If you've got an espresso/cappuccino machine you're well on your way to recreating a top-choice Starbucks coffee drink. For the caramel part, you can use any caramel sauce that you find in the grocery store near the ice cream toppings. Pick your favorite. Just note that to make this recipe work best you'll only need 3 tablespoons of a richer caramel sauce (like the stuff Starbucks uses), but more like 4 tablespoons of a lighter sauce (such as fat-free Smuckers). For the vanilla syrup you can use the bottled syrups, such as those made by Torani, or just whip up a your own clone from scratch. By the way, if you want to make this clone super accurate, pick up bottles of the authentic vanilla syrup and caramel sauce sold in Starbucks stores.

- You can use vanilla syrup from a bottle for the drink or make your own vanilla syrup following this Top Secret Recipe: Simply combine 2 cups water and 1 1/2 cups sugar in a medium saucepan and bring to a boil.
- Reduce heat and simmer for 5 minutes, then add 3/4 teaspoon vanilla extract.
- Remove from heat and cool.
- Store in a covered container.
- To make your coffee drink, add two tablespoon of vanilla syrup to a 16-ounce glass.
- Add 1/2 cup fresh brewed espresso followed by 8 ounces of steamed milk.
- Add 3 to 4 tablespoons caramel sauce to the drink.
- Stir before drinking.

- Preheat the oven to 400 degrees F.
- Melt the butter in a small saucepan over medium-high heat. Add the brown sugar and cook, stirring constantly, until it begins to melt, 2 to 3 minutes. Add the garlic and ginger and cook, continuing to stir, for another 1 to 2 minutes. Stir in the vinegar, fish sauce and soy sauce. Bring to a low simmer and let cook for about 5 minutes. Remove from the heat.
- Use a paper towel to thoroughly pat dry the chicken. Sprinkle both sides with salt and pepper.
- Heat a large ovenproof skillet over high heat until very hot. Add the oil. Place the chicken in the skillet skin-side down and let brown without moving it for about 4 minutes. Remove the chicken to a plate and raise the heat to medium-high. Add the brown sugar mixture and use a wooden spoon to scrape up any browned bits. Return the chicken to the skillet skin-side up. Transfer the skillet to the oven and bake, basting the chicken with the sauce midway through cooking, until cooked through, about 20 minutes. For extra-crispy skin, transfer the skillet to the broiler for about 2 minutes. Serve over white rice with sauce.

- To make a strong coffee, you can brew a ratio of 3 heaping tbsp of coffee to 6 cups water.
- Add vanillin to the coffee grinds before making the coffee, that way it will infuse while brewing.
- Once coffee is done brewing, place milk in a large cup and microwave until hot.
- In a tall glass combine the coffee, milk, and caramel syrup and stir well.
- Add sugar in small increments until desired sweetness is achieved, don't forget that the caramel will sweeten this beverage as well.
- Top with whipped cream and drizzle caramel.

- Heat oven to 160C/fan 140C/gas 3 and lightly butter a 20 x 23 cm shallow baking tin. Sift the flours together, then stir in the sugar, almonds and a pinch of salt. Rub in the butter and vanilla seeds to make fine crumbs, then tip into the tin and press down with the back of a spoon. Put in the freezer for 5 mins, then bake for 35-40 mins. Cool.
- For the caramel, put the sugar and 100ml water in a heavy-based pan, heat gently until the sugar dissolves, then turn up the heat until it turns dark amber. Stir in the cream in four additions until smooth and shiny - take care as it will bubble up. Stir in the butter and ½ tsp salt. Pour over the shortbread and cool.
- For the topping, melt the chocolate and butter over a pan of simmering water, then pour over the caramel and smooth out with the back of a spoon. Chill until firm, at least 30 mins. Cut into quarters, then 16 pieces. Will keep in the fridge for up to 3 days.

CARAMEL CHICKEN
Found this wonderful Vietnamese recipe in a supermarket leaflet and adapted it to my liking. Everyone I share it with is crazy about it and it has ended up on the lunch menu at the hotel where I work! If you've never used fish sauce before, go for it. It may smell like dirty socks, but it is essential to this dish, do not delete or substitute. If you don't want to bother with all the herbs, just use cilantro, it's still great. - Pre-heat oven to 325 degrees. Combine sugar and water in a high sided sauce pot. Bring to boil and simmer until the sugar turns a dark caramel color, but not burnt. Do not stir the sugar while cooking or it may crystallize. Add the chicken broth (the broth will boil quickly and spatter because of the hot sugar so be careful. This is the reason for the high sided pan). Stir in the broth and continue stirring over low heat until the sugar dissolves, then add the fish sauce and soy sauce. Set aside.
- Season the chicken pieces with the salt. Heat the vegetable oil in a large skillet and brown the chicken pieces on all sides. In the same pan, (using the extra vegetable oil if needed) sauté the ginger, garlic, onion and jalapeno over medium heat for a couple minutes until soft and fragrant. Add the browned chicken pieces and the caramel sauce, turning the chicken in the caramel broth to coat all sides. Arrange the chicken in the pan so it is all submerged in the sauce as much as possible and bring the pot to a boil. Cover the pot, put in the oven and braise until done, about 35-45 minutes.
- While chicken is cooking, combine the green onion and the other herbs and set aside.
- Serve the chicken over your favorite rice, with the herbs sprinkled on top. I like jasmine rice.

A rich Starbucks espresso and the rich buttery taste of caramel & creamy milk what could be better. I only use Starbucks original whole bean espresso and grind it to a fine espresso powder and brew it up in my espresso machine. I use the double shot holder on my espresso machine and brew a double shot of espresso. (1 shot is 1 oz- this recipe calls for 2 full ounces of Starbucks espresso). I use a single serve blender for a Blended Caramel Macchiato, if you want a hot beverage just use steamed milk.

CLASSIC CARAMEL MACCHIATO
A macchiato is my favorite coffee drink. Most of the time I get it with no flavoring. But this drink is sort of a special occasion thing. What they serve at Starbucks is not really a macchiato at all, but a latte. So if you really want to try a macchiato (never had one before) and find out what it's all about, this is a good choice for you. Of course, if you don't want the flavorings, just prepare it with a shot or two, and a little foam on top. That's a macchiato. Hope you enjoy!

- Spoon very small amount of foamed milk on top of espresso.

- In a heavy bottomed saucepan over medium heat, combine the butter, brown sugar, sweetened condensed milk, corn syrup and salt. Bring to a boil, stirring constantly. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Cook for 2 minutes at that temperature. Remove from the heat and stir in vanilla.
- Meanwhile, butter a 9x13 inch baking pan. When the caramel is ready, pour into the buttered pan. Allow to cool completely at room temperature. Remove from the pan and cut into squares using scissors. Wrap individual pieces in waxed paper or cellophane.
