Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Prepare a baking sheet with cooking spray. Arrange the bacon on the prepared baking sheet, and sprinkle with 2 tablespoons brown sugar. Bake in the preheated oven until the bacon is crispy and the brown sugar is caramelized, 10 to 15 minutes. Immediately remove the bacon to a cutting board; cut into small pieces and set aside.
  • Preheat a waffle iron; grease with cooking spray.
  • Whisk the flour, 1/2 cup brown sugar, baking powder, baking soda, and salt together in a large bowl. Beat the eggs, buttermilk, vegetable oil, and vanilla together in a separate bowl; fold the wet mixture into the flour mixture. Add the bacon and stir, being careful to not over mix.
  • Ladle the batter into the preheated waffle iron and cook until golden brown; serve hot.

Steps:

  • Mix brown sugar, yeast, and 1/3 cup warm water in the bowl of a stand mixer fitted with a dough hook until yeast dissolves. Let sit until foamy, 5-10 minutes. Whisk flour and salt in a medium bowl.
  • Mix eggs into yeast mixture. With mixer on low speed, add dry ingredients and mix until dough comes together into a ball. Gradually add 1 cup butter, pausing often to allow dough to fully incorporate butter before adding more. Increase speed to high and mix until dough is smooth, elastic, and pulls away from the sides of the bowl (dough will still be very soft and somewhat sticky), 5-10 minutes longer. Transfer to a buttered medium bowl and cover with plastic wrap; let sit in a warm spot until doubled in size, 1 1/2-2 1/2 hours.
  • Just before dough is ready, bring syrup and cacao nibs to a simmer over low heat in a small saucepan and cook 5 minutes. Let cool.
  • Sprinkle pearl sugar over dough and mix in with a wooden spoon. Divide dough into 8 pieces. Heat a Belgian waffle iron until very hot; coat with nonstick spray. Place a piece of dough over each well (keep remaining pieces covered). Cook until waffles are golden brown and sugar is caramelized in spots, about 5 minutes. Transfer to a wire rack; repeat with remaining pieces of dough. Let waffles cool slightly. Serve topped with bacon, plums, ricotta, and almonds and drizzled with cacao-nib syrup.

2 tablespoons light brown sugar
1 1/4-ounce envelope active dry yeast (about 2 1/4 teaspoons)
2 1/4 cups all-purpose flour
1/2 teaspoon kosher salt
3 large eggs, room temperature, beaten to blend
1 cup (2 sticks) unsalted butter, melted, cooled, plus more for bowl
1 cup pure maple syrup
2 tablespoons cacao nibs
1/2 cup pearl sugar or demerara sugar
Nonstick vegetable oil spray
8 slices bacon, cooked
2 red plums, sliced into thin wedges
Ricotta and chopped almonds (for serving)

Steps:

  • Cook bacon in medium skillet over medium heat 8-10 minutes or until browned and almost crisp, stirring occasionally; drain on paper towels. Reserve 2 tablespoons of bacon drippings from skillet. (reserve remaining drippings to brush over waffle iron, if desired.) Heat oven to 250. Place wire rack on large rimmed baking sheet. Whisk flour, brown sugar, baking powder and salt in large bowl. Heat waffle iron until hot. Meanwhile, whisk egg yolks in medium bowl until smooth. Whisk in milk, butter and reserve 2 tablespoons bacon drippings until blended. (Butter can be used instead of drippings in the batter.) Make a well in center of flour mixture. Pour in egg yolk mixture; whisk until almost smooth. Beat egg whites in small bowl at medium-high speed until stiff peaks form. Stir one-third of the egg whites into waffle batter to lighten; gently fold in remaining egg whites. Fold in bacon. Lightly brush waffle iron with some of the remaining reserved bacon drippings. (Canola oil can be used instead of drippings.) Pour ½ - 2/3 cup batter per waffle onto waffle iron (exact amount depends on size of waffle iron). Cook 2 ½ - 4 minutes or until crisp and golden brown, or cook waffles according to manufacturer's directions for iron. Arrange waffles on rack on baking sheet; place in oven to keep warm. Repeat with remaining batter.

8 oz Applewood smoked thick-cut bacon, coarsely chopped
1 1/2 cup white whole wheat flour or all purpose flour
1/4 cup packed dark brown sugar
2 tsp baking powder
1/8 tsp salt
3 eggs, separated, room temperature
1 cup whole milk, room temperature
6 tblsp unsalted butter, melted

BUTTERMILK-BROWN SUGAR WAFFLES

This recipe first appeared in The Times in a 2006 article Julia Moskin wrote about wedding registries and what items couples should (and shouldn't) include on theirs. A cookware set? No. Better to buy pieces individually according to a couple's needs. A waffle iron? Why yes, if there's any chance of children. These waffles are light, crisp and easy to throw together, like traditional waffles, but the buttermilk lends tang and the brown sugar an earthy sweetness. The secret ingredient here is wheat germ. It provides a lovely toothsome texture and crunch.

Steps:

  • Whisk eggs, buttermilk and melted butter in a large bowl. In another bowl stir dry ingredients together, then add to egg mixture and whisk just until smooth. Let batter rest briefly.
  • Heat a waffle iron and butter lightly or spray with nonstick cooking spray (even nonstick waffle irons require this step). Ladle batter onto iron (about 1/4 cup for an 8-inch round iron), close, and cook just until light golden brown. Serve immediately.
