Cantaloupe Daiquiris image

Steps:

  • 1. In either a Large bowl or freezer bag, combine the Cantaloupe, Sugar, Lemon, Mint & Basil. Let the melon macerate in the fridge until soft and juicy, about 2 hours. Place the glasses in the freezer to chill.
  • 2. When your ready to serve your guests, puree the melon mix in a blender or food processor. Add the Rum and Ice, blend until smooth.
  • 3. Serve & Enjoy Responsibly. :)

1 cantaloupe (seeded, peeled, & finely diced)
1/2 c sugar
1 Tbsp fresh lemon juice
1 Tbsp chopped mint leaves
1 Tbsp chopped basil leaves
1 c light rum
4 c crushed ice

My friend grows the most amazing cantaloupes. After pigging out on most of one I decided to search for a great drink recipe using this sweet fruit. I found this drink from the Seattle-Post Intelligencer. Make sure you use only the sweetest cantaloupe you can find.

Cantaloupe Daiquiris image

Steps:

  • In a large bowl or food storage bag, combine the cantaloupe, sugar, lemon juice, mint and basil.
  • Let the melon macerate in the refrigerator until very soft and juicy, about 2 hours. Meanwhile chill the glasses in the freezer.
  • When ready to serve, puree the melon mixture in a blender or food processor.
  • Add the rum and ice and blend until slushy.

  • Puree cantaloupe, sugar, and champagne vinegar in a blender. Stir in lime zest. Chill, covered, 4 hours to 2 days. Strain.
  • In a cocktail shaker half-filled with ice, combine 2 fluid ounces cantaloupe shrub, rum, and lime juice. Shake until very cold. Strain into an ice-filled wine glass or water goblet. Garnish with slices of cantaloupe and lime.

  • To make the cantaloupe "juice," blend 2 cups cubed cantaloupe melon in a blender until pureed and smooth. Strain the mixture through a mesh strainer that is sitting on a bowl, pushing any extra liquid out with a spoon.
  • Add the rum, cantaloupe juice, syrup, cherry juice and lime juice to a shaker filled with ice. Shake for 30 seconds then pour into a frosty glass. If you’d like some bubbles, splash some seltzer on top! Garnish with a wedge of lime and a few melon balls.
  • Note: for simple syrup, combine equal parts sugar and water. For instance, bring 1/2 cup of each to a simmer in a saucepan while whisking. Turn off the heat and let it cool to room temperature!
