White Pizza With Broccolini image

Steps:

  • Position a rack in the lower third of the oven. Place a pizza stone or upside-down baking sheet on the rack and preheat to 500 degrees F. Cover another upside-down baking sheet with parchment paper and brush with 2 tablespoons olive oil. Put the pizza dough on the oiled paper and turn to coat. Cover with another piece of parchment and set aside.
  • Mix the cheeses, red pepper flakes, and salt and pepper to taste in a bowl. Combine the scallion greens and herbs in another bowl. Toss the broccolini and scallion whites on a baking sheet with the remaining 1 tablespoon olive oil, and salt and pepper to taste. Roast 15 minutes.
  • Uncover the dough; stretch into a 12-by-16-inch rectangle. Season with salt and pepper, then slide the dough and parchment onto the hot stone or baking sheet. Bake until golden, 6 to 8 minutes.
  • Slide the crust and parchment back onto the baking sheet and remove from the oven. Top with the cheese mixture, then the roasted vegetables and herb mixture. Return the pizza to the oven and bake until the cheese melts, about 3 more minutes. Drizzle with olive oil.

Steps:

  • Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking.
  • Carefully remove pizza dough from can. Unroll dough and place on hot oiled grill. Let cook 2 minutes and turn over using cookie sheet.
  • Spread Alfredo sauce over pizza leaving a 1-inch border. Next, top with remaining ingredients in order listed. Cover and cook 8 to 10 minutes, or until cheese has melted and begins to bubble. Serve hot.
  • INDOOR: Preheat oven to 425 degrees F. Lightly spray baking sheet with cooking spray; set aside. Carefully unroll dough and place on prepared baking sheet. Press out dough with fingers to form 13 by 9-inch rectangle. Bake in preheated oven for 7 minutes, or until crust just begins to brown. Remove crust from oven and top as directed. Return to oven for 8 to 10 minutes, or until crust is golden brown and cheese is melted and begins to bubble.

Steps:

  • Place a pizza stone on the bottom rack of your oven. Preheat oven to 450 degrees F (230 degrees C).
  • Stretch pizza dough into a round disc on a floured surface. Brush 1 tablespoon olive oil over dough. Sprinkle minced garlic, garlic powder, onion powder, salt, and pepper on top.
  • Cover dough with Italian cheese blend and dollops of ricotta. Scatter broccoli and tomato over cheese. Swirl remaining 1 tablespoon olive oil on top. Sprinkle Parmesan cheese over pizza.

Steps:

  • Saute ground chicken with a little olive oil, salt, pepper, and thyme until cooked.
  • Press the two cloves of garlic and combine with some olive oil (about 1 Tb) and brush over the pizza crust.
  • Top the pizza with the chicken, broccoli, and cheeses.
  • Bake at 450F until crust has browned and the mozzarella has melted.

1 pizza dough, unbaked
1/2 lb ground chicken
3 cups broccoli florets, steamed
2 ounces goat cheese
1 cup mozzarella cheese (approx.)

This was inspired by a broccoli cheese stuffed potato recipe I found, but it seemed to be a little labor intensive, so I decided it would work better as pizza. This is an original "sbera007" creation! We were serving 6 so we let our dough rise so it would spread into a jelly roll pan. If using a store bought dough, I would double the dough. Feel free to half the topping for 4 people and use a single store bought dough. Halving the recipe will alter the cooking time a little bit. (NOTE: I included the time for the dough to rise in the recipe time. This will be different if you use a different pizza crust).

Broccoli Chicken Pizza image

Steps:

  • Preheat oven to 425 degrees Fahrenheit.
  • Prepare dough.
  • While dough is rising or sitting, steam broccoli and cook chicken with olive oil, oregano and basil to taste, until no longer pink.
  • Spread the dough into a prepared jelly roll pan.
  • Bake for about ten minutes.
  • Meanwhile, chop cooled chicken into small chunks and chop steamed broccoli.
  • Combine chicken, Ricotta cheese, broccoli, 1/2 cup Mozzarella cheese, 1/2 cup Cheddar cheese, dry mustard, and crushed red pepper.
  • Remove crust from oven.
  • Spread with ricotta mixture.
  • Top with remaining cheese.
  • Cook until cheese is browned (10 to 15 minutes).

Steps:

  • Heat grill for indirect grilling: Light one side of grill, leaving other side unlit. Close lid; heat grill to 400ºF.
  • Mix dressing and garlic. Drizzle 3 Tbsp. over chicken in shallow dish; turn to evenly coat both sides of breasts. Refrigerate 5 min.
  • Place chicken over lit area of grill; cook 6 to 8 min. on each side or until done (165ºF). Cool slightly; cut into bite-size pieces.
