BROILED SPAM® AND CHEESE OPEN FACE SANDWICHES
An easy lunch open face sandwich. Just SPAM® and Cheddar.

Steps:
- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Place the three slices of bread onto a baking sheet. Stir together the luncheon meat and Cheddar cheese in a bowl. Press the meat and cheese mixture on top of each slice of bread.
- Broil in the preheated oven until the sandwiches are hot and the topping is beginning to brown on top, 3 to 5 minutes.

BROILED BURGERS WITH SPAM®
Here's a unique recipe that has been in my spouse's family for 3 generations. It was probably created during World War II as a new way to prepare SPAM®, which was widely used in that time of shortages and rationing. These open-faced sandwiches are delicious and economical and are loved by his entire family. They are great for breakfast, lunch, or dinner!

Steps:
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Combine luncheon meat, eggs, Cheddar cheese, and onion in a bowl. Add mayonnaise, chili sauce, salt, and hot sauce. Mix well.
- Spread meat mixture over hamburger bun halves. Place on a baking sheet.
- Broil in the preheated oven until brown and bubbly, 5 to 10 minutes.

BROILED TOMATO CHEESE SANDWICH
I love the combination of tomato and cheese. The short marination of the tomatoes in the olive oil and the balsamic vinegar gives it a nice kick. Other vinegar is not as nice. If I have it in the fridge I add an extra topping of mozzarella and you can please the meat eaters by adding slices of crunchy bacon. You can make it a closed sandwich by just toasting 4 more slices of bread to top the sandwich.

Steps:
- Preheat broil/grill.
- In a shallow bowl whisk together the olive oil and balsamic vinegar, add the tomatoes and mix gently, set aside.
- In a small bowl mix together: mayonnaise, cheese, basil, oregano and black pepper.
- Spread this on the 4 slices of toast.
- Place on a baking sheet and broil until the cheese is melted and bubbly.
- Remove from the broil, top with the (drained) tomato slices and then with the rest of the Parmesan cheese, return to the oven and broil for approx 5 minutes.
- Serve open or closed.

TOASTED SPAM SANDWICHES
This is an easy-to-fix sandwich spread using Spam and Velveeta Cheese. My recipe does not call for onions, but some people do like to add chopped onion. I like to use bread instead of buns, because I prefer equal amounts of bread/spread. Use the buns for a bigger sandwich.

Steps:
- Mix all ingredients together in medium mixing bowl.
- Spread the mixture onto 6 slices of bread or 4 bottom portions of the buns. Place under a broiler until the cheese melts. Set aside.
- Toast the remaining bread or buns under the broiler. Place the toasted bread or bun on top of each broiled sandwich.
- Serve warm.
AIR FRYER GRILLED CHEESE WITH MAYO
I grew up eating grilled cheese sandwiches made with Velveeta®, and I still think it's absolutely the best for this sandwich. It's flavorful, and melts beautifully. If you happen to have brioche bread on hand, use it because it makes this sandwich taste divine!

- Preheat the air fryer to 380 degrees F (180 degrees C).
- Spread the mayonnaise on 4 slices of bread. Distribute cheese slices evenly between 2 bread slices, mayonnaise side down. Place the remaining 2 slices on the sandwiches, mayonnaise side up, and lightly press sandwiches to close.
- Place the sandwiches in the air fryer basket in a single layer, leaving some space around them.
- Air-fry for 3 to 4 minutes, flip sandwiches, and cook until sandwich is golden brown and cheese is melted, 2 to 3 more minutes. Depending on the size of your air fryer, you may have to cook in batches.
- Slice sandwiches on the diagonal, and serve warm.
