CHEESY ITALIAN RICOTTA & BEEF PIE
We love that this easy dinner recipe had so much flavor. It reminded us of an upside down pizza. The cheese layer seriously adds so much cheesiness to the recipe. Crescent dough, brushed with garlic butter and fresh Parmesan cheese, is an excellent topping. We were a little concerned when we opened the oven that we overcooked...

Steps:
- 1. Preheat oven to 375.
- 2. In a large skillet, add ground beef, chopped onion and 1 clove of garlic, finely chopped. Brown ground beef on medium heat. Drain grease. Return browned ground beef to large skillet.
- 3. Add jar of spaghetti sauce, stir well.
- 4. Simmer on low for 2-3 minutes.
- 5. Grease a 13x9 pan, add ground beef and spaghetti sauce mixture to bottom of pan. Spread evenly.
- 6. In a separate bowl, combine ricotta cheese, shredded mozzarella, and grated Parmesan. Mix well.
- 7. Spread evenly on top of ground beef mixture.
- 8. Sprinkle cheddar cheese on top.
- 9. Align evenly 1.5 - 2 cans of crescent rolls (depending on your preference) on top of cheese mixture. Crescent triangles will rise evenly to create a crust on top while baking.
- 10. In a small saucepan, melt butter and garlic. Saute on medium heat for 3-4 minutes.
- 11. Brush butter and garlic mixture on top of crescent rolls.
- 12. Sprinkle with 1/2 cup of freshly grated Parmesan cheese.
- 13. Bake uncovered in oven for 35 minutes at 375 degrees, until crust is golden brown.
- 14. Let stand for 10 minutes to cool. Serve and enjoy!
RICOTTA SAUSAGE TRIANGLES

- In a large bowl, combine the first 10 ingredients. In a large skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Stir into cheese mixture., Place 1 sheet of phyllo dough on a work surface with a short end facing you; spray with cooking spray. Top with a second sheet of phyllo; spray again with cooking spray. (Keep remaining phyllo covered with a damp towel to prevent it from drying out.) Cut layered sheets into three 14x3-in. strips., Place a rounded teaspoonful of filling on lower corner of each strip. Fold dough over filling, forming a triangle. Fold triangle up, then fold triangle over, forming another triangle. Continue folding, like a flag, until you come to the end of the strip., Spritz end of dough with spray and press onto triangle to seal. Turn triangle and spritz top with spray. Repeat with remaining phyllo and filling., Place triangles on baking sheets coated with cooking spray. Bake at 375° until golden brown, 15-20 minutes. Serve warm and, if desired, with marinara sauce. Freeze option: Freeze unbaked triangles in freezer containers, separating layers with waxed paper. To use, bake triangles as directed, increasing time as necessary until golden and heated through.

CHEESE FILLED TRIANGLES
The only tricky part of this recipe is working with phyllo, and once you get the hang of it, it's fun. Sometimes you get a bad batch of phyllo that rips and tears easily, so I always buy an extra just in case. I have frozen these before baking. Just add a few minutes to cooking time when you cook them in a frozen state. I have also doubled this recipe for large parties.

- Heat olive oil in a medium saucepan over medium heat. Slowly cook and stir onion until tender, about 5 minutes. Mix in spinach and salt. Stir in feta cheese, cottage cheese and egg. Cook and stir until thickened, 5 to 10 minutes. Reduce heat to simmer.
- Preheat oven to 400 degrees F (200 degrees C).
- Unroll phyllo dough sheets one at a time on a flat surface. Brush with unsalted butter. Cut into strips approximately 5 inches wide. Place 1 tablespoon of the onion, spinach and feta mixture at one end of each dough strip. Fold the end of the strip over the filling so that it forms a triangle. Continue folding the strip in triangles until a small, triangular stuffed pastry remains. Brush with unsalted butter. Repeat with remaining phyllo dough.
- Arrange stuffed triangles on a large baking sheet. Bake in the preheated oven 12 to 15 minutes, until golden brown. Serve warm.

- Line 13x9-inch pan with parchment paper, with ends of paper extending over sides; spray with cooking spray. Bring broth to simmer in medium saucepan. Gradually stir in polenta; cook 5 min. or until mixture thickens and pulls away from side of pan, stirring frequently. Stir in Parmesan; spoon into prepared pan. Smooth top. Cool to room temperature. Refrigerate 30 min. or until firm.
- Heat broiler. Remove polenta from pan. Cut into 8 pieces; cut each piece diagonally in half. Place on parchment paper-covered baking sheet; top with cheddar.
- Broil 3 to 5 min. or until Cheddar is melted and polenta is heated through. Sprinkle with paprika.

From time to time I like to treat myself with cheese and more cheese in pastry. If I was to choose something to take with me on a deserted island it would definitely be cheese. These little triangles are not too cheesy but slightly sweet and crunchy.

- In a bowl mix the cheddar, ricotta, egg and a pinch of salt & pepper then mix until everything is well combined.
- Cut the pastry in 10X10 cm squares. You can make them bigger or smaller it's totally up to you but do be mindful of the cooking time.
- Place a tbsp of the cheese mixture in the middle pf the pastry square then brush the edges with beaten egg yolk.
- Fold the pastry so that you get a triangle shape and seal the edges with a fork.
- Brush the pastry triangles with the remaining egg yolk and sprinkle with sesame seeds.
- Line a baking tray with parchment paper and place the triangles on it, about 2 cm apart.
- Bake them in a hot oven at 350F gas 4 for about 30 minutes or until golden brown. ENJOY!
