Steps:

  • In a sauté pan heat oil olive and sauté all ingredients until almost tender.
  • Place on large platter and serve under Jerk Chicken. (Can be served on the side also.).

2 cups sliced green peppers
2 cups sliced onions
1/2 cup olive oil
1 teaspoon chopped scotch bonnet pepper (or Jalapenos)
1 teaspoon thyme

Steps:

  • Mix together the bell peppers, cabbage, onions, tomatoes, jalapeno and salt in a large bowl. Cover and refrigerate for 8 hours or overnight. Drain the liquid from the mixture.
  • In a large pot over medium-high heat, toast the mustard seeds and celery seeds until they begin to pop, about 3 minutes. Add the sugar, vinegar and 1 cup water, and heat until the sugar is dissolved. Add the vegetable mixture and the crushed red pepper, mustard powder, turmeric, ginger and cinnamon, and bring to a boil. Reduce the heat and simmer, stirring occasionally, until thick, about 1 hour.
  • Allow to cool. Serve over beans and cornbread or as a relish for pulled pork or hot dogs.

12 cups diced bell peppers, mixed colors
8 cups diced cabbage
8 cups diced yellow onions
6 cups diced green tomatoes
1 jalapeno, cut into small dice
1/4 cup kosher salt
1 tablespoon mustard seeds
2 teaspoons celery seeds
3 cups sugar
2 cups apple cider vinegar
2 teaspoons crushed red pepper
2 teaspoons mustard powder
2 teaspoons ground turmeric
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
Serving suggestions: beans and cornbread, pulled pork or hot dogs

CHICKEN CHOW MEIN CASSEROLE

I got this recipe from a co-worker. It's one of her daughter's favorite meals. We liked the combination of chow mein noodles and cashews. It's a good week night dinner or a way to use up leftover chicken. I have also started adding a can of sliced water chestnuts.

Steps:

  • Saute onion and celery in butter.
  • Add soup, broth, soy sauce, hot pepper sauce and pepper. Stir in chicken and simmer 5 minutes.
  • Pour into a 1 qt casserole dish and top with chow mein noodles and cashews.
  • Bake at 350 for 20 minutes.

2 cups diced cooked chicken
1/4 cup chopped onion
1 cup finely slivered celery
1 tablespoon butter
1 (10 3/4 ounce) can cream of mushroom soup
1/3 cup chicken broth
1 tablespoon soy sauce
3 drops hot pepper sauce

1/3 cup cashews

Steps:

  • Combine all ingredients in Food processor and mix thoroughly.
  • Rub the chicken with oil then sprinkle with salt & pepper.
  • Next, generously coat chicken with Jerk Spice and grill until done (approx. 45 minutes to an hour).
  • Serve over Cayman Style Chow-Chow.

What's in a name...=) This recipe is an old favorite from my Mom. She called it Chicken Chop Suey and served it with Chow Mein Noodles. I don't know the difference...hence the name. Either way, I like it!

Chicken Chow Mein or is It Chicken Chop Suey?? image

Steps:

  • Pour oil into a preheat pan or wok.
  • Add onions and celery.
  • Cook until tender.
  • Stir in chopped cabbage and scallions and cook for one minute.
  • Remove vegetables from heat and set them aside.
  • In a large sauce pan under medium heat, simmer chicken in water/broth until thoroughly cooked.
  • Remove chicken from broth and set on a plate to cool.
  • When cool enough to handle, remove chicken from bone and chop into 1 1/2 inch pieces.
  • Add cooked vegetables and chicken to broth.
  • Add (drained) bean sprouts and water chestnuts to broth.
  • Sauce: Add all ingredients to a small bowl and whisk until smooth.
  • Add to chicken/vegetables.
  • Cook, stirring constantly over med/low heat until slightly thickened.
  • Serve over rice.
  • (Chop Suey?).
  • Or serve plain with crunchy Chinese noodles on the side.
  • (Chow Mein?).
