DRIED CHERRY AND ALMOND COOKIES WITH VANILLA ICING

- For the Cookies:
- In a large bowl, with an electric mixer, beat the butter, sugar, vanilla extract, almond extract, cinnamon, and salt until light and fluffy, about 2 minutes, then beat in the egg. Add the flour and beat on the lowest speed until just blended. Using a wooden spoon, stir in the dried cherries and almonds.
- Transfer the dough to a sheet of plastic wrap and shape it into a log, about 12-inches long and 1 1/2-inches in diameter. Wrap the dough in the plastic wrap and refrigerate for at least 2 hours. (Dough can be made up to 3 days in advance).
- Arrange an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Line 2 heavy baking sheets with parchment paper.
- Cut the log crosswise into 1/2-inch thick slices. Transfer the dough slices to the prepared baking sheets, spacing them about 1-inch apart. Bake until the cookies are golden around the edges and puffed, about 15 minutes. Transfer the cookies to a wire rack to cool completely before icing, about 30 minutes.
- For the Icing:
- Put the powdered sugar in a medium bowl. Gradually whisk in the vanilla extract and water, adding more water, 1 teaspoon at a time, until the mixture becomes a drizzling consistency. (Makes about 2/3 cups icing, enough to ice both variations.)
- Put the cooled cookies on a wire rack set over a baking sheet. Using a spoon or a fork, drizzle the cookies with the icing, allowing any excess icing to drip onto the baking sheet. Allow the icing to set before serving, about 1 hour.
- Cook's Note: To toast the almonds, arrange them in a single layer on a baking sheet. Bake in a preheated 350 degree F oven for 6 to 8 minutes until lightly toasted. Cool completely before using.
- Cook's Note Alternative:
- Replace the dried cherries with 1/2 cup coarsely chopped dried apricots and add 2 tablespoons of toasted pine nuts. Also, use 1 teaspoon vanilla extract and omit the almond extract.
CHERRY NO-BAKE COOKIES

- Preheat oven to 350 degrees. Line baking sheets with parchment paper;set aside. In a medium bowl, whisk the flour, cinnamon, salt, baking soda and baking powder; set aside.
- In the bowl of an electric mixer fitted with a paddle attachment, or using a hand mixer, beat the butter and sugars until light and fluffy, 1 to 2 minutes. Add the eggs and vanilla, and beat to incorporate. Add flour mixture to butter mixture, beating on low speed to combine. Stir in the oats and dried cherries.

- Cream butter and sifted icing sugar in a medium/large bowl.
- Add vanilla and cream it in.
- Sift dry ingredients (salt, flour, baking powder) in a separate bowl, then stir them in to the butter mixture.

- Roll teaspoons of dough into balls and place on lightly greased cookie sheet.
- Press into cookie shapes with floured fork.

CHERRY CARDAMOM COOKIES
These are a very soft delicious cookie. I made 8 dz for a cookie exchange at Christmas last year and they were a hit. These have to be one of the family's favourite. The first batch was gone in no time. The cream cheese adds a nice flavour to this cookie. If you like cherries you can add more by pressing 3 or 4 dried cherries into the tops of cookies before baking.

- Heat oven to 350 F.
- Toss chopped cherries and 2 Tbsp flour: set aside.
- Beat butter, sugar and cream cheese in large bowl with electric mixer on medium speed until fluffy.
- Beat in egg, buttermilk and vanilla.
- Beat in 2 1/3 cups flour, the cardamom, baking powder and baking soda on low speed just until flour is moistened.
- Stir in cherries (Dough may be streaked with pink).

- In bowl, beat butter with sugar until fluffy; beat in egg and vanilla.
- Then add flour and salt; stir until blended.
- Stir in cherries and walnuts.
- Divide dough into thirds; shape each into 10" (25 cm) long log.
- Wrap and chill until firm, at least 3 hours.
- Cut logs into 1/8th" or 3 mm thick rounds and place about 1 inch (2.5 cm) apart, on parchment lined baking sheets.
- Bake in top and bottom thirds of 325 deg F oven, rotating and switching pans halfway through, just until edges begin to colour, 8-10 minutes.
- These cookies brown even faster than shortbreads, so keep a close eye on them! I start checking early, and they're usually done around the 8 minute mark.
- Let cool on pan for 5 minutes, then transfer to wire rack and let cool completely before storing. Store layered with waxed paper in airtight container for up to 2 weeks, or freeze for up to one month.
- Makes about 12 dozen cookies (less, of course, if you cut them a little thicker).
- These are really delicious cookies, well worth the time it takes to make them!
- Hint: If you want to use red and green cherries do not mix the cherries in same batch, they look better if made separately!
- Note: chill time of 3 hours is not included in prep time.

- Preheat the oven to 375 degrees F (190 degrees C). Line a cookie sheet with parchment paper.
