EASY BLACK BEAN SOUP

This soup is a favorite pantry meal for my family. Easy, easy, easy to make and nutritious. I got the recipe from the back of a soup can but have improvised this soup many times. Feel free to adjust seasonings as you like.

Easy Black Bean Soup image

Steps:

  • Saute onion in olive oil.
  • When onion becomes translucent, add cumin.
  • Cook 30 seconds, then add garlic and cook for another 30 to 60 seconds.
  • Add 1 can black beans and 2 cups vegetable broth.
  • Bring to a simmer, stirring occasionally.
  • Turn off heat.
  • Using a hand blender, blend the ingredients in the pot, or transfer to a blender.
  • Add the second can of beans to the pot along with blended ingredients and bring to a simmer.
  • Serve soup with bowls of red onion and cilantro for garnish.
  • I add a bit of cilantro to the pot, too.
  • Can be doubled or frozen.

2 cups chicken broth or 2 cups vegetable broth
salt and pepper
1 small red onion, chopped fine
1/4 cup cilantro, coarsely chopped or finely chopped (whatever you prefer)

Steps:

  • Before beginning, drain and rinse two of the cans of black beans and set aside.
  • Using a potato masher, mash up the remaining can of beans with the juice.
  • Add the salsa and cumin to the mashed beans and set aside.
  • In your pot, combine the broth, water and onion, and bring to a boil.
  • Simmer till onions are tender.
  • Add the rinsed and mashed beans and stir well.
  • Simmer at a low heat for half an hour or so.
  • Serve with a dollop of sour cream.

Steps:

  • In a large saucepan, fry the bacon over medium heat for 3 to 4 minutes. Then add the onions and cook until the bacon is cooked but not crisp and the onions are translucent, another couple of minutes. Do not drain the bacon grease because it gives the beans a good taste. Add the beans, peppers, tomatoes, garlic and 1 1/2 cups water, and cook for 10 to 15 minutes. Add some salt and pepper and the cilantro and remove from the heat.

CHEESY BLACK BEAN SOUP

A cheesy, creamy, black bean soup. The cheesy bread topper is the perfect foil for this. You can change the texture of the soup for your taste easily by holding back some whole beans (and extra bacon) to add in at the end or by blending for less time. Servings depend on whether you serve as a main course or as part of a Soup & Sandwich/Salad combo. Prep time includes cheese grating but you could do it while the soup simmers and save a few minutes overall - it was designed to be a weekday meal and that means fast in my house.

Cheesy Black Bean Soup image

Steps:

  • In a largish pot over medium heat render down the bacon until it's just crispy bits.
  • Add the carrot, celery, and shallot and sautee until the carrot and celery start to become tender.
  • Add the beef broth and cayenne pepper and bring to a simmer, simmer for 5 minutes.
  • Add the black beans and continue to simmer for an additional 5 minutes, until the beans are heated through.
  • Using a stick blender, (or your regular blender in batches), blend the soup until smooth.
  • With the soup back on the heat stir in the Asiago until it's melted.
  • Ladle the soup into individual crocks (or other broiler proof dishes) and top with a slice of the french bread. Sprinkle each round with grated Gouda. Broil on high for about 3 minutes until the cheese is melted and bubbly. Watch it carefully!

Barbecue gets along with any bean cooked with a little onion and garlic, including black beans. Cuban Black Beans with a touch of sherry are especially well suited for Cuban Fingers (page 176) with Ultimate Cheater Pork Loin (page 80). Serve the beans over rice or add some water or broth and turn them into a soup dressed with fresh parsley, chopped onion, chopped hard-cooked egg, and a dollop of yogurt or sour cream.

Steps:

  • RINSE and soak the beans according to the package directions.
  • HEAT the oil in a large skillet over medium-high heat. Add the onion and celery and cook until tender, about 10 minutes. Stir in the garlic and cook for an additional 2 minutes.
  • DRAIN the beans and combine them with the vegetables and 6 cups of water in a medium or large slow cooker (at least 4 quarts). Cook on high for 4 to 6 hours or on low for 8 to 10 hours, until the beans are tender. Stir occasionally, and add water as necessary.
  • STIR in the sherry and season with salt to taste.

  • Heat olive oil in a large stock-pot or dutch oven over medium-high heat until the oil begins to shimmer.
  • Add onions, celery, carrot, and bell pepper. Cook for 4-5 minutes, stirring occasionally, until vegetables begin to soften.
  • Add garlic, salt, and pepper, and continue to cook for an additional 10 minutes until vegetables are soft and the onions are translucent.
  • Add cumin, black beans, vegetable stock, and the bay leaf. Bring to a boil then reduce to a simmer.
  • Cover the pot and cook over low heat for 30 minutes until the beans are very tender.
