PORK ROAST WITH THYME

This savory recipe is easy and delicious. It is my favorite recipe for cooking a pork roast. Serve with autumn apples and sweet potatoes.

Pork Roast with Thyme image

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • With a small knife, pierce top of roast. Force garlic slices into the cuts. Sprinkle the roast with salt and pepper. Place bay leaves in the bottom of the roasting pan, and set roast on top of bay leaves, fat side up. Mix vinegar and thyme in a small bowl, and pour over the top of the roast.
  • Bake in the preheated oven 3 hours, or until an internal temperature of 145 degrees F (63 degrees C) is reached. Using a baster or spoon, baste the drippings over the roast frequently while it is cooking. Let the roast rest for 10 minutes when done before slicing.

Braised Pork Shoulder image

Steps:

  • Using a spice grinder, grind the coriander and cumin seeds until they are a fine powder.
  • Preheat the oven to 375 degrees F.
  • Sprinkle the pork shoulder with the ground spices and salt, then tie each piece so they cook evenly.
  • Coat a Dutch oven with olive oil and bring to a high heat. Brown the first pork on all sides. Remove the pork from the pan and reserve. Ditch the fat in the pan and give a few drops of new oil. Repeat with the second pork and remove.
  • Lower the heat to medium and toss in the fennel and onions and season them with salt and a sprinkle of crushed red pepper. Cook the onions and fennel until they are soft and very aromatic, 7 to 8 minutes. Add the garlic and ginger and cook 2 to 3 minutes longer.
  • Add the wine and reduce by half. Stir in the mustard and add the bay leaves and thyme. Return the pork to the Dutch oven and add stock to the pan until it comes halfway up the side of the pork. Add salt if needed. Bring the liquid to a boil, cover and put the Dutch oven in the preheated oven.
  • After 1 hour, turn the pork over and add more liquid to the pan if the liquid level has gone down. Cover and return to the oven for 1 hour.
  • Turn the pork back over and return to the oven without the lid and cook for 45 more minutes. The liquid should concentrate.
  • Remove the pan from the oven, remove the pork and reserve for 15 minutes, tented with aluminum foil. Skim any excess fat from the pan and reduce the pan juices, if needed.
  • Slice the pork and serve with onions, fennel and juices.

BEER BRAISED BBQ PORK BUTT

Beer Braised BBQ Pork Butt image

Steps:

  • Combine rub ingredients in a bowl and mix well. Rub all over pork butt. Wrap in plastic wrap and refrigerate for at least one hour and as long as overnight.
  • Preheat oven to 500 degrees F. Unwrap pork and place in a roasting pan with sides about 2 inches high. Cook 45 minutes until dark browned and even blackening in places. Remove from oven. Lower oven to 325 degrees F. Pour beer over the top and add chopped garlic around the pork. Cover tightly with heavy duty aluminum foil or twice with regular foil. Poke about 10 holes all over the top of the foil. Cook pork butt 2 1/2 hours longer until so tender that it comes away very easily from center bone.
  • Place the meat on a plate and pour the pan juice (there will be plenty) into a saucepan.
  • To the pan juices add the ketchup, mustard, Worcestershire and brown sugar. Bring to a simmer until reduced by half and thick, about 20 minutes.
  • While the sauce is boiling down, pull apart the pork with 2 forks. Pour the sauce over the pulled pork and work through until fully absorbed.

Braised Pork Tacos image

Steps:

  • Put the chiles into a small bowl and cover with hot water; set aside. In a large heavy bottomed pan with a tight fitting lid, heat 3 tablespoons olive oil. Generously season the pork with salt and pepper. Brown the meat well on both sides, about 5 minutes per side; remove the meat and set aside. Add the onion, pepper, garlic, cumin, thyme, and bay leaf; fry until softened, about 5 minutes, scraping up the browned bits in the pan. Stem and seed the soaked chiles reserving the soaking liquid; hand tear them into the pot. Return the meat to the pan along with any accumulated juices. Top the meat with the tomatoes. Pour in the chili soaking liquid, straining out any seeds, until it almost covers the meat; add water if you need more liquid. Squeeze the orange and lime juices into the pot and add the rinds. Bring the liquid to a boil, reduce the heat, cover, and simmer for about 1 1/2 hours, or until the pork is very tender. Remove the meat to a platter and cover to keep warm. Strain the braising liquid and reserve.
  • Shred the pork. Add some of the reserved braising liquid if the meat is dry. Take a tortilla and place about 2 tablespoons of the mixture on top. Garnish with the avocado, radishes, and Salsa Verde; fold the sides up and serve.
  • Put the masa harina in a bowl and mix in the salt. Add about 1 cup warm water and mix with your hands; add more water as needed until the dough comes together. Knead for a few minutes to smooth the dough out. The dough should be firm and springy and should not stick to your hands. Test by forming a small disk, if it cracks around the edges you need more water.
  • Place a piece of heavy plastic (like from a garbage bag) onto a tortilla press. Form a 1 1/2-inch ball of dough and place it in the center of the press. Top with another piece of plastic, close the press, and push the lever down to form the tortilla. (Alternately, the dough balls can be rolled between plastic sheets with a rolling pin.) Open the press and remove the top layer of plastic. Carefully peel the tortilla off the bottom plastic and place it onto a hot, ungreased cast iron skillet; cook for about 1 to 2 minutes per side. Remove the tortilla and place it on a clean tea towel; keep it covered to keep it soft and pliable. Continue until you have used up all the dough.
  • Yield: 20 (6-inch) tortillas
  • Prep Time: 20 minutes
  • Cook Time: 40 minutes
  • Bring a pot of water to a boil and add the tomatillos, jalapeno, onion, garlic, and 1 tablespoon salt. Reduce the heat and simmer gently for 5 to 10 minutes until the tomatillos are soft but have not burst. Add the cooked vegetables to a blender with the cilantro leaves and lime juice. Pour in 1/4 cup of the reserved cooking liquid and process to a coarse puree. Taste and adjust seasoning with more cilantro, lime juice, or salt.
  • Yield: 2 cups

Boston Butt with Milk image

Steps:

  • Preheat oven to 350 degrees.
  • Place pork in a large Dutch-oven. Add milk, garlic, thyme, rosemary, and bay leaves. Cover, and transfer to oven. Cook until milk comes to a boil, about 45 minutes. Uncover and continue cooking until milk is evaporated, about 1 hour and 15 minutes.
  • Discard herbs and serve pork hot or cold with milk sauce.

1 Boston butt (3 1/4 pounds)
8 3/4 cups milk
3 cloves garlic
1 sprig fresh thyme
1 sprig fresh rosemary

BRAISED PORK ROAST WITH GARLIC AND ROSEMARY

This is a wonderfully flavorful and moist roast that is browned briefly on top of the stove and finishes cooking in the oven. As it cooks there is time to prepare side dishes and have dinner on the table in only one hour. It is from Jeff and Jodie Morgan's "Working Parents' Cookbook." My family loves coming home to the fragrance of this dish as it cooks - and loves eating it even more! (Cooking time includes thickening the sauce.)

Braised Pork Roast With Garlic and Rosemary image

Steps:

  • Preheat the oven to 400F.
  • In a small bowl combine garlic, rosemary, sea salt, pepper and 3 Tablespoons of the olive oil into a paste; set aside.
  • In a dutch oven or other oven-proof pot, heat remaining olive oil over medium heat.
  • Brown the pork roast on all sides, about 2 minutes per side.
  • Remove the pot from the heat and stir the milk into the pan juices.
  • Spread the garlic-rosemary paste over the top of the roast and cover the pot.
  • Place the pot in the oven and cook, basting occasionally with the pan juices, for 45 minutes. (If the pan juices evaporate you may add more milk, about 1/2 cup at a time.).
  • Check the temperature of the roast. It is ready when the thermometer regesters 155°F.
  • Transfer the roast to a cutting board and let rest for 5-10 minutes before carving.
  • Meanwhile, whisk the pan juices to break up any solids (the milk will curdle during the cooking.) If the sauce seems too thin, simmer on top of the stove over high heat for a few minutes to thicken.
  • Slice the roast and serve with the sauce spooned over.
  • Especially good with mashed potatoes, rice or egg noodles.

Steps:

  • 1. Heat the oven to 325°F. Put large, deep ovenproof skillet or Dutch oven over medium-high heat. Season the pork generously with salt and pepper. When the pan is hot, add the pork shoulder, fat side down, and cook, turning every 2 to 3 minutes, until browned on all sides, about 10 minutes total. 2. Remove the pork from the pan, and pour off and discard all but 2 tablespoons of the fat. Add the carrots, onion, celery, garlic, thyme, rosemary, and bay leaf to the pan, and reduce the heat to medium. Cook, stirring occasionally, until the vegetables are soft and golden brown, 8 to 10 minutes. Add ½ cup of the wine and stir to scrape up any browned bits from the bottom of the pan. Stir in the parsley, then return the pork shoulder to the pan and add 2 cups water. Cover the pan with foil and then the lid and transfer it to the oven. Cook until the pork is very tender and falling from the bone, about 2½ hours, turning the meat and basting it with the pan juices every 30 minutes or so. 3. Let the pork cool at room temperature for at least 30 minutes, then transfer it to a serving platter. Strain the pan juices into a medium saucepan, then skim off the fat. Add the remaining 2 tablespoons wine, then turn the heat to high and bring the pan sauce to a boil. Drizzle the pan sauce over the pork and serve immediately. (Store leftover pork shoulder wrapped in foil or plastic wrap in the refrigerator for up to several days.)
