BLUE CACTUS MARGARITAS
It's not technically a margarita. I made this drink up all on my lonesome. It's great at BBQs or with spicy Mexican food. I've been making cactus pear margaritas for a long time, but I added a little blue.

- To make Prickley Pear Margarita Mix:.
- In a blender add your bottle (1 liter) of Margarita mix. I usually just cut the cactus pears in half and scoop out the pink flesh. Add the fruit's flesh to the blender and blend until smooth.
- Strain mixture through a fine sieve or rice strainer. Press the pulp down to get any remaining liquid out.
- I usually pour strained mix back into margarita mix bottle and use the little left in the bottom of the container to make my first drink.
- For each drink:.
- Fill shaker half full of ice.
- Add 2 oz tequila, 3/4 oz blue curacao and the juice of half a lime.
- Shake well and strain into a 12 ounce glass that's been dipped in margarita salt and packed with ice. Pour Prickly Pear Margarita mix to the top and serve.
- Garnish with lime.
- Should make about 8 drinks.

CACTUS PEAR MARGARITAS

- Rub lime wedge around the rim of cocktail glasses and dip the rim into a saucer of coarse salt. Place tequila, Cointreau, cactus pear and lime juice and ice cubes in a blender and blend until frothy. Divide among glasses.
PRICKLY PEAR MARGARITA
Prickly pears are everywhere in the Sonoran Desert from August to mid-November, but few people know that the cactus is edible. There's nothing like a prickly pear margarita at the end of the day. Though some people use prickly pear juice, I make prickly pear syrup. A couple of pinches of chile flakes add a little kick to the drink.

- For the cocktail: Combine the tequila, triple sec, lime juice, agave, prickly pear syrup and chile flakes in a cocktail shaker and incorporate all the ingredients by shaking it to your own rhythm.
- For the garnish: Pour some lime juice on a saucer. Mix together the sugar and salt on a separate saucer. Dip the rim of a 10-ounce glass into the lime juice and then dip the rim into the sugar and pink salt mixture. Fill the glass with ice, pour in the cocktail and garnish with prickly pear, if using, and a lime slice.
- Holding each prickly pear with metal tongs, lightly graze the fruit with a flame until the glochids (thorns) are singed off. Place the fruit in a medium heavy-bottomed saucepan and cover with water. Bring to boil, cover and let sit off the heat for 25 to 35 minutes.
- Line a fine-mesh sieve with cheesecloth. Strain the liquid through it into a medium heatproof bowl, mashing the fruit with a spoon until all the fruit is mashed.
- Pour the contents of the bowl into the same saucepan and discard the solids; stir in the sugar, bring to a simmer and cook for about 10 minutes. Add the lime zest and juice. Let simmer about 15 more minutes; remove from the heat, let cool and refrigerate.
PRICKLY PEAR MARGARITAS

- Add the tequila, triple sec, lime juice and prickly pear puree to a pitcher and mix well. Chill for at least 4 hours.
- When ready to serve, spread some salt on a small plate. Run a lime slice around the rim of each glass. Dip the glass rims in the salt to coat. Fill the glasses with ice and pour the margarita mix over. Garnish with a lime slice.

- Rub the rim of 4 rocks glasses with lime; dip in coarse salt. Fill three-quarters of the way with ice. Combine 1 cup tequila, 2/3 cup fresh lime juice, 1/3 cup orange-flavored liqueur and 2 teaspoons superfine sugar in a cocktail shaker. Shake well, then pour into the glasses. Garnish with lime.

- Place tequila, orange liqueuer, Cactus Pear syrup, lime juice, and ice in a cocktail shaker and shake for 10 seconds.
- Place a few tablespoons of the cactus Pear syrup on a small plate. Dip the rim of the glass in the syrup, and let the excess run off, then dip in salt.
- Strain the mixture into the glass and garnish with a lime wedge.

THE PERFECT MARGARITA
Mastering the margarita requires a certain amount of practice, but once you dial-in your perfect ratio, it's a really easy cocktail to replicate. The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

- Moisten the rim of a glass with a lime wedge. Sprinkle salt onto a plate. Lightly dip the moistened rim into the salt. Place a large ice cube in the glass and freeze the prepared glass until ready to serve.
- Fill a cocktail shaker with fresh ice. Add tequila, triple sec, and lime juice. Cover and shake vigorously until outside of the shaker has frosted. Strain into the prepared glass and garnish with a slice of lime.

- Prepare margarita glass rim by dipping into lime juice, and then coarse salt.
- Put ice into a shaker.
- Add tequila, Grand Marnier, fruit and sweet and sour.
- Shake vigorously and pour into prepared margarita glass.
- Garnish with a wedge of lime.
- *Use very ripe uncooked fruit, cleaned and peeled.
- You can just slice off the stickers, if the store didn't do it for you.
- You peel a prickly pear fruit by very carefully slicing down one side of the fruit, then, using the knife, pulling back the peel until you come all the way around the fruit.
- Then puree it with either a food processor or blender, and chill.
