Steps:
- Combine sugar and egg yolks in a saucepan. Gradually stir in black-currant juice. Cook over low heat, stirring constantly, until mixture coats the back of a spoon. Do not allow mixture to boil, or it will curdle.
- Remove from heat and whisk mixture until slightly cooled. Stir in butter, 1 tablespoon at a time, and add cassis. Refrigerate until ready to use.
SAVORY BLACK CURRANT SAUCE

- Put the blackcurrants in a pan with a splash of water. Cook on a low heat for 5-10 minutes until the fruit has released its juices.
- Place a heatproof bowl (I used a pudding bowl) over a pan of just simmering water. Put the lemon juice and zest, butter and caster sugar in the bowl and heat gently until the butter has melted and the sugar has dissolved.
- Set the bowl aside while you prepare the eggs. Crack the eggs into a bowl, whisk well with a fork and then sieve the eggs into the pudding bowl over the water.

- Sterilise 5 small jars (250-300ml). I like sterilizing my jars in the oven once they have been cleaned. My wee halogen oven has a pre-set sterilizing setting but approx 15mins in a low oven does the trick or run them through the dishwasher on hot if you're looking for a super easy way to sterlise! The jars should still be warm when you fill them.
- Place blackcurrants and lemon juice in a pot and simmer gently for approx 5-10mins until the blackcurrants have collapsed. Rub this mixture through a very fine sieve to remove skins and seeds or squeeze through a jelly bag into a heatproof bowl
- Add the butter and sugar to the bowl with the blackcurrant puree and place over a pan of hot water. Stir until the butter has melted and the sugar has dissolved and the mixture is smooth.
