Steps:

  • Preheat oven to 425°; prick the crust all over with a fork.
  • Line it with tin foil and weight the bottom with a pile of dried beans, rice, or other weights that will sit flat on the surface.
  • Bake 12 minutes; remove from the oven and carefully remove the weight and foil; turn the oven to 325°.
  • In a bowl, combine the eggs, cheese, cream, and seasonings; beat until well blended.
  • Place the baked crust on a baking sheet; pour the egg mixture into the crust, right to the top.
  • Carefully transfer the baking sheet to the oven; bake 30-40 minutes, until the mixture is set but still moist; it should still jiggle just a little in the middle (cover pie crust edges with foil if getting too brown).
  • Cool on a rack; serve warm or at room temperature.

Steps:

  • Preheat the oven to 220C/fan 200C/gas 7. Grease an oven-proof dish. Roll out the pastry on a floured surface, and line the dish with the pastry.
  • Beat the eggs and milk together in a medium-sized bowl, and season to taste. Pour the mixture into the pastry.
  • Grate the cheese and add it to the mixture, being sure to spread the cheese evenly.
  • Cook on the middle shelf of the oven for 30 minutes or until the cheese on top is golden brown. Serve.

This is straight out of Joy of Cooking. My sister and I whipped this puppy up for a late-night holiday treat. We made an oil crust right in the pie pan which makes it simple. Don't be afraid of the nutmeg. it adds great flavor, but it isn't enough to make your quiche taste like a pumpkin pie. DELICIOUS!

Steps:

  • Preheat oven to 425 degree F.
  • Sprinkle the cheese over the bottom of the pie shell, then evenly distribute the onion, broccoli, and mushroom over the cheese layer. Mix the eggs and the spices together in a bowl. Add the milk and half-and-half and mix well. Pour over contents in the pie shell.

  • Roll the pastry out onto a lightly floured work surface until very thin. Cut out circles that are 1cm larger in diameter than the tartlet tins. Line the tins with the pastry circles (you may need to bake these in batches if you do not have enough tins) pressing into the edges and up the sides. Smoky chorizo & manchego quiche image

Steps:

  • Heat the oil in a medium frying pan over a high heat, and fry the chorizo for 4-5 mins until crisp. Transfer to a plate lined with kitchen paper using a slotted spoon, and set aside to cool. Set the pan with the fat aside, and leave to cool. For the pastry, put the flour, 1/2 tsp salt, the paprika, cayenne pepper, cooled chorizo fat and the butter in the bowl of a large food processor and blitz until the mixture looks like coarse breadcrumbs. Gradually pulse in 4 tbsp cold water until it comes together into a dough. Turn out onto a lightly floured surface, and knead gently until smooth. Wrap the dough and chill for at least 10 mins. Will keep chilled for up to three days.
  • Heat the oven to 200C/180C fan/gas 6. Roll the chilled pastry out on a floured work surface to the thickness of a 50p coin then lift it into a 23cm loose-bottomed tart tin, leaving an overhang. Prick the base all over with a fork, line with baking parchment, then fill with baking beans. Transfer to a baking sheet and bake for 15 mins. Remove the parchment and beans, then bake for 15-20 mins more until golden and crisp. Trim away the pastry that is overhanging using a serrated knife.
  • Meanwhile, whisk the eggs, crème fraîche and cream together, season, then stir in the cheese and cooled chorizo. Pour into the pastry case and bake for 25-30 mins until the filling is just set. Leave to cool in the tin, then remove from the tin and slice. Will keep in the fridge for up to three days.

Steps:

  • place flour into a bowl and stir in the salt, rub in the butter quickly until it resembles breadcrumbs, then using a metal knife stir in the egg yolk and water to form a dough. wrap in cling film and chill for 30-45minutes.
  • pre-heat oven to 200C/gas 6, roll out the pastry and line a lightly greased 23cm/9in loose bottomed quiche tin. trim the edges leaving a slight overlap and line the case with parchment/greaseproof paper and fill with baking beans, chill for 10minutes then bake blind for 12-15minutes.
  • Meanwhile, fry the bacon in a little oil until crisp, add the onions to the pan and fry gently until soft but not brown, about 8-10mins. Add the herbs and stir through, drain off the fat and set aside using a little kitchen paper to soak up any more excess fat.
  • remove pastry case from the oven and cool slightly for 5 mins, then remove the bsking beans and paper, pierce the base all over with a fork and brush with the dijon mustard. bake for a further 6 mins. Remove the case from the oven and turn the oven down to 180C/gas 4. When cool enough, trim the edges with a knife.
  • Beat the cream with the eggs and season with plently of pepper. Sprinkle the onions and bacon onto the pastry case, then the cheese and pour over the cream and egg mixture. Bake in the centre of the oven for 40 mins or until cooked through and brown.

Steps:

  • Heat oven to 400°F.
  • Prick bottom and side of pie crust with fork. Bake 8 min. or until lightly browned. Meanwhile, cook peppers in large nonstick skillet on medium heat 5 min. or until crisp-tender, stirring occasionally.
  • Reduce oven temperature to 375°F. Spread peppers onto bottom of pie crust; top with onions, cheese and bacon.
  • Whisk remaining ingredients until blended; pour over ingredients in pie crust. Place on rimmed baking sheet.
  • Bake 45 min. or until knife inserted in center comes out clean. Let stand 10 min. before cutting to serve.
