CAULIFLOWER SALAD
I came up with this one summer when I was on a low carb diet, it is similar to a potato salad but made without the potato.

Steps:
- Place cauliflower in a large saucepan and cover with water. Bring to a boil and cook until just fork tender, about 10 minutes. Drain and cool slightly.
- In a large bowl whisk together the mayonnaise, mustard, salt, and pepper. Add the cauliflower, eggs, onion, peas, dill pickles, and bacon to the dressing and stir until well coated. Cover and refrigerate for 2 to 24 hours. The longer the cauliflower salad chills, the better the flavor.

CAULIFLOWER, ANCHOVY AND OLIVE SALAD
I make this salad for work functions, sometimes using half cauli and half broccoli. It's ok to make the day before too. Don't tell anyone about the anchovies and they won't notice!

- Boil, steam or microwave cauliflower until tender (about 3 minutes).
- Drain, rinse under cold water, drain well.
- Combine cauliflower with remaining ingredients in a bowl and add dressing; mix well.
- DRESSING: Combine all ingredients in a jar, and shake well.
CAULIFLOWER SALAD

- Break the cauliflower into florets, discarding the central stem. Slice them thinly and put them in a bowl. Toss with the olives, sun-dried tomatoes, tarragon, garlic and lemon zest. Squeeze over lemon juice to taste. Drizzle in some olive oil and season with salt and pepper. Taste and adjust the quantities to suit your tastes.
HEALTHY CAULIFLOWER SALAD
Very nice side dish, tasty, good for you and low cal. Each serving is 1/2 cup so this is not your entire luncheon salad!

CAULIFLOWER SALAD

- Cut the cauliflower into florets. Place them in a saucepan and add cold water to cover. Add the milk and salt and bring to a boil. Simmer for about 10 minutes or until tender but not mushy. Drain well and let cool.
- Place the oil and vinegar in a salad bowl, add salt and pepper, and blend well with a whisk.
- Add cauliflower, capers, parsley, more pepper to taste, toss well and serve.

Low-carb mock potato salad. Chill several hours or overnight before serving for best flavor.

Steps:
- Place potatoes in a large pot; add water to cover. Bring to a boil and cook until easily pierced with a fork, about 15 minutes. Drain. Let cool until easily handled, about 15 minutes. Peel and dice. Transfer to a large bowl.
- Fill a saucepan 2/3 of the way with water and bring to a boil. Add cauliflower florets; cook until tender, 8 to 10 minutes. Drain in a colander and rinse with cold water to stop the cooking process, 1 to 2 minutes. Drain well. Blot with paper towels to remove excess moisture.
- Place potatoes, cauliflower, hard-boiled eggs, green onions, celery, and black pepper in a large bowl; toss to combine.
- Whisk eggs, stevia, and cornstarch together in a saucepan. Stir in evaporated milk, apple cider vinegar, white vinegar, and mustard. Cook over medium heat, stirring frequently, until dressing thickens, about 10 minutes. Remove from heat; stir in butter. Refrigerate until cool, about 30 minutes.
- Fold mayonnaise into dressing. Stir into potato mixture gently until evenly coated.

- Mix cauliflower, green onions, radishes, and sesame seeds.
- In a separate bowl, combine sour cream, mayo, and ranch dressing.
- Pour over cauliflower and mix until thoroughly combined.

- If you do not like your salads to be runny, buy two small heads of cauliflower or one really large one.

FULLY LOADED CAULIFLOWER SALAD
A lower in carb version of my favorite baked potato salad. Most people when I serve this can't tell right away that this is made with cauliflower. Even my cauliflower hating husband enjoys this salad!

- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. When cool, crumble into bacon bits.
- Preheat an oven to 400 degrees F (200 degrees C). Line a baking sheet with foil.
- Combine the cauliflower, olive oil, garlic, salt, and black pepper in large bowl. Spread the cauliflower on the foil-lined baking sheet, and roast in the preheated oven until the cauliflower is lightly browned, about 15 to 20 minutes. Cool.
- Place the cooled roasted cauliflower, sour cream, and mayonnaise in a large bowl; stir. Fold in the shredded Cheddar cheese, bacon bits, green onion, chives, pepper sauce, and paprika. Adjust salt and black pepper. Refrigerate for 1 to 2 hours before serving.

CAULIFLOWER SALAD
When I was pregnant with first DD,26 years ago, my favorite aunt made this salad almost every week for me because I craved it so much! I don't know where Aunt Grace got the recipe but it sure has been well used for many years! I still make it at least once a month! It will last for several days in the 'frig( if I don't totally devour it faster). The only hard part of the recipe is breaking the cauliflower into VERY small florets because the smaller you break them the better the salad turns out! Cook time is really time for salad to marinate.

- In a covered blender, at high speed, blend celery leaves and remaining ingredients, until celery leaves are just tiny,little flecks.

- Trim off the leaves of the cauliflower and cut away its core.
- Put the cauliflower in a saucepan with water to barely cover, milk and salt. Bring to a boil and simmer 15 minutes or until tender but not mushy. Do not overcook. Drain and let cool. Do not chill.
- Put the egg through a fine sieve into a mixing bowl. Add the mustard and vinegar. Gradually add the oil, beating briskly with a wire whisk. Add salt, pepper and parsley. Spoon the sauce over the cauliflower and serve.
