EASY PIZZA PIE

A great twist on two classics, fusing together pizza and...pie

Easy pizza pie image

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Brush the slices of aubergine with the olive oil and place on a baking tray with the whole red peppers. Bake for 15-20 mins until the aubergine slices are golden brown and tender and the peppers are charred and blistered. Place the peppers in a plastic bag, seal and leave aside to cool.
  • When the peppers are cool, cut in half and remove the blackened skin and seeds. Cut into thick strips. Halve the tomatoes, remove any seeds and juice, then pat dry on kitchen paper. Thinly slice.
  • Roll out half the pastry on a lightly floured surface, then use to line a 20cm pie plate. Arrange half the aubergine slices in the pastry case and top with half the peppers. Season between each layer. Arrange half the mozzarella cheese on top, then cover with half the tomato slices.
  • Sprinkle over half the black olives, oregano and basil. Repeat these layers, using the remaining ingredients.
  • Brush the pastry border with water. Roll out remaining pastry and use to cover the pie, trimming the edges and pinching together to seal. Brush with the milk, place on a baking sheet and bake for 25 mins until crisp and golden.

BONNIE'S VEGETARIAN PIZZA

I got this easy recipe out of a health magazine many years ago, and I love the versatility. Whatever you decide to do with this recipe seems to work! Most of us have the ingredients in our pantry and fridge, so there is no need to buy special foods. Made as written, each pizza contains only 296 calories and 5 points for weight watchers. BONNIE'S VEGETARIAN PIZZA image

Steps:

  • A word about cheese.....I really like this pizza fixed many different ways. Monterey Jack cheese and Pepper Jack mixed are delicious. Don't be afraid to experiment.
  • Saute onion and garlic in a hot, medium-sized, nonstick pan that has been sprayed with kitchen spray. Saute just one minute.
  • Add mushrooms and grated carrots. Saute just two minutes more, and remove from heat.
  • Add the cilantro.
  • Place the two flour tortillas on the baking sheet. Set the rack at the top of the oven. Set the broiler on high.
  • Toast the tortillas under the broiler until golden brown around the edges, about 2 minutes. Turn them over and toast the other side, about 1 minute until crisp. Watch them carefully, or they will burn.
  • Add 1/2 of the cheese and all the beans to the toasted tortillas. Distribute it evenly on the pizzas.(Reseve the other half for the topping)
  • Now add the cooked vegetables.
  • Add the reserved cheese to the tops of the pizza. Put the pizzas back under the broiler and broil for one minute or just until the cheese melts.
  • Here it is!

  • Preheat oven to 400°. In a large skillet, cook sausage, green pepper and onion over medium heat until sausage is no longer pink, breaking it into crumbles; drain. A Plain Pizza Pie image

Steps:

  • At least 45 minutes before cooking, preheat the oven and pizza stone to 550 degrees.
  • Drain the tomatoes over a fine-mesh strainer, reserving the liquid for another use. Break up the tomatoes and drain the juices, pressing them with a wooden spoon. The tomatoes should be fairly dry.
  • Place the dough on a heavily floured surface and stretch and pull, using your hands or a rolling pin, into about a 14-inch round. Place on a lightly floured pizza peel or rimless baking sheet. Cover with the toppings, being careful not to press on the dough and weigh it down: the crushed tomatoes first, then the cheese, leaving roughly a 1/2-inch border. Shake the pizza peel slightly to make sure the dough is not sticking. (Gently lift any sections that are sticking and sprinkle the peel with flour.) Carefully slide the pizza directly onto the baking stone in one quick, forward-and-back motion. Cook until the crust has browned on the bottom and the top is bubbling and browning in spots, about 7 minutes. Top with the basil, and season with olive oil, salt, pepper and Parmesan. Serve hot. Makes 1 pizza.

1 28-ounce can San Marzano tomatoes
1 ball pizza dough
8 ounces fresh mozzarella, cut into 1-inch cubes
2 tablespoons basil leaves, thinly sliced
Extra-virgin olive oil, to drizzle
Kosher salt
Freshly cracked black pepper
Grated Parmesan, to sprinkle

BONNIE'S POTATO AND ONION PIE

This is a great side dish with tons of flavor, and easy to prepare. The smell is fantastic! (No crust to make) Great served with chicken on the spit and a tossed green salad. Sliced potatoes and onions cooked in sour cream and cheese of your choice. I hope you try this side dish! Enjoy!

BONNIE'S POTATO AND ONION PIE image

Steps:

  • 1. Cook's Tip: A word about cheese. I use jack cheese, fontina, gruyere cheese, cheddar, but I like fontina and jack cheese the best. For the milk mixture, I use a combination of sour cream, heavy cream and 2% milk, which is what I had on hand. You can use all milk, or all cream, or mix it up. Use what you like. Experiment to your hearts content. This is a fun recipe for that!
  • 2. Pre-heat the oven to 375 degrees. Spray a 10 inch glass pie dish with Pam.
  • 3. Scatter 2 teaspoons of garlic on bottom of Pam sprayed pie dish. Put half of the sliced potatoes on top of the garlic, overlapping the slices. Add half of the onion slices. Add salt and pepper (go easy on the pepper) Sprinkle 1/3 cup of cheese (your choice) over the onions evenly. Repeat the layer of garlic, potatoes, onions, and salt, pepper. Add the milk mixture evenly over the top, and then add the remaining 2/3 cup of cheese of choice, plus, the 1/4 cup of parmesan cheese.
  • 4. Cover the pie with foil and bake 30 minutes, uncover and bake 30 minutes more. You may want to do a low broil to brown the top. Cut into wedges to serve. Enjoy!
  • 5. Cook's Note: I also have a Tater and Onion Pie with ham that is another variation of this recipe and it is posted.

2 pounds of russet potatoes, peeled and sliced very thin
1 medium size onion, peeled and cut in half, and sliced very thin
salt and pepper to taste (light on the pepper)
4 teaspoons of minced garlic
1 cup of grated cheese, divided
2/3 cup of sour cream, whipping cream, or milk (i use a combination of all three!)

Steps:

  • To make the dough, combine the flour, yeast and sugar in a large bowl and make a well in the middle. Tip in 1 tsp salt, the oil and 250ml tepid water. Bring the mixture together into a dough using your hands, then tip onto a lightly floured surface and knead for 10 mins until smooth and elastic. Drizzle a bit more oil into the bowl, add the dough, cover with a damp tea towel and leave to rise for 35-40 mins, or until doubled in size. Meanwhile, combine all the ingredients for the sauce in a bowl.
  • Heat the oven to 190C/170C fan/gas 5. Lightly oil a 23cm springform cake tin. Tip the dough out onto a floured surface, and knock the air out of it a few times using your hands. Remove a quarter of the dough and set aside, then roll the rest out thinly so it's large enough to line the tin with some overhanging. Press the dough into the base and up the side of the tin.
  • Spread half the sauce over the pizza dough base, then sprinkle with half the mozzarella and half each of the olives and basil. Roll the reserved dough out into a circle that's large enough to fit over the first layer of filling, then lay it over the top. Top with the remaining sauce, most of the remaining cheese, and the rest of the olives and basil. Fold the overhanging dough over the filling slightly, then scatter the remaining cheese over the exposed filling in the middle.
  • Transfer the tin to a baking tray and bake for 45-50 mins until golden and crisp. Remove from the oven, undo the springform clip and leave to cool for 20 mins before removing from the tin and cutting into wedges to serve.

  • Heat oven to 220C/200C fan/gas 7. Make up the pizza base following pack instructions. Knead on a lightly floured surface and divide into 2 balls, 1 slightly bigger than the other. Roll out the bigger ball to about 32cm diameter. Place on a floured baking sheet or pizza tray.
  • Top the pizza base with the pasta sauce, pepperoni, onion, pepper, mozzarella, oregano, 1 tbsp of the Parmesan and a little black pepper.
  • Roll the smaller piece of dough to about 28cm diameter and place on top of the pizza filling. Fold the edge of the base over the top, pressing the edges together to seal - use a little water to help stick if you need to.   • In a lg bowl, sift together flour, sugar and salt. With a pastry blender or two knives, cut in the butter til mixture resembles coarse crumbs. Mix egg, water and vinegar. Add to flour mixture. Mix til dough is moist enough to hold together. Divide dough into 4 egual parts and form disks. Wrap in plastic wrap and refrig til ready to use. (freeze if not using w/in 4 days) Roll out each piece to fit pie plates and fill w/ apple mix and top w/ other rolled out dough. For filling: Preheat oven to 350. Mix apples,flour, sugar and cinnamon. Stir and divide into two pie crusts. Dab each pie filling w/ 2 T butter and 3 T milk before fitting w/ top crust. Bake 40-45 mins

Steps:

  • 1. THE BISCUITS: Open the biscuits (there will be 10 large flaky biscuits, and separate each biscuit. With cooking shears, cut each biscuit into 4 pieces, cut each of those 4 pieces in half, then cut those pieces in half. You will now have 16 pieces from one biscuit. Continue cutting each biscuit into 16 pieces until all the biscuits are cut. Set aside.
  • 2. THE SAUCE: In a medium mixing bowl, add the sauce, garlic, basil, red pepper flakes and oregano. Add one cup of mozzerella cheese and combine with sauce. Add the biscuits to the sauce mixture and toss to mix well.
  • 3. THE PIZZA: Spread the sauce and biscuit mixture in an ungreased, medium size pizza pan in an even layer. Add onions, mushrooms, and pepperoni slices. Add one cup of mozzerella cheese, sprinkle evenly over the pepperoni.
  • 4. BAKE IT: Preheat the oven to 375 degrees, bake pizza 30 to 40 minutes, depending on preference of doneness. Serve with parmesan cheese and red pepper flakes if desired. Enjoy!
