These fritters are made with cheese then fried in oil, so they are a perfect addition to your Hanukkah table. Serve them hot with jam on the side.

Steps:
- In a medium bowl, beat the cottage cheese and egg together. Stir in the half-and-half, flour, baking powder, salt, sugar and nutmeg. Mix until just combined.
- Fill a deep pot to the 2-inch mark with oil. Heat to 375 degrees F (190 degrees C). Drop batter by rounded tablespoons into the hot oil. Fry until golden brown on all sides, about 3 to 4 minutes. Drain on paper towels and sprinkle with confectioners' sugar. Serve hot!

Steps:
- In a large bowl add the ingredients.
- Mix well.
- In a large skillet, heat a half cup of oil (or until entire skillet is covered with a thin layer) over medium-high heat.
- Spoon 2 tablespoons of mixture to form each fritter into the hot oil.
- Flip after about a minute and a half or when you can see the edges beginning to brown. Repeat for other side.
- Serve with a dollop of sour cream and chives.
- Enjoy!

CHEESE FRITTERS
I learnt to make these at college, and have been making them ever since. They are perfect for drinks nibbles, or as part of a larger snack buffet. I use them for footie snacks with lots of dips-the only complaint I get is that I never make enough!! Servings are approximations, as it depends on the size you make them.

Steps:
- Bring the water and butter to a boil in a thick bottomed pan. Remove from heat.
- Add the flour, beating it in with a wooden spoon.
- Return to a gentle heat, and mix well, until the mixture starts to leave the sides of the pan. Remove from the heat and allow to cool slightly.
- Gradually add the eggs, beating well. Add the cheese and seasonings.
- Using a spoon, scoop walnut sized pieces of mixture and deep fry in hot fat (185 degrees), or use two spoons and 'quenelle' them into cigar shapes by transferring from one spoon to another.
- Allow to cook for approx 10 minutes. Drain and serve with an added sprinkling of parmesan.

Steps:
- Warm the milk in a skillet.
- Slowly mix in the flour.
- Add butter or margarine.
- Keep stirring on low flame until well combined.
- Remove from heat.
- Add the cheese, green chillies, beaten egg, mint leaves, red chilli powder and salt.
- Mix well and allow to cool.
- Divide the mixture into small marble sized equal balls.
- Heat oil in a wok.
- Deep-fry the prepared marble sized balls in the hot oil.
- Drain on clean paper kitchen napkins.
- Arrange on a serving platter.
- Serve with toothpicks stuck into each ball.
- This goes well with Heinz Tomato Ketchup or a chutney.

- In a bowl, combine all ingredients except the flour and oil. Mix well, then stir in the flour.
- Heat the oil in a large frying pan over a medium heat. Working in batches of two or three (the mixture should make six fritters), spoon large blobs into the pan and flatten with the back of the spoon to make thick discs. Turn when crisp and golden on the bottom. When both sides are cooked, remove from the pan and keep warm in a low oven while you fry the next batch.
- Serve hot, sprinkled with parmesan and herbs.

- Stir together tomatoes, zucchini, green onions, kosher salt, sugar, black pepper, oregano, and cayenne in a bowl to combine.
- Let sit for 15 minutes for the sugar and salt to draw out liquids from the vegetables.
- Stir the tomato mixture; add parsley, mint, and basil. Crumble in feta cheese. Add flour and baking powder; mix with a spoon until combined. Batter should be relatively loose but will hold its shape on a spoon. If too loose, add more flour; if too dry, add some water until desired consistency is reached.
- Wrap the bowl in plastic wrap and let chill in the refrigerator for at least 30 minutes.
- Heat 1 inch of vegetable oil in a frying pan over medium-high heat to 350 degrees F (175 degrees C), or use a deep fryer.
- Place heaping tablespoonfuls of batter in the hot oil; reduce heat to medium. Fry until golden brown and cooked through, 2 to 3 minutes per side. Flip once more and fry for an additional 30 seconds, if desired. Serve warm or at room temperature.

- Whisk the eggs for a minute or two, until slightly frothy. Add the flour and sour cream, and gently fold together. The mixture should be a 'dollop-able' consistency - you can add a little more flour if too runny, or a little more sour cream or a dash of milk if it's too thick.
- Heat a dash of oil in a frying pan over a medium heat, and add a spoonful of the batter. I prefer slightly smaller fritters, so I used around a tablespoon of the mixture each time. Cook for a few minutes each side, until golden brown. Set aside while you repeat with the remaining mixture (you can cook a few fritters at a time, just don't crowd the pan). You may need to add a little more oil to the pan occasionally.
