ROSEMARY PARMESAN SHORTBREAD

Rosemary Parmesan Shortbread image

Steps:

  • Put the flour, sugar, rosemary, salt, and Parmesan into the bowl of a food processor and pulse until combined. Add the butter and pulse just until a soft dough forms; the dough should hold together when squeezed with your hands. If not, add the water and pulse until combined.
  • Spread a large sheet of plastic wrap on a work surface and transfer the dough onto it. Using the plastic wrap as a guide, form the dough into a loose log along 1 edge of the long side of the sheet. Roll the dough log, twisting the plastic gathered at the ends in opposite directions until the log is tight and compact, about 2 1/2 inches in diameter. Chill in the refrigerator until firm, about 1 hour.
  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper or silicone baking mats. Slice the dough log into 1/3-inch thick slices and arrange on the lined sheets, about 1-inch apart. Bake until the edges are just beginning to brown, 12 to 14 minutes.
  • Cool the shortbread on the pan for 5 minutes then transfer to wire racks to cool completely. Store the shortbread in an airtight container at room temperature until ready to serve.

  • 1 In a bowl, beat butter until smooth. In a separate bowl, toss together cheese, flour, rosemary, mustard, salt and pepper. Stir flour mixture into butter mixture, mixing until the dough comes together. Shape the dough into a log about 9 inches long, wrap with plastic wrap and refrigerate for at least 2 hours*. *NOTE: I froze these for about an hour and sliced them very easily. 2 Preheat oven to 325F. Slice the log into 1/4-inch rounds and place rounds 2 inches apart on a parchment paper-lined baking sheet. Bake on the middle rack of oven until cookies are lightly golden around the edges, about 20 to 22 minutes. Cool completely.

1/2 cup unsalted butter, softened
1-1/4 cups aged white cheddar cheese, grated
3/4 cup all-purpose flour

pinch cayenne pepper (optional)

This basic, buttery shortbread practically begs that you customize it to suit your own tastes or pantry supplies. The dough, which comes together quickly in a food processor, is already enhanced with rosemary, but nuts, seeds, citrus zest, spices, vanilla or minced dried fruit - or a combination of some of these - all make fine additions. Scale it up, scale it down. Add more salt, or use less. As long as you maintain the butter-flour ratio (one stick of butter for every cup of flour), you are free to play around. But the shortbread is delicious all on its own: tender, rich, crumbly, irresistible.

Steps:

  • Heat oven to 325 degrees. In a food processor, pulse together flour, sugar, rosemary and salt. Add butter, and honey if desired, and pulse to fine crumbs. Pulse a few more times until some crumbs start to come together, but don't overprocess. Dough should not be smooth.
  • Press dough into an ungreased 8- or 9-inch-square baking pan or 9-inch pie pan. Prick dough all over with a fork. Bake until golden brown, 35 to 40 minutes for 9-inch pan, 45 to 50 minutes for 8-inch. Transfer to a wire rack to cool. Cut into squares, bars or wedges while still warm.

Wrap each in plastic wrap. Refrigerate for 4 hours or freeze for up to 1 month., Cut into 1/4-in. slices; place on greased baking sheets. Bake at 375° for 10-12 minutes or until golden brown. Add butter pieces and process by pulsing until the mixture resembles wet sand, about 20 seconds. Add 2 tablespoons of water and process until dough forms about 10 seconds(don't over-process). If the dough is still crumbly, add another tablespoon of water and pulse again just until dough forms.
  • Transfer dough to counter and divide in half. Roll each half into 10-12 inch logs, wrap in plastic wrap, and refrigerate until firm, at least 3 hours or up to 3 days.
  • Preheat oven to 350° and Line two baking sheet pans with parchment paper. Unwrap logs and slice into ¼-inch-thick coins and place prepared pan, spaced 1/2 inch apart. Sprinkle coins with kosher salt if desired (or you can sprinkle with salt as soon as they come out of the oven- which is the method I prefer)
  • Bake 22-28 minutes, until lightly golden around the edges. Remove from oven, sprinkle with salt if desired and let the crackers cool on the pan for a few minutes before transferring to a cooling rack to cool completely.
