Steps:

  • In a large bowl, beat cream cheese and milk until smooth. Add the feta, mozzarella, onion and cayenne ; mix well. Cover and refrigerate for 2 hours or until firm., On a serving platter, form cheese mixture into a pinecone shape. Beginning at the narrow end, arrange almonds in overlapping rows. Add cinnamon stick and dill for the stem and pine needles. Serve with breadsticks, crackers and/or vegetables.

  • Stir cream cheese, goat cheese, parsley, tarragon, thyme, garlic, cayenne pepper, salt, and black pepper together in a bowl until smooth and well-mixed.
  • Turn cheese mixture out onto a serving platter and form into a tapered oval shape to resemble a pine cone.
  • Starting at the tapered end, press almonds into the cheese cone so that the tip of the almond is facing out and down, and cheese cone is completely covered with almonds and resembles a pine cone. Place rosemary sprigs at the top to resemble pine needles.

Steps:

  • In a 350 degree oven toast the almonds in a single layer on a cookie sheet.
  • Meanwhile, combine the room temperature cheeses. Mound the cheese mixture onto the serving platter and shape into a pinecone shape with a spreading knife. Beginning at the bottom, pointed end of the pinecone begin placing the toasted almonds in rows, overlapping them slightly as you build the rows. The almonds should have the tapered end pointing downward. When it is done it will look like a huge pinecone. Decorate with silk leaves or a bow. Serve with an assortment of crackers and festive spreading knives.

Angel of Death Cheese Spread image

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Chop 1/2 inch off of the top of the garlic head, just enough to expose the cloves. Drizzle with olive oil and wrap in aluminum foil.
  • Roast in the preheated oven until golden brown, 30 to 40 minutes. Let cool enough to handle, about 5 minutes.
  • Measure out 2 tablespoons of roasted garlic and press with the side of a knife to smooth each clove into a paste.
  • Beat ricotta cheese with an electric mixer in a medium bowl until soft. Add Gorgonzola and mix until smooth. Beat in cream until thickened, then add salt and garlic paste and mix until combined.
  • Lay the sage leaves, bottom side-up, onto the center of the cheese cloth in a pattern. Carefully spoon the cheese mixture over the leaves, then gather and tie off the ends of the cheesecloth, forming the cheese into a shape.
  • Move to a strainer over a dish and allow to drain for at least 24 hours in the refrigerator.
  • Carefully unmold the cheese on the serving plate, with the sage leaves facing up.
  • Lightly toast the chopped walnuts in a skillet over low heat until golden, 3 to 5 minutes. Remove from heat and let cool, about 5 minutes. Gently press the walnuts onto the cheese spread. Serve at room temperature.
