Sunshine Carrots image

Steps:

  • Bias-slice carrots crosswise about 1/2" thick.
  • Place in a saucepan containing 1" of boiling, salted water.
  • Cover pan and cook until just tender; about 10 to 20 minutes.
  • Drain.
  • Meanwhile, in a small saucepan, combine sugar, cornstarch, ginger and salt.
  • Add orange juice and cook, stirring constantly until thickened and bubbly.
  • Boil 1 minute and remove from heat.
  • Stir in butter.
  • Pour over hot carrots, tossing to coat evenly.
  • Garnish with parsley and orange twist, if desired.
  • Enjoy!

8 medium carrots
1 tablespoon granulated sugar or 1 tablespoon brown sugar
1 teaspoon cornstarch
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/4 cup orange juice
2 tablespoons butter

Steps:

  • Drain pineapple and oranges, reserving juices. In a large bowl, combine pudding mix with reserved fruit juices. Fold in pineapple, oranges and strawberries; chill for at least 2 hours. Add bananas just before serving.

Steps:

  • 1. For Salad: Peel and grate apple and carrots, and finely chopped celery. Combine all ingredients above in a bowl and toss. Mix in the following dressing:
  • 2. For dressing: In a blender, chop 1/2 cup of almonds, add 1 Red Delicious apple, peeled and cored and 2 cups of grated carrot; blend until creamy. Add a small amount of distilled water or fresh apple juice to reach consistency desired.
  • 3. Here is the consistancy of my dressing. If you have a better blender or food processor you will be able to make it thinner.
  • 4. Mix salad and dressing together and they are ready to be served.

1 medium stalk of celery
DRESSING

  • Shred carrots with a hand grater or in a food processor fitted with grating attachment. Place carrots in a large bowl with next 4 ingredients.   • Stir in one small can of crushed pineapple (with juice), and lemon juice.I usually move everything to the bowl I plan to serve it in at this point, but you can also make the whole recipe in a large bowl and then transfer it to your chosen vessel (i.e., bowl, dish, gelatin mold, etc.). Your choice.
  • Stir in grated carrots. Some people like to add a pinch of salt at this time. Sometimes I do, sometimes I don't. Some people also like hold off and stir in the carrots after the rest has had a chance to set up for about an hour. You can do this if you want, but I don't find that it changes the results. Instead, I stir them all in at the same time and refrigerate: that gives me one less thing to have to remember when I'm preparing a holiday meal.
