- Heat the oven to 220C/200C fan/gas 7. Tip the leeks into a steamer basket and steam for 6-8 mins until bright green and just becoming tender.
- Meanwhile, heat the butter and flour together in a saucepan, stirring until you have a thick paste. Add the milk, a splash at a time, stirring continuously until all the milk has been added. Cook for 2-3 mins more until the sauce has thickened enough to coat the back of a spoon. Stir in most of the Yeo valley Organic mature cheddar, the mustard and some seasoning.
- Fold the steamed leeks into the cheese sauce, then tip everything into an ovenproof baking dish. Scatter over the breadcrumbs, thyme and remaining cheese, then bake for 20 mins until golden, crisp on top and bubbling at the edges. Leave to stand for 5 mins before serving.

- In a large skillet, cook bacon over medium heat until crisp; add ham and onion. Cook and stir until onion is tender; drain. , In a greased 13x9-in. baking dish, layer half the bread cubes, potatoes and cheese. Top with all of the bacon mixture. Repeat layers of bread, potatoes and cheese. , In a large bowl, beat the eggs; add the milk, Worcestershire sauce, mustard, salt and pepper. Pour over all. - In a 13-in. x 9-in. x 2-in. baking dish coated with nonstick cooking spray, layer half of the bread cubes, half of the leeks and half of the red pepper, 3/4 cup Swiss cheese and 3/4 cup cheddar cheese. Repeat layers once.
- In a bowl, whisk the eggs, milk, beer, garlic, salt and pepper. Pour over cheese. Cover with plastic wrap. Weigh strata down with a slightly smaller baking dish. Refrigerate for at least 2 hours or overnight.
- Remove strata from the refrigerator 30 minutes before baking. Bake, uncovered, at 350 degrees F for 40-45 minutes or until center is set and a thermometer reads 160 degrees F. Let stand for 5-10 minutes before cutting.

- Trim crusts from 4 slices of bread.
- Cut slices into 2 triangles each (total of 8).
- Arrange trimmings and uncut bread slices to cover the bottom of a 9x9x2 pan.
- Place cheese slices over the bread.
- Arrange the bread triangles in 2 rows over the cheese - overlap the points slightly on the bases.
- Beat the eggs and blend with milk, onions, salt, mustard and pepper.
- Pour over bread and cheese layers.
- Let stand 1 hour at room temperature or for several hours in refridgerator.
- Bake uncovered at 325 for approximately 1 hour - until knife at center comes out clean.
- Let stand 5 minutes before serving.

- In a large bowl, mix together the milk, eggs, salt, and pepper. In a medium-size bowl, toss the cheeses together.
- Place 2 pieces of bread on the bottom of the prepared pan. The bread should cover most of the bottom. If it doesn’t not, add another piece of bread or part of one to fill in the gap. Sprinkle with one third of the cheese. Place the second layer of bread over the cheese and again, fill in any large gaps with extra bread. Carefully pour the milk and egg mixture over the entire casserole. It will seem lie a lot, but the bread will soak it up as it cooks. Top with the remaining cheese. (At this point you can cover and refrigerate the strata for up to 24 hours before baking.)
- Bake for 45 to 50 minutes, or until the casserole is very puffy and the cheese is golden brown on the top. Let sit for about 10 minutes before cutting and serving.

- Melt the butter in a large sauté pan over medium heat. Add the onion and cook, stirring frequently, until soft and translucent, about 5 minutes. Add the garlic and drained spinach and cook 2 minutes more. Set aside.
