Steps:

  • Heat oven to 350°F.
  • Heat oil in large skillet on medium-high heat. Add chicken; cook 4 min. on each side or until browned on both sides. Transfer chicken to 3-qt. casserole.
  • Mix dressing, jam and soup mix; pour over chicken.
  • Bake 35 to 40 min. or until chicken is done (165ºF).

Catalina Chicken - EASY! image

Steps:

  • 1. Preheat oven to 375°.
  • 2. Mix together the Catalina dressing, onion soup mix, and apricot jam. Stir to blend well; set aside.
  • 3. Use a meat mallet to pound the thawed (if previously frozen) chicken breasts. This allows for uniformity in thickness for better cooking, and also makes the breasts very tender and delicious.
  • 4. Arrange chicken breasts - touching - in an ungreased 13 x 9" baking pan. Pour dressing mixture over all chicken. Bake for approx. 30 minutes, until juices run clear, and the breasts have a nice 'glazed' appearance.
  • 5. Serve with rice and a nice salad or pretty green vegetable!

Steps:

  • In medium bowl combine chicken and Catalina dressing. Cover and let it marinate for thirty minutes.
  • While chicken marinates fully cook bacon in a skillet and set aside.
  • Remove chicken from dressing and broil in baking dish until brown on both sides.
  • After chicken has browned remove from oven and add dressing, green onions, bacon and then cheese. (In that order)

  • Combine all sauce ingredients to a blender or food processor and blend until smooth. Taste, and add salt and pepper if needed.
  • Transfer 1/2 of the sauce to a large ziplock bag along with the chicken, seal, and chill for 30 minutes to an hour. Cover remaining sauce and set aside while chicken marinates.
  • Drizzle a large pan or skillet with a bit of oil. Use tongs to transfer chicken to pan (discard bag and marinade). Cook chicken for 5-7 minutes over medium heat until browned, then flip. Add tomatoes to pan and continue to cook until chicken is cooked through completely.
  • Drizzle reserved sauce over chicken and tomatoes and cook 1-2 minutes longer until heated through. Garnish with black pepper and fresh thyme if desired and serve alone or over steamed white rice.
