Blueberry, Lime, and Basil Muffins image

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a 12-cup muffin pan with paper liners.
  • Whisk whole wheat flour, 1 cup all-purpose flour, baking powder, baking soda, and salt together in a medium bowl. Set aside.
  • Beat sugar and butter in a large bowl with an electric mixer until light and fluffy. Beat in eggs one at a time, mixing well after each addition. Mix in vanilla extract, lime zest, and lime juice. Stir in Greek yogurt. Add 1/2 of the flour mixture and stir just until combined. Add in remaining flour mixture, stirring just until combined; do not to overmix. Fold in basil.
  • Place blueberries in a large bowl and sprinkle with 1 tablespoon all-purpose flour. Toss to coat. Gently fold into the muffin batter.
  • Spoon batter into the prepared muffin cups, filling each 3/4 full.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 15 to 20 minutes.
  • Remove muffins from the oven and let cool in the pan 1 to 2 minutes before transferring to a wire rack to cool completely, 15 to 30 minutes more.

  • Preheat oven to 400 degrees.
  • Grease 12 (3 x 1 1/4-inch) muffin cups.
  • In a large bowl, stir together flour, the 2/3 cup sugar, baking powder, baking soda and salt. In another bowl, stir together yogurt, butter, eggs, lemon peel and vanilla until blended.
  • Make a well in center of dry ingredients; add the yogurt mixture and stir just to combine. Stir in the blueberries.

  • In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. In another bowl, whisk the eggs, buttermilk and butter. Stir into dry ingredients just until moistened. Stir in lemon zest., Fill greased or paper-lined muffin cups one-third full. Drop preserves by teaspoonfuls into the center of each muffin. Top with remaining batter. Steps:

  • Preheat the oven to 425 degrees.
  • Line muffin tin with paper liners (enough for 12 muffins).
  • Mix the flour, salt, baking powder, and sugars together in a large bowl.
  • In a small bowl, whisk together the egg, buttermilk, oil, vanilla, and almond flavoring.
  • In a blender or food processor, purée the mango with the lime juice until smooth.
  • Gently mix the liquid ingredients into the dry ingredients. Stir until just barely mixed.
  • Fold in the mango purée until just barely mixed.
  • Toss the blueberries with 2 tablespoons flour and gently fold in blueberries.
  • Fill muffin tins with about 1/3 cup batter, or almost to the top.
  • Bake at 425 for 5 minutes, then lower temperature to 350 degrees and bake for 10 more minutes.
  • Check for doneness: muffins should be domed on top and spring back to the touch. If they do not spring back, bake for 5 minutes more, or until done.
  • Cool in pan on a rack.
  • Make the glaze: Melt the butter, and gently whisk in 1/2 of the powdered sugar.
  • Add the flavorings and the other half of the powdered sugar. Add milk, 1 tablespoon at a time, until glaze has a slightly runny consistency.
  • Place the glaze in a bowl. Dip the tops of the muffins in the glaze. Sprinkle muffins with coconut and sliced almonds if desired.
