Steps:

  • Preheat the oven to 375 degrees F.
  • Line a baking sheet with aluminum foil and top it with a baking rack. Arrange the bacon in 1layer on top of the rack.
  • Mix together the pecans, and brown sugar with a good grinding of pepper in a small bowl. Evenly sprinkle the mixture over the bacon. Put the bacon into the oven and bake until the sugar is melted and the bacon is crisp, about 20 to 25 minutes. Remove and let cool slightly until crisp.
  • While the bacon is cooking, toast the rye bread and cut each slice into quarters. In a small bowl mix together the cream cheese and Worcestershire sauce. To serve, spread the toast with the cream cheese mixture and top with 1 or 2 pieces of bacon cut to fit the bread. Garnish with chopped chives and serve.

1/2 pound thick cut bacon
1/2 cup chopped pecans
1/2 cup brown sugar
Freshly ground black pepper
4 slices rye bread
1/2 cup cream cheese, softened
1 tablespoon Worcestershire sauce
2 tablespoons chopped chives, for garnish

Steps:

  • Preheat the oven to 375 degrees F. Stir together the sriracha and brown sugar in a medium bowl; add the bacon pieces and toss to coat. Set aside.
  • Line a large rimmed baking sheet with aluminum foil; place a wire rack over the foil. Spray the rack liberally with cooking spray. Place the bacon pieces in a single layer on the rack.
  • Bake until the bacon is almost crisp, 15 to 20 minutes. Sprinkle the bacon with the toasted and black sesame seeds and bake an additional 5 minutes. Cool for 5 to 8 minutes, moving the bacon pieces slightly on the rack every 2 minutes to prevent sticking. (The bacon will crisp more as it cools.)

1/4 cup sriracha chili sauce
1/4 cup packed light brown sugar
10 thick-cut bacon slices, each cut into 4 pieces (approximately 2 inches each)
Nonstick cooking spray, for spraying the rack
1 1/2 tablespoons toasted sesame seeds
1 1/2 tablespoons black sesame seeds

Steps:

  • Place the bacon in an even layer in a large skillet. Cook over medium-low heat, stirring often with a rubber spatula, until the bacon is light golden brown, about 20 minutes.
  • Meanwhile, combine the maple syrup, black pepper and cayenne in a small bowl.
  • Pour off some of the rendered bacon fat, leaving just a small amount. Return the skillet to the heat and pour the maple syrup mixture over the bacon. Braise gently until the syrup thickens and glazes the bacon and the bacon is deep golden brown, about 15 minutes. Serve warm.

1 pound slab bacon, cut into 1-by-1/2-inch pieces
1/4 cup pure maple syrup
1/4 teaspoon coarsely ground black pepper
1/8 teaspoon cayenne pepper

Steps:

  • Preheat the oven to 350 degrees F. Line 2 rimmed baking sheets with parchment.
  • Separate the bacon into strips and blot each dry. Spread the sugar on a large plate. Press both sides of each bacon strip in the sugar. Arrange the coated bacon on the prepared baking sheets. Sprinkle with any remaining sugar.
  • Bake the bacon for 15 minutes, turn the strips over and continue to bake until golden and glazed, 15 to 20 minutes more (it will still be pliable). Remove to a rack and let cool; the bacon will harden but it won't be super crispy.

1 pound bacon
1 cup packed light brown sugar

CANDIED BACON

This is a really easy breakfast item because you can put it in the oven, set the timer and forget about it while you make everything else and pull it out just before sitting down so it's piping hot.

Steps:

  • Preheat the oven to 325 degrees F.
  • Put bacon slices in a bowl, season them with pepper and toss with the brown sugar. Cover a baking sheet with parchment or foil and arrange the bacon in a single layer on top. Sprinkle any sugar left in the bowl over the bacon. Top with another layer of parchment or foil and top it, squarely, with another baking sheet. The baking sheet will flatten the bacon as it cooks.
  • Place the tray in the center of the oven and bake for 20 minutes. Check the bacon by lifting the top tray and parchment. If it is not golden brown and fairly crispy, resist the temptation to turn up the oven temperature, and cook it for 10 to 15 minutes longer. Check it again. Keep in mind that when you remove the tray and transfer the bacon to a serving platter or individual plates, the bacon will "crisp" up a little more. Be patient!

12 slices bacon, about 1/4-inch thick
Finely ground black pepper
1/3 cup light brown sugar

Steps:

  • Combine 1/2 cup brown sugar and 2 1/2 teaspoons gochugaru (Korean red pepper flakes) and spread on a plate. Coat one 12-ounce package thick-cut bacon in the sugar mixture, pressing each slice on both sides to adhere.
  • Lay the bacon on a parchment-lined baking sheet and bake at 325˚ F, rotating the pan and flipping the bacon halfway through, until the bacon is dark brown and caramelized, 30 to 40 minutes. Sprinkle with toasted sesame seeds on both sides, then let cool completely to harden.

Steps:

  • Put the bacon in a container so it lays flat. Pour over the cola to cover. Refrigerate and let soak 2 to 3 hours.
  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with foil, place a cooling rack over top and spray with cooking spray.
  • Drain the bacon from the cola, place on the cooling rack and pat dry. Combine the brown sugar, paprika and black pepper in a bowl and toss to combine and loosen up the brown sugar. Sprinkle the brown sugar mixture on both sides of the bacon, pressing and patting so it adheres. Place the slices on the cooling rack; they can be close to one another but shouldn't touch.
  • Bake until the bacon is deeply caramelized but still pliable (it will crisp as it cools), about 20 minutes. Flip the bacon occasionally as it cools to crisp on both sides. Let cool completely.

10 slices bacon
One 12-ounce can cola
Nonstick cooking spray, for the cooling rack
3/4 cup unpacked light brown sugar
2 teaspoons sweet paprika
1 teaspoon ground black pepper

  • Preheat the oven to 350 degrees F. Line two large rimmed baking sheets with foil or parchment paper. Then set a wire baking rack on each sheet.
  • Mix the brown sugar, bourbon, vanilla, and crushed red pepper in a large bowl. Cut the bacon into squares and toss it in the bourbon mixture. Mix well to coat.
  • Place the bacon squares on the wire racks. Brush additional bourbon mixture over the bacon, saving the rest for later. Bake for 40-60 minutes, until the bacon is brick-red and crisp. Brush the bacon with the remaining bourbon glaze halfway through baking. (Cooking time depends on the thickness of your bacon.)
  • The bacon will still be a little flexible while it's hot, but should quickly cool into dry pieces that are crisp on both sides. You can take a piece out of the oven and cool it to test for doneness. Cool the bacon to room temperature, then serve or package for gifts! (Crisp dry Pig Candy can sit out at room temperature for up to 3 days. But feel free to keep it in the refrigerator, just to be safe.)
