I found this recipe on a cooking show by Michelle Wilson titled "Low Fat No Fat Recipes." Carob is sooo much better for you than chocolate. Still, these cookies taste distinctly like carob, so they are really for carob lovers.

Steps:
- Preheat oven to 350 degrees.
- Place banana, dates, soy milk or water, vanilla, & salt in blender & mix until smooth.
- Put oats, carob chips & walnuts in a large bowl & mix.
- Add blended mixture to bowl & mix well.
- Form into cookies.
- Bake for 25-30 minutes.

- Beat egg in large bowl then add butter & honey and cream together.
- Add combined dry ingredients to creamed mixture.
- Add carob chips and mix through.
- Drop dough onto cookie sheet & bake for 10-12 minutes
- Store in airtight containers &/or in fridge; or give to animal-loving friends & family, I sure do!
