CALAMARI

This is a delicious, very easy, quick but moderately expensive recipe. Everyone I've ever fixed it for absolutely loves it!

Steps:

  • Preheat oil in a heavy, deep frying pan or pot. Oil should be heated to 365 degrees F (180 degrees C).
  • In a medium size mixing bowl mix together flour, salt, oregano and black pepper. Dredge squid through flour and spice mixture.
  • Place squid in oil for 2 to 3 minutes or until light brown. Beware of overcooking, squid will be tough if overcooked. Dry squid on paper towels. Serve with wedges of lemon.

12 squid, cleaned and sliced into rings
1 lemon - cut into wedges, for garnish

ABSOLUTELY DELICIOUS STUFFED CALAMARI

Calamari tubes are stuffed with seafood and baked in a rich cream sauce before serving over a bed of linguine. This is probably the best calamari, if not the best entree, you'll ever have!

Absolutely Delicious Stuffed Calamari image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Rinse the calamari tubes and pat dry.
  • In a large bowl, stir together the onions, 6 cloves garlic, shrimp, crabmeat and lemon juice. Spoon some of this mixture into each squid tube and seal the ends by 'sewing' with a toothpick. Arrange in a single layer in the bottom of a 9x13-inch baking dish. Set aside.
  • Melt the butter in a saucepan over medium heat. Stir in cream cheese and 2 cloves garlic. Cook and stir until cream cheese has melted. Gradually whisk in the milk. Cook until heated through and then remove from the heat and stir in the Parmesan cheese and pepper. Pour over all of the calamari tubes in the baking dish. Sprinkle about 2 tablespoons of Romano cheese on top of each one.
  • Bake uncovered until the cheese is browned and sauce is bubbly. While the calamari is baking, Bring a large pot of lightly salted water to a boil. Add linguine pasta, and cook until al dente, about 8 minutes. Drain. Serve the stuffed calamari and sauce over a bed of linguine.

Fried Calamari (Cajun Style) image

Steps:

  • Wash and pat squid rings dry.
  • Pour flour into zip lock bag along with salt, pepper, cayenne, and garlic powder: shake to mix.
  • In a shallow bowl, mix the eggs, milk, and hot sauce (I use Texas Pete).
  • Pour remaining flour in another zip lock bag.
  • Working with a few rings at a time, shake in unseasoned flour, dip into egg/milk mixture, shake off excess, then shake in seasoned flour.
  • Fry in hot oil (350 degrees) until a light golden brown. I recommend doing just a couple of rings at first as a taste test. Add seasoning to flour if required.
  • After frying, place on paper towel to drain, and re-season with Tony's (optional). Just a little salt is fine as well.
  • Note: I don't recommend using Tony's as the seasoning for the flour--it comes out too salty.

Easy Calamari Cajun Style With Lime Vinaigrette image

Steps:

  • Calamari:.
  • Slice squid tubes in to rings.
  • Combine flour and cajun seasoning in a ziploc bag and toss.
  • Deep fry for 30/40 seconds.
  • VINAIGRETTE:.
  • In a food processor, process everything except the oil.
  • Slowly drizzle in the oil until emulsified.
  • Add chopped coriander.
  • Place into a bowl for 30mins for the flavours to develop.
  • Serve on the side or drizzle some of the vinaigrette over the calamari.

500 g squid, tubes
125 g flour
1 teaspoon cajun seasoning
3 tablespoons fresh lime juice
1/4 bunch fresh coriander, chopped
1 1/2 tablespoons rice vinegar
1 1/2 tablespoons soy sauce

  • Wash the calamari thoroughly, cut into rings about 1 cm thick sprinkle some salt and put aside in a sieve to drain properly.
  • Place a nonstick frying pan on a medium- high heat and cook the the calamari rings. There will be some water released but if it's not too much leave it. It will evaporate as you cook the rings. If it is quite a lot of water just dispose of some and as an indication, there should be roughly about 4 spoonfuls of liquid which is enough to cook them, anything extra, dispose of. Keep stirring or tossing pretty much continuously until all the juices have run out. The whole thing shouldn't take longer than 12-13 min.
  • When the calamari is left with no juice at all, add the oil, garlic and the Cajun powder* (see recipe notes for details) .
