CALIFORNIA PEACH COBBLER
This has been in my family ever since I can remember. It was always a favorite during holidays.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Combine peaches, 1 cup white sugar, and water in a saucepan; bring to a boil. Reduce heat and simmer, stirring carefully, until peaches are tender and syrup is thickened, about 10 minutes.
- Put butter in a 3-quart baking dish and place in oven until butter melts, 2 to 3 minutes.
- Mix flour, milk, brown sugar, and remaining 1/2 cup white sugar together in a bowl until batter is smooth; pour over melted butter without stirring. Spoon peach mixture over batter, allowing the syrup to drip over peaches into the batter. Sprinkle cinnamon over the top.
- Bake in the preheated oven until cobbler is cooked through and bubbling, about 45 minutes.

PEACH COBBLER
I found this peach cobbler recipe on the internet from the Salt Lick Restaurant in Austin, TX. Everyone loves this recipe so much I have to make a double batch! Feel free to cut back on the sugar. Everyone has and the peach cobbler still comes out perfect. :D Personally, I always use two bags of frozen peaches instead of canned.

Steps:
- Melt butter in a 9 x 13 inch pan.
- Mix together flour, sugar, baking powder & salt.
- Stir in milk & egg.
- Pour evenly over melted butter.
- Combine peaches, sugar & spices and spread over batter-DO NOT STIR!
- Bake 35-45 minutes at 350°F until batter comes to the top and is golden brown.
- Serve warm with ice cream.
THE BEST PEACH COBBLER
In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. - For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
- For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
- Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
- Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
- Let cool to room temperature before serving.
PEACH COBBLER
Steps:
- Preheat the oven to 350 degrees F.
- In a medium bowl, combine about 1/2 cup of the peach juice with the cornstarch and whisk until smooth. Pour in the remaining peach juice and whisk to blend. Transfer the mixture to a small saucepan and heat over medium heat. Add 1/2 cup of the sugar, 1 teaspoon of the cinnamon, the ginger, nutmeg and a pinch of salt. Cook, whisking, until the sugar dissolves and the mixture thickens, 3 to 4 minutes. Remove from the heat. Add the room temperature butter and stir until melted. Pour into a medium heatproof bowl and combine with the chopped peaches. Add 1/2 teaspoon of the vanilla and gently toss to combine. Transfer to a 9-by-13-inch baking dish.
- In a large bowl, whisk together the milk, egg, remaining 1 1/2 cups sugar, 1 teaspoon cinnamon, 1 teaspoon vanilla and a pinch of salt. Add the flour and baking powder and gently whisk until incorporated, then gently whisk in the melted butter until combined. Pour the batter over the fruit and peach juice mixture. Don't overfill the dish-leave room for the cobbler batter to rise, about 1/2 inch.
- Bake until golden blonde on top, 30 to 35 minutes, then rotate the baking dish, raise the oven temperature to 400 degrees, and bake until the top of the cobbler is golden brown, 5 to 8 more minutes.
- Let cool on a cooling rack and serve with whipped cream or ice cream.
CAMPFIRE PEACH COBBLER

- Prepare campfire or grill for low heat, using 32-40 charcoal briquettes., Line the inside of a 10-in. Dutch oven with heavy-duty foil. In a large bowl, whisk together first 4 ingredients. Add milk and melted butter, stirring just until moistened. Pour into prepared pan., Drain peaches, reserving 1 cup syrup. Arrange peaches over batter; sprinkle with sugar and, if desired, cinnamon. Pour reserved syrup over fruit. Place lid on Dutch oven., When briquettes are covered with white ash, place Dutch oven directly on half of the briquettes. - Make the crust: In the bowl of a food processor, pulse together the flour, sugar, and 2 teaspoons salt until just combined. Add the butter and pulse a few more times until the mixture is coarse but the butter pieces are still visible. Slowly add the ice water and pulse to form a dough, six to eight pulses. If the dough looks and feels very dry, add more ice water, 1 tablespoon at a time. Divide the dough in half and wrap each half tightly in plastic wrap; flatten each piece into a disc. Refrigerate the dough for 1 hour.
- Make the filling: In a large bowl, mix together the peaches, sugar, flour, cinnamon, nutmeg, and a pinch of salt. Set aside.
- Preheat the oven to 375ºF.
- Remove the dough from the refrigerator and cut in half. On a lightly floured surface, roll it into a 9 x 13-inch rectangle, about ¼ inch thick. Set aside and repeat with the second piece of dough.
- Line a 9 x 13-inch baking dish with one of the dough rectangles, pressing any excess dough against the sides of the dish. Pour in the peach filling and spread it evenly. Place the second rectangle of dough on top of the peaches and tuck the excess dough into corners. Brush the dough with the beaten egg and sprinkle with cinnamon and sugar. Pierce the top with the tip of a sharp knife in several places to allow steam to escape while baking. Bake until the top crust is golden brown, about 1 hour 15 minutes. Let cool on a rack before serving. Serve with ice cream.

GRANDMA'S FAMOUS PEACH COBBLER
My husband's grandmother was known by everyone for her good cooking and her peach cobbler was among her all-time favorite crowd pleasers. Unfortunately she became ill with cancer and, not to sound heartless, but it occurred to me that her recipe would be lost forever. She dictated this to me not long before she passed away. I scribbled it on some paper and hope it's accurate - she was one of those "pinch of this" type of cooks so some of the measurements are guesses. I have made it once and the family said it was her cobbler. Hope you enjoy it as much as we do.

Steps:
- Make crust by cutting shortening into flour and salt. Roll out into two crusts. Put one into 13x9 inch pan. Bake only the crust in the pan at 350 for about 15 minutes. You don't want it to be completely cooked.
- Put peaches in pan over medium heat. Add sugar, vanilla, and cinnamon.
- Mix water and cornstarch and add to peach mixture. Cook until thick.
- Pour peach mixture on top of crust.
- Place second, uncooked crust on top of peach mixture.
- Bake approximately five minutes or until brown.
- Mix powdered sugar and milk making a glaze. You may need to add more milk as needed.
- Brush glaze on top of crust and bake until it reaches a nice color, about five minutes.
