CANADIAN BACON BOW TIES

I love canadian bacon and wanted to spring something new on my monthly dinner club participants. I read a similar recipe in a cookbook, but concocted my own version. It was a huge hit and a mainstay in my house.

Canadian Bacon Bow Ties image

Steps:

  • Prepare pasta according to instructions on box.
  • Spread olive oil in a large skillet and heat over medium for about 1 minute.
  • Chop canadian bacon in bite-sized pieces. Add canadian bacon, red onion, fresh green onions (with green part attached) and bell pepper in skillet and cook over medium heat 8-10 minutes until peppers start to soften.
  • Stir in basil, rosemary, cilantro, black pepper, red pepper flakes, capers and peas. Stir until well blended.
  • During last 3 minutes of cooking, stir in tomatoes.
  • Pour cheeses over top, cover, turn off heat and let sit for 2-3 minutes until cheese is melted.
  • Pour cooked pasta into large bowl and pour canadian bacon mixture over pasta.
  • I sprinkle additional parmesan cheese and fresh basil over top before serving. This was a huge hit. I served it with a really nice salad, homemade balsamic vinagrette, fresh garlic rolls, red wine and served chocolate espresso pudding in phyllo cups for dessert.

2 lbs Canadian bacon
3 tablespoons olive oil
1 medium red onion, diced
1 bunch fresh green onion, chopped
1 large red bell pepper, diced
3 sprigs fresh basil

4 tablespoons capers
1 (8 ounce) box frozen green peas
14 cherry tomatoes, quartered
1/2 cup monterey jack pepper cheese
1/2 cup freshly grated parmesan cheese

These irresistible party snacks are easy to put together with pantry staples. Cooking them slowly allows the bacon flavor to soak into the crackers. A brush of jelly at the end helps cut through the richness.

Glazed Bacon-Wrapped Crackers image

Steps:

  • Preheat the oven to 350 degrees F.
  • Lay the crackers face up on a clean work surface and scoop 1/2 teaspoon Parmesan on each. Wrap each cracker with a piece of the bacon so the seam side is on the bottom and the cracker and cheese are covered as much as possible. Place the crackers seam-side down on a wire rack set over a baking sheet. Bake until the bacon is golden and crisp, about 1 hour.
  • Meanwhile, whisk together the jelly with 1 teaspoon water in a small bowl and microwave on high until warmed through and loose, about 30 seconds; add more water if necessary.
  • When the crackers are done, brush each with the jelly, sprinkle with the cayenne if using and serve immediately.

Steps:

  • Preheat the oven to 250 degrees F.
  • Lay the crackers face up on a large rack over a baking sheet (or broiler pan). Scoop about 1 teaspoon of the grated Parmesan onto each cracker. Cut the package of bacon in half (or cut pieces individually) and carefully, so the cheese doesn't fall off, wrap each cheese covered cracker with one half piece of bacon, completely covering the cracker. It should fit snugly around the cracker, but not be pulled too taut. Place the bacon-wrapped crackers onto the rack. Place the baking sheet in the oven for about 2 hours. Serve immediately or at room temperature!

  • In a 12" skillet over medium heat, cook bacon until browned. Remove bacon to paper towels to drain. Drain all but 2 tablespoons of the bacon fat and cook until tender.
  • Add tomatoes and liquid, sugar, salt, & pepper. Over high heat, bring to a boil. Reduce heat to low; cover and simmer for 15 minutes to blend flavors.
  • Meanwhile, cook bowtie pasta according to package directions; drain. Stir cream and parsley into tomato mixture; heat through (do not boil or mixture may curdle).

  • Preheat oven to 250 degrees. I usually line my baking tray with parchment paper for easy clean up.
  • Put one teaspoon of cheese on each cracker, wrap bacon around cracker (tuck about a 1/4 inch around the underside of the cracker and wrap over the top, around again, stretching to end with about a 1/4 inch tucked around the underside) and place on a baking tray.
  • Bake 2 hours. Do not flip them. You can cool, and store in refrigerator for a few days or in the freezer for a month. You can warm up in the oven. They don't have to be served super hot, they're great just warm or at room temperature too.
