CHEESY VEGETABLE CASSEROLE
I am happy to share this 50-year-old Cheesy Vegetable Casserole recipe. It came from my mother-in-law, who taught me how to cook. It is one of my family's favorite dishes, yielding enough for a group or you can cut it in half to serve a few. -Irene Redick, Trenton, Ontario

- Preheat oven to 375°. In a large skillet, saute onion in 2 tablespoons butter until tender. Add the mushrooms, red pepper, salt and pepper; cook and stir until vegetables are tender, 5 minutes. Add garlic; cook 1 minute longer., In a greased 2-qt. baking dish, layer half of the corn, mushroom mixture, cheese and brown sugar; repeat layers. , Melt the remaining butter; toss with bread crumbs and parsley. Sprinkle over casserole. , Bake, uncovered, until golden brown, 25-30 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- In a large bowl combine whole corn, cream-style corn, sour cream, egg, dry corn bread mix, onion and 3/4 cup of Cheddar cheese. Mix well and pour into prepared dish.
- Bake in preheated oven for 25 minutes.
- Remove from oven and sprinkle with remaining cheese. Bake for another 20 minutes.

- Heat the oven to 350°F In a small frying pan over medium-low heat, melt the butter and warm the oil. Add the onions and sauté until soft, stirring occasionally so they don't brown, about 10 minutes. Remove the pan from heat and allow the mixture to cool until lukewarm.
- In a large bowl, mix the cornmeal, salt, sugar, and baking powder, and set the mixture aside.
- In a blender or food processor, puree the corn with the milk. Blend in the egg yolks and ten combine this mixture, along with the cheese and onions, with the dry ingredients.
- In a separate bowl, beat the egg whites until stiff but not dry. Carefully fold the egg whites into the corn mixture, and then pour it into a 7- by 11-inch buttered and floured baking dish.
- Sprinkle the casserole with the Parmesan cheese and bake it in the middle of the oven until golden brown, about 45 minutes. Allow it to cool for a few minutes before slicing and serving. Serves 6 as a main dish, 12 as a side dish.
