  • Spread wings onto rimmed baking sheet sprayed with cooking spray.
  • Bake 50 min. to 1 hour or until done, turning after 30 min. Meanwhile, mix remaining ingredients until blended.
  • Remove wings from oven. Heat broiler. Brush wings with half the ketchup mixture.
  • Broil, 4 inches from heat, 2 min. Turn; brush with remaining ketchup mixture. Broil additional 2 min.

  • Heat olive oil, soy sauce, honey, brown sugar, paprika, cumin, salt and cayenne pepper until disolved.
  • Cool. Pour over wings and marinate at least 2 hours, turning once or twice.
  • Bake at 375 with marinade for 1 1/4 to 1 1/2 hours. You can broil for one minute at the end to crisp the skin but watch carefully, they can burn easily.

Steps:

  • Combine the habanero, soy sauce, honey, both sugars, fennel seeds, cayenne, allspice, thyme, ginger, garlic and scallions in a blender. Add the vinegar, lime juice and orange juice and blend until smooth. Place the wings in a large resealable plastic bag and pour the marinade over them. Seal and refrigerate 4 to 6 hours.
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Remove the wings from the bag, place on the lined sheets and bake 20 minutes. Meanwhile, bring the marinade to a boil in a small saucepan over medium heat and cook until reduced by one-third, about 10 minutes.
  • Remove the wings from the oven and brush with the glaze. Raise the oven temperature to 400 degrees F and continue to bake until the wings are cooked through, 20 more minutes.

Steps:

  • Heat oven to 400°F.
  • Combine all ingredients except wings. Remove 1 cup sauce. Pour 1/2 cup into each of 2 small bowls. Refrigerate for later use. Pour remaining sauce over chicken in shallow dish; turn to evenly coat all wings. Refrigerate 15 min. to marinate.
  • Remove wings from marinade; discard marinade. Spread wings onto rimmed baking sheet sprayed with cooking spray. Bake 35 min.
  • Brush with half the reserved sauce; bake 15 to 20 min. or until wings are done. Meanwhile, heat remaining reserved sauce.
  • Serve wings with the warmed sauce.
