart of cheese. Then create another layer with 5 more noodles, followed by a layer of Cajun sausage, 5 ounces of barbecue sauce and 1 quart of cheese. Finish with the remaining noodles, the rest of the barbecue sauce and the last quart of cheese.
- Bake, uncovered, until cooked through, about 30 minutes.
BARBECUE MEATBALLS

- In a large skillet over medium-high heat, add the barbecue sauce, vinegar, brown sugar, hot sauce and Worcestershire and bring to a boil. Add the All-Purpose Meatballs and bring to a simmer. Cover and cook until the meatballs are heated through, 8 to 10 minutes.
- Spoon over mashed potatoes and sprinkle with parsley. Serve with a green salad.
- To make the meatballs, combine the ground beef, breadcrumbs, milk, cream, parsley, mustard, salt, black pepper, red pepper flakes and eggs in a large mixing bowl. Mix together well with your hands. Scoop out 1-tablespoon portions and roll them into balls with your hands. Place the meatballs onto parchment-lined baking sheets and put the baking sheets in the freezer for 5 to 10 minutes for the meatballs to firm up.
- To brown the meatballs, heat the olive oil in a heavy pot or large skillet over medium-high heat. Add the meatballs in batches, making sure not to overcrowd the pot. Cook, turning the meatballs to make sure they brown all over, 5 to 7 minutes per batch. Drain on paper towels.
- Freezer instructions: Put the cooked meatballs in a single layer on baking sheets and put into the freezer. When frozen, divide them into freezer bags, 25 per bag, and return them to the freezer. Yield: 125 meatballs.
ROOT BEER BBQ SAUCE
Steps:
- Boil the root beer in an 8-quart saucepot over high heat until reduced by half, about 15 minutes.
- Lower the heat to a medium-low and add the ketchup, brown sugar, cider vinegar, pepper, ground ginger and salt. Simmer, stirring frequently, until the sauce reaches the desired thickness, another 5 to 10 minutes.
- Chill in the refrigerator until fully cooled.

- Preheat the oven to 300 degrees F.
- Mix dry ingredients, including garlic, together in a medium bowl. Add canola oil and mix until blended. Mix egg and water in a separate small bowl and then add to flour mixture. Using an electric mixture with a dough hook attachment, mix dough until smooth and elastic. Roll dough out onto a board that is lightly dusted with cornmeal. Cut dough into 1 by 4-inch strips and transfer to a sheet pan. Baste with BBQ sauce and bake for 30 to 45 minutes or until lightly browned. Let cool on a rack. Store in an airtight container for up to 1 week.
- Combine all ingredients in a medium saucepan over medium heat, stirring until blended. Reduce heat to low and simmer for 15 to 20 minutes, stirring occasionally.

- Melt the butter in a saucepot. Add the onions and garlic, and saute until the onions are translucent. Add the chili powder, smoked paprika, dry mustard, garlic powder, onion powder and cayenne. Cook for 2 to 3 minutes to toast the spices. Add the brown sugar and molasses; stir until the sugar is dissolved.
- Add the ketchup, Dijon mustard, Worcestershire sauce and cider vinegar, and bring to a simmer. Cook the sauce for 30 to 45 minutes and then puree with an immersion blender. Season with salt and pepper.

Steps:
- Cook 2 minced garlic cloves in a saucepan with olive oil, 1 minute. Stir in 1/2 cup hoisin sauce, 2 tablespoons each rice vinegar and dry sherry, 1 tablespoon each soy sauce and ketchup and 1/3 cup water. Simmer until thick, stirring, 20 minutes. Let cool, then add 1/2 teaspoon sesame oil and 1 chopped scallion.
