BAKED BRIE IN BREAD
Nice appetizer and easy, as well. Found on the Lanier Bed & Breakfast web site. You can substitute Brie with Gorgonzola.

Steps:
- Preheat oven to 350°F.
- With sharp knife, cut just inside outer edge of bread leaving a shell.
- Do not cut through bottom.
- Gently remove insides of bread creating cavity for the cheese and cut into pieces for dipping.
- Mix garlic and butter.
- Paint inside of shell with mixture.
- Reserve remaining mixture.
- Trim cheese to fit inside shell, leaving rind on if desired.
- Place loaf on a baking sheet and bake for 15-20 minutes or until cheese is melted.
- Spread remaining butter mixture on bread pieces.
- Place on baking sheet and toast for 10-15 minutes or until lightly browned.
- Use to dip in the cheese.
- Serve with sliced fruit - grapes, apples and pears can also be used for dipping.

BAKED BRIE BREAD BOWL

Steps:
- Preheat the oven to 350 degrees F.
- Slice off the top third of the bread boule and set aside. Place the Brie wheel in the center of the bread and cut around to "trace" the outline of the Brie in the bread; be careful not to go all the way through the bottom. Remove the center part of the bread that was traced out and cut into 1-inch pieces for dipping. Brush the oil along the inside exposed bread. Spread the pepper jelly on the bottom and sprinkle with salt. Cut slices in the side of the bread about halfway down and about 1 inch wide all the way around. This will create tearable pieces to enjoy later.
- Cut the top layer off the Brie and discard, then place the Brie in the bread. Cover with the bread top and bake until the cheese is melty and the bread is crusty, about 20 minutes. Top with a sprinkling of pomegranate seeds. Serve with the bread and fruit or veggies if desired.
BRIE BREAD
This is an outstanding addition to your Tapa Table and so easy to make. I received this recipe from my friend Pat who I had met in Sint Maarten.

Steps:
- Melt the butter in a sauce pan and onion and basil.
- Cut the Brie into small pieces and add to the butter mixture.
- Stir until the Brie is melted.
- Slice the French Bread in half lengthwise.
- Take each half and cut ALMOST all the way through into slices about 1 1/2 inches each.
- Spread the melted brie mixture over each half of the loaf.
- Note: At this point you can refrigerate the bread/brie and continue just before serving.
- Place each half of the under the broiler until the cheese is bubbly.
- Tear the individual pieces completely off the loaves and place on serving platter.
BLOOMIN' BRIE BREAD

- Preheat oven to 350°. In a small bowl, whisk together olive oil, garlic powder, and Italian seasoning.
- Slice off the top quarter of the bread. Place the wheel of brie on top of the bread and use a paring knife to trace around it. Scoop out the inner circle of bread. Brush the olive oil mixture on the inside of the bread. Carefully, cut down around the edges of the bread to create the slices that people will tear after baking.
- Sprinkle with about 1/2 cup mozzarella, place the brie on top, then sprinkle with the rest of the mozzarella. Place the bread top on top of the cheese and bake until the cheese has melted and the bread is toasty, about 20 minutes.
- Serve warm.
BAKED BRIE BREAD BOWL WITH ONION JAM
This baked brie is a perfect choice if your taste buds favor more savory than sweet dishes. Salty creamy brie is nestled into a bread bowl and loaded with slow-cooked onions mixed with smoky bacon and just a touch of vinegar and brown sugar to balance it all.

- Put the bacon in a large nonstick skillet and turn the heat to medium. Cook until the fat renders, about 5 minutes, then add the onion and season with salt and pepper. Cook, stirring, until the onion softens, about 5 minutes. Add the thyme sprigs and garlic; reduce the heat to medium low. Continue to cook, stirring occasionally, until the onion is browned and broken down, 30 to 35 minutes, adding the vinegar and brown sugar in the last 5 to 10 minutes. If the pan gets too dry, add a splash of water and scrape up any browned bits. Remove from the heat; stir in the mustard and parsley.
- Meanwhile, preheat the oven to 350˚ F. Put the brie in the freezer to firm up, 5 to 10 minutes. Using a serrated knife, slice off the top one-third of the bread loaf (reserve the top). Hollow out the bread so that the brie will fit inside. Slice the top and insides of the bread; drizzle with the olive oil and season with salt and pepper. Arrange the sliced bread on one baking sheet and put the bread bowl on the other.
- Remove the brie from the freezer and trim off the top rind. Fit the brie inside the bread bowl and top with the onion jam, discarding the thyme stems. Transfer both baking sheets to the oven and bake until the bread is toasted and the brie is hot, about 10 minutes for the sliced bread and 15 to 20 minutes for the bread bowl. Sprinkle the brie with thyme. Serve with the toasted bread.

- Preheat the oven to 350°F (180°C).
- Cut off the top of the bread boule so the top surface is flat and without crust. Slice the crusty top into sticks and set aside.
- Set the brie wheel on top of the bread and cut out a hole for the brie. Set the brie aside and remove the cut out bread.
- In a small bowl, mix the olive oil with 2 cloves of garlic and brush over the bread. Set the boule aside.
- Carefully cut the top rind off of the brie wheel. Place the brie, cut-side up, inside the bread and set it on a baking sheet lined with parchment paper.
- Scoop out about a tablespoon of the center of the brie and pour the white wine into the divot.
- Top the brie with the remaining minced garlic and chopped bacon, and season with pepper. Arrange the bread sticks next to the bread on the baking sheet.
- Bake for 15- 20 minutes, until the brie is completely melted.
- Sprinkle with chives.
- Dip the bread sticks and any other dipping items you'd like in the brie.
- To reheat, bake the brie at 250°F (120°C) for about 15 minutes, until melted.

PAIN BRIE ("CRUSHED" BREAD OF NORMANDY)
It's not that the bread is crushed--the dough is--it takes a true beating which is what gives this bread, traditional for use in Charlotte aux Pommes a la Normande (recipe posted separately), its special texture. This dough must be started the night before and the sponge allowed to proof overnight.

Steps:
- Dissolve the yeast in one cup of lukewarm water in a large bowl.
- After a minute or two, add one cup of flour and mix.
- Then add a second cup and knead by hand until smooth; the dough should be dry and not stick to your hands.
- Cover the bowl with a towel and let the dough rise overnite at room temperature.
- The next day, punch the dough down and add 3/4 of a cup of lukewarm water, the salt and the remaining flour, one cup at a time, mixing all the while.
- If you are using a stand mixer, use your dough hook; otherwise knead by hand, working the dough until dry.
- Now, either knead for several more minutes in your stand mixer or place the dough on a lightly floured surface and knead for a good five minutes.
- Now, take the dough on your board and pound it heavily with a rolling to flatten it.
- Fold the dough and pound it again until flat.
- Repeat this process 7 or 8 more times.
- Now let the dough (and the cook) rest for ten minutes.
- Form the dough into a ball, place on a board or counter and cover with plastic wrap.
- Let the dough rise for two and a half hours at room temperature.
- Pre-heat the oven to 425 degrees.
- With a small, sharp knife, make five parallel cuts, approximately 1/4" deep, along the top of the loaf.
- Place the loaf on a lightly buttered cookie sheet and bake for 40 minutes or until browned and hollow sounding when knock on the bottom.
- Note: If you are planning to make this bread again in a few days, reserve a cup of dough for a starter and save it in the fridge--but don't keep it past a third day; when you are ready to make the second batch, bring the starter to room temperature, and proceed, skipping the overnight proofing.

BAKED BRIE WITH CARAMELIZED PEARS, SHALLOTS AND THYME
Brie baked in a round sourdough bread bowl makes this ultimately easy! You could substitute a sweet chutney for the topping for even easier prep. I microwaved the final product for a few minutes to speed up the cooking (couldn't wait for it to be ready!)

- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in a skillet over medium heat. Add shallot; cook and stir for 1 minute to soften. Add thinly sliced pears; cook until soft, about 5 minutes. Pour in white wine, brown sugar, thyme, salt, and pepper; increase heat to medium-high and simmer until the liquid has evaporated, and the pears have lightly caramelized, about 10 minutes. Set aside.
- Cut a Brie-sized hole in the top of the sourdough bread to within 1/2-inch of the bottom. Cut the removed bread into pieces for serving, set aside. Score the Brie around it's edge, using a paring knife to cut 1/4-inch deep. Cut in half by looping an 18-inch piece of very thin string, or unflavored dental floss around the scored Brie and pulling the ends in opposite directions.
- Place the bottom half of the Brie, cut-side-up, into the sourdough loaf. Top with 1/2 of the pear mixture and sprinkle with 1/2 of the slivered almonds. Place the remaining brie half on top, spread with remaining pear mixture, and sprinkle with remaining slivered almonds. Place on a baking sheet.
- Bake in preheated oven for 45 minutes or until soft and gooey. Serve with sliced sourdough bread and crackers.
