- In a skillet, brown and crumble sausage; drain and set aside. In a large bowl, beat eggs; add milk, salt and mustard. Stir in bread cubes, cheese and sausage. , Pour into a greased 11x7-in. baking dish. Cover and refrigerate for 8 hours or overnight. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 40 minutes or until a knife inserted in center comes out clean.

I had a bunch of stuff in my fridge, including brioche rolls and mild Italian sausage that I needed to use up and this is what I came up with. It was too good not to share.

Steps:
- Preheat oven to 350.
- In a skillet, brown and crumble sausage of your choosing, I just happen to have Italian sausage at the time.
- Add garlic to skillet and continue to cook for about 2 minutes, then remove from heat and set aside.
- Grease a glass loaf baking dish and add brioche cubes to the bottom.
- Top bread with sausage and garlic mixture.
- In a bowl, whisk together eggs, heavy cream and rest of ingredients.
- Pour egg mixture over sausage and bread and top with cheese.
- Wrap with plastic wrap and set aside for about 20 minutes.
- Remove plastic wrap and bake for 30-45 minutes or until top is golden and bubbly.

- Preheat the oven to 400 degrees F.
- Spread the brioche on a baking sheet and put it in the oven until lightly toasted, about 10 minutes. Set aside in a large bowl.
- In a large skillet over medium-high heat, add the sausage and break it into pieces with a spoon. Cook until browned, then transfer it to the bowl with the brioche. Add the celery to the sausage drippings and cook until softened, about 4 to 5 minutes. Put the sausage into the brioche bowl. Stir in the stock and sage and mix until the brioche absorbs most of the liquid. Season, to taste, with salt and pepper. Transfer the dressing to a 13 by 9-inch baking dish and cook, uncovered for 20 minutes. Cover with foil and bake until golden brown on top, another 20 to 25 minutes.

- In a large bowl, whisk together the eggs, cream, milk, maple syrup, vanilla and a pinch of salt. Tip about two-thirds of the blueberries into a baking dish (about 20cm x 30cm) that is quite deep. Dip each brioche piece into the egg mixture until well soaked, then arrange on top on the blueberries and pour any remaining egg mixture over the top. Scatter over the remaining blueberries. Cover with cling film and chill for 1 hr, or overnight if serving it for breakfast.
- Heat oven to 180C/160C fan/gas 4. Uncover the dish and scatter over the pecans. Bake for 25 mins until the egg mixture is set and the blueberries are starting to burst. Meanwhile, line a baking tray with foil and arrange the bacon on top. When the brioche bake is ready, remove from the oven and cover loosely with foil to keep warm. Heat the grill to high and cook the bacon for about 5 mins each side until crispy.
- Dust the brioche bake with icing sugar and top with the crispy bacon. Serve with extra maple syrup for drizzling.

- Preheat oven to 425°F. Toss together brioche cubes and melted butter in a large bowl. Spread in a single layer on a baking sheet. Bake in preheated oven until golden brown and crisp, about 5 minutes. Transfer toasted brioche cubes to an 11- x 7-inch baking dish, and stir in cooked sausage.
