I adapted this from a 50-year-old peach crisp recipe. Although it works well with peaches, it works even better with fresh, crisp cooking apples.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease an 8-inch square baking dish.
- Arrange apple slices evenly in prepared baking dish. Sift flour, sugar, cinnamon, and salt in a bowl. Cut in butter using a pastry blender or 2 knives until mixture resembles coarse cornmeal; sprinkle over apples.
- Bake in preheated oven until topping is golden, 40 to 45 minutes. Cool slightly before serving.

- Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish.
- For the filling: Whisk together the brown sugar, flour, apple cider, cinnamon, nutmeg and salt in a large bowl. Peel and core the apples and cut into chunks. Add the apples to the brown sugar mixture and toss to combine.
- Transfer the apple mixture to the prepared baking dish in an even layer.
- For the topping: Combine the flour, oats, brown sugar, pecans, cinnamon and salt in a medium bowl. Add the butter cubes and use your fingers to completely work the butter into the flour mixture. The mixture should hold its shape when squeezed.
- Sprinkle the crumble topping over the filling, squeezing some of the mixture into small clumps. Bake until the filling is bubbly, the apples are tender and the topping is golden brown, about 1 hour.
- Let sit for at least 45 minutes and serve slightly warm or at room temperature.

- The ingredients as listed should make enough to fill an 8x8 square baking dish. For a 13x9 baking dish, I usually quadruple the recipe.
- For the apples, tart is usually better. Apples will cook down, so for 13x9, 2 bags of apples usually does the trick. This will vary on the size of bag, and size of apples.
- Preheat oven to 375 degrees F.
- Spray a 13x9 baking dish with nonstick cooking spray.
- Peel and slice apples, put into large bowl.
- Sprinkle an extra 1/2 teaspoon of cinnamon, and 2 tablespoons of sugar on top of apples. Mix cinnamon and sugar through apples (I use my hands for this).
- Place apples into baking dish.
- In medium to large bowl, combine brown sugar, flour, oats, butter and cinnamon. Use your hands, it works the best.
- Place the mixture on top of the apples, packing it down lightly to prevent it from falling off.
- Place baking dish on top of cookie sheet to prevent ooze from dripping down into oven.
- Bake at 375 for approximately 30 minutes or until top is golden brown (time may vary depending on your oven).

- For the apples: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch glass baking dish with butter.
- Arrange the apple slices in the prepared baking dish in an even layer. In a bowl, mix together the granulated sugar, flour, cinnamon and salt. Sprinkle the mixture over the apples, then pour 1/2 cup water over top.
- For the topping: In a separate bowl, mix the flour, oats, brown sugar, baking powder, baking soda and a pinch of salt. Stir while drizzling in the melted butter. Sprinkle the topping in an even layer over the apples.

THE BEST APPLE CRISP
This is the best apple crisp i have ever tasted! The crisp part tastes like a shortbread cookie! Its a recipe from the food network show Barefoot Contessa. I only used 2 1/2 lbs of apples(about 5) but i prefer my apple crisps more crispy than appley! I also used Gala apples because they just happened to be on sale and it turned out great! You can use your own apple of choice! I also didnt have orange juice or the zests so i just used the bottled lemon juice and it tasted fine.You can also substitute berries, peaches, or any other fruit you like! This crisp also stays crisp if stored in the fridge!

- Apple Mixture.
- Preheat oven to 350 degrees.
- Peel and cut apples to bite size pieces.
- Toss together apples, both zests, both juices, 1/2 sugar, 1/4 cup flour, cinnamon, and nutmeg.
- Mix until apples are coated and pour into a 9 by 13 inch baking dish.
- For the crisp topping combine 1 1/2 cup flour, 3/4 cup brown sugar, 3/4 cup sugar, 1 cup oatmeal, and 1 cup(2 sticks) cubed cold butter in a mixer.
- Mix until mixture is crumbly.
- With hands(its easier this way) crumble topping over the apple mixture. Make sure to cover all the apples.

- Make the topping: Rub together the flour, both sugars, the spice and salt in a medium bowl. Toss in the butter and nuts to coat, then pinch the butter into the dry ingredients until no floury bits remain. Add the oats, and gently rake and squeeze them through the buttery mixture to form peanut-size crumbles. Freeze while you prepare the apples. The crumb mixture can be frozen in an airtight container for up to 1 month.
- Prepare the apples: Heat oven to 375 degrees. Use 1 tablespoon sugar for all sweet apples; 2 to 3 tablespoons for sweet-tart apples or a mix; and 4 tablespoons for all tart apples. Mix the sugar with the flour, spice and salt in a 10-inch cast-iron or other heavy ovenproof skillet.
- If you'd like, peel the apples. Cut into 1/2-inch chunks, discarding the seeds and cores. Add to the skillet and drizzle with 1 tablespoon lemon juice for tart apples and 2 tablespoons for sweet-tart and sweet ones. Mix until evenly coated, then spread in an even layer. Crumble the frozen crisp mixture on top. (There will be gaps.)
- Bake until the topping is golden brown, and the apples are tender and bubbling, 45 to 50 minutes. Cool for at least 15 minutes on a rack before serving hot, warm or at room temperature.

- Place 1/2 cup butter in a medium, light-colored saucepan over medium-low heat. Cook, swirling often, until butter is browned and fragrant, about 10 minutes. Pour into a large mixing bowl and set brown butter aside.
- Combine apples, 2 tablespoons brown sugar, 2 tablespoons butter, lemon juice, 1/4 teaspoon cinnamon, and pinch of salt in the same saucepan. Place the pan back over medium-low heat and cook, stirring occasionally, until apples are softened, about 10 minutes.
- Mix water and cornstarch together in a small bowl or measuring cup. Pour mixture into the saucepan and stir to combine. Cook until mixture thickens slightly, 1 to 2 more minutes. Remove pan from the heat and let cool slightly.
- Preheat the oven to 350 degrees F (175 degrees C). Line a 9x9-inch square baking pan with enough parchment paper to have overhang on all sides.
- Add oats, flour, 1/2 cup brown sugar, remaining 1 teaspoon cinnamon, vanilla, baking soda, nutmeg, and 1/4 teaspoon salt to the brown butter and mix until well combined. Measure out 1 cup of this mixture and set aside for topping.
- Pour remaining oat mixture into the prepared pan; firmly press into an even layer. Pour apples and sauce over the crust and spread into an even layer. Sprinkle with reserved oat mixture.
- Bake in the preheated oven until top is golden brown and crisp, 30 to 35 minutes. Remove from the oven and let cool completely, about 30 minutes, before slicing into 16 bars.
