THE BEST PEANUT BRITTLE
This sweet and salty peanut brittle has the perfect crunch and sheen. With a little patience, you'll have a delicious brittle to serve to party guests or as an edible gift around the holidays.

Steps:
- Line a rimmed baking sheet with foil and grease with nonstick cooking spray.
- Stir together the sugar, corn syrup and 1/2 cup water in a medium saucepan fitted with a candy/deep-fry thermometer. Bring the mixture to a boil over medium heat, then continue to boil until it's golden brown and it reaches 340 degrees F, about 15 minutes.
- Working quickly, remove the pan from the heat and stir in the butter and baking soda until smooth (it will foam and bubble up). Stir in the peanuts until evenly distributed amongst the sugar mixture.
- Pour onto the prepared baking sheet and quickly smooth with a rubber spatula into a thin and even layer. Let harden uncovered at room temperature until cooled completely. Break into pieces and store in an airtight container.
BUTTERY PEANUT BRITTLE
So buttery and good. I would leave the peanuts out for my dad. For everyone else, I used raw peanuts. Cooling time is not figured in.

- Combine sugar, syrup and water in 3 quart pan.
- Cook and stir until sugar dissolves.
- When syrup boils, blend in butter.
- Stir frequently after mixture reaches syrup stage (230°).
- Add nuts when temperature reaches soft crack (280°) and stir constantly until hard crack (305°).
- Remove from heat.
- Quickly stir in baking soda, mixing thoroughly.
- Pour onto 2 large, well butter cookie sheets.
- As candy cools, stretch out thin by lifting and pulling from edges, using 2 forks.
- Loose from pans as soon as possible and turn candy over.
- Break in pieces.
- I use table knife handle.

- When syrup boils, add butter.
- Stir ogten after 230 degrees.
- Add nuts at 280 degrees.
- Stir until hard crack at 305 degrees, then remove from heat and quickly stir in soda.
- Pour onto two buttered cookie sheets.
- cool then break up into pieces.

PEANUT BRITTLE

- Measure the vanilla into a small bowl and set aside. Combine the baking soda and salt in another small bowl and set aside. Butter 1 cookie sheet with sides or jelly roll pan liberally with 1/2 stick of the butter. Set aside.
- Combine the sugar, corn syrup and 1/2 cup water in a large saucepan. Bring the mixture to a boil, attach a candy thermometer and cook over medium-high heat until the syrup spins a thread when poured from a spoon or reaches 240 degrees F on the thermometer. Stir in the peanuts and continue cooking and stirring until the candy becomes golden brown or reaches 300 degrees F.
- Remove from the heat immediately and quickly add the remaining 1 stick butter and the vanilla, baking soda and salt. Stir only until the butter melts, and then quickly pour the brittle onto the cookie sheet, spreading the mixture thinly. When the brittle has completely cooled, break the candy into pieces and store in a tightly covered container.
PEANUT BRITTLE
Steps:
- In a small bowl combine peanuts, cinnamon, and cayenne. Set aside.
- Brush the inside of a medium sized heavy saucepan with vegetable oil. Add the sugar and water to the saucepan, cook over high heat, stirring occasionally with a wooden spoon, until it comes to a boil. Stop stirring, cover and cook for 3 minutes. Uncover, reduce heat to medium, and cook until the sugar is a light amber color. Stir in peanuts. This will greatly reduce the temperature of the sugar so work quickly. Once evenly mixed, pour mixture onto a sheet pan lined with a silicone baking mat or buttered parchment paper. Using a buttered spatula, spread thin. You will have to work quickly when pouring out and spreading the mixture in the pan. If necessary, in order to achieve single layer of peanuts, top with second sheet pan whose underside has been buttered. Cool completely and then break into pieces.
CLASSIC PEANUT BRITTLE
This classic peanut brittle is great for holiday gift-giving. Package in cellophane bags or decorative tins for a pretty presentation.

- Use a bit of butter to grease a baking sheet, preferably one with a low rim. Combine sugar and 2 tablespoons water in a heavy skillet and turn heat to medium. - Preparations: Butter a cookie sheet;place in warm oven to keep warm-to hot. Combine the baking soda and vanilla in a small cup and set aside.(this keeps the soda from brown flaking in your syrup).
- Combine sugar,water and corn syrup in heavy saucepan.
- Bring mixture to full boil over high heat, stirring until mixture appears clear.
- Cook to hard crack stage- 290 degrees.(No thermometer? Fill a cup with cold water and drip a drop of the syrup into water. Feel the drop at the bottom of the cup -- if it's hard and brittle, it's ready!
- Meanwhile, put the measured peanut butter and peanuts in a medium size bowl and microwave on defrost or half power to warm .
- When the syrup hits 290 remove from heat and add vanilla,soda and the warmed peanut butter mixture. Combine and stir quickly.
- Working quickly, pour onto a very warm - hot buttered cookie sheet; spread with large spoons or forks.
- Cool; break into pieces.

- Lay out several sheets of foil to spoon the hot peanut brittle onto.
- In a large skillet mix the sugar, syrup, and water together. Cook at a medium-high heat, stirring regularly. Heat until the mixture has a hard ball consistency. Heat to 250 to 265 degrees F (121 to 129 degrees C), or until a small amount of syrup dropped into cold water forms a rigid ball. If you don't own a candy thermometer, occasionally hold spoon above mixture, allowing it to drip off spoon. When mixture is at hard ball stage, it will 'hair' off the spoon when falling, looking like a clear spider web.
- Once mixture is at hard ball consistency, add raw peanuts. (They will pop a little.) When mixture starts to turn a light clear-brown, as if it's starting to burn, remove from stove. Add soda and stir. Mixture will foam up.
- Spoon out bite-size pieces onto unbuttered foil, stirring constantly between each couple of pieces. Mixture can also be poured onto unbuttered foil as one big piece and broken into smaller pieces once cooled.

- In top of double boiler, warm peanut butter over low heat.
- Butter 2 large baking sheets.
- Butter sides of a heavy 3 quart pan, combine sugar, corn syrup, and water .
- Cook and stir over medium high heat till it comes to a boil --
- Clip candy thermometer to side of pan and cook till mixture reaches 275* (about 15 minutes).
- Reduce heat to medium and add 2 tbls butter stirring just until melted.
- Add peanuts and cook and stir for 5 more minutes until candy starts to turn brown and thermometer reads 295*.
- Remove from heat and remove thermometer
- Quickly sprinkle baking soda over mixture stirring constantly.
- Stir in vanilla.gentlly stir in warmed peanut butter.till it is well combined.
- Immediately pour candy onto prepared sheets.working quickly spread as thin as possible.
- When cool, break into pieces.

- Mix baking soda, 1 tsp water and the vanilla; set aside.
