BONNIE'S JUNGLE BARS
Here is a blast from the past: Vintage 1950's! Jungle Bars! This is an oldy but goody recipe that is sure to please your family. Take Jungle Bars to your next potluck. They disappear fast. For a great dessert, serve these bars warm from the oven with a big scoop of vanilla ice cream on top! Enjoy!

- 1. COOKS NOTE: Assemble all the ingredients before you begin. You will need one large, one medium, and one small mixing bowl. I use a 10 x 15 by 1 inch, well-greased Air Baking Pan. Preheat oven to 325 degrees. Bake 35 minutes. Cool on Rack. Cut into 24 squares.
- 2. DRY INGREDIENTS: In the large mixing bowl, add flour, baking powder, salt, and cardamom. Mix well with a whisk.
- 3. WET INGREDIENTS: In the medium mixing bowl, add the 2/3 cup of melted butter, 2 1/4 cups packed brown sugar, 3 beaten eggs, and 1 teaspoon vanilla. Mix well with a large wooden spoon.
- 4. NUTS AND CHOCOLATE: In the small mixing bowl, add one cup of chopped walnuts, and one cup of chocolate chips.
- 5. COMBINE the DRY INGREDIENTS in the large bowl with the WET INGREDIENTS in the medium bowl.
- 6. Now add the chocolate chips and the nuts. Stir with a spoon to combine.
- 7. That dough is going to be stiff!
- 8. Dump the stiff dough in the greased baking pan.
- 9. Grease your hands with butter. It will make handling the dough much easier. Press and pat the dough until it covers the surface of the pan evenly in all four corners.
- 10. Bake in the pre-heated oven for 35 minutes at 325 degrees. Cut into 24 bars before they get totally cool.
- 11. For a great dessert, serve warm from the oven with a big scoop of vanilla ice cream on top!
BONNIE'S DEEP FRIED CANDY BARS
This unusual recipe came from the internet by a cook named Elizabeth Deep-fried candy bars are crisp on the outside, and filled with liquified chocolate and caramel on the inside. Decadent and outrageous! Difinitely not health food, but once a year is okay!

- 1. Freeze Candy Bars Before you fry the candy bars you want them really cold, so unwrap them and place them on a baking sheet and freeze them for at least 3 hours.
- 2. Prepare the Oil for Frying When you're ready to fry, get the oil ready. Pour it into a heavy-duty pot over medium-high heat and insert your candy thermometer. You want the oil to come to 375 degrees, which takes a while. Keep one eye on the oil while you get the rest of the ingredients ready.
- 3. Mix Ingredients for Batter Place ½ cup of the flour on a plate or in a pie tin, and set it aside. Place the remaining cup of flour in a medium bowl, and stir in the baking soda and salt. Combine the milk, vinegar, and 1 tablespoon of vegetable oil and mix it together. Add the wet ingredients to the dry and whisk them until it's really smooth and there aren't any lumps.
- 4. Dip Candy Bars Once the oil is at 375 degrees, it's time to start dipping. If you have a huge pan you can probably do several at once, but it's easiest to just fry one at a time.
- 5. Frying the Candy Bars Roll a candy bar in the flour then dip it in the batter, making sure that it's completely covered. Carefully lower it into the hot oil--you don't want to get too close and burn your fingers, but be carefully not to throw it in and cause oil to splatter. Use a slotted spoon to push down on the candy bar and keep it submerged in the oil so it cooks evenly. Once it's a beautiful, golden brown color, remove the candy bar from the oil and place it on a plate covered with paper towel to soak up the excess grease. Repeat the battering and frying process with the remaining candy bars.
- 6. Serving Deep-Fried Candy Bars After your candy bars are fried, let them cool slightly, then dust them lightly with powdered sugar and serve while still slightly warm. The outside is crisp but the insides liquefy and become this awesome gooey, chocolatey, caramel heaven. They are outrageous! If you get these at a food stand on a pier, they'll typically offer a choice of toppings such as chocolate syrup, confectioner's sugar, cinnamon, whipped cream, etc. Personally, I don't think they need anything else, but if you're feeling dangerous, go for it! - Dump the mixture into a 13 x 9 inch baking pan and smoosh it with a wooden spoon.
- Try to press it down evenly so that it's flat across the pan.
- Cover the pan with plastic wrap and put it in the fridge overnight to allow the flavors to blend.
- Cut it into about 24 squares.

- Heat oven to 375°F. Grease bottom and sides of 8- or 9-inch square pan with shortening. Mix all ingredients except preserves in large bowl until crumbly. Press two-thirds of crumbly mixture in pan. Spread with preserves. Sprinkle with remaining crumbly mixture; press lightly.
