CASHEW BASIL PESTO

This is so simple yet amazingly delicious!!! Use it on pasta, chicken, fish or spread on crackers or crostini!!! You can use any kind of cashew. I like to use the roasted salted cashew pieces. But if you want unsalted, just adjust the amount of salt at the end.

Steps:

  • In a food processor, finely chop basil, garlic, cashews and cheese.
  • Slowly drizzle in olive oil. (Use amount that will make to desired consistency.).
  • Season to taste with salt and pepper.

1 cup fresh basil leaf
3 garlic cloves, roughly chopped
1/2 cup cashews (see note)
1/2 cup parmesan cheese or 1/2 cup romano cheese
1/2 cup olive oil

BASIL, PARMESAN AND CASHEW DIP

I'm totally addicted to this dip. It's a copycat of the current dips that are quite expensive to buy in the delis. It's fantastic served with rice crackers or used in your cooking as a pesto sauce. It's fantastic on pasta, chicken or fish.

Steps:

  • Place the basil leaves, nuts, garlic and parmesan in a food processor. Process until finely chopped.
  • Slowly, in a thin stream, add the olive oil until well combined.
  • VARIATION: Use coriander, pine nuts and add some lime.

250 g fresh basil (1 bunch, washed and dryed)
1/3 cup cashews (or substitute with toasted pine nuts)
1/2 garlic clove, crushed
1/3 cup finely grated parmesan cheese
1/3 cup olive oil

  • In food processor*, combine the cashews, cheese, and peeled garlic. Process until finely ground, 20 to 30 seconds.
  • Add the basil, lemon juice and kosher salt. Turn on the food processor and gradually pour in the olive oil. Once combined, turn off the food processor. Blend in a bit more olive oil if desired, to achieve a looser texture. Stores for about 1 week in the refrigerator and several months frozen.
