- Cut steaks in 1 inch cubes.
- Mix egg and milk.
- Alternate pieces of veal and pork on 6 skewers.
- Dip in egg mix then crumbs.
- Brown in hot oil.
- Put in baking pan.
- Add 1 inch water.
- Cover and bake at 350* for 40 minutes.

Steps:
- Heat 1 inch oil to 350 degrees F (175 degrees C) in a large skillet or saucepan.
- Stir together the flour, garlic salt, and pepper in a bowl. Dip the chicken pieces individually into the beaten eggs before pressing into the flour mixture to coat; shake off the excess flour. Place the coated chicken pieces onto a plate until all the chicken has been coated.
- Cook the chicken in batches in the hot oil until golden brown and no longer pink in the center.

The secret to this simple grilled chicken is a very powerful marinade and 'roasting' it slowly over semi-indirect heat on the grill.

- Whisk garlic, oregano, red pepper flakes, black pepper, lemon juice, olive oil, and vinegar together in a large bowl.
- Make 2 slashes on the skin side down to the bone in the thigh section and 1 in the leg section of each leg quarter. This will help infuse pieces with marinade and allow faster cooking on the grill. Season both sides of chicken generously with kosher salt. Transfer to bowl with marinade and thoroughly coat all sides. Cover and marinate in refrigerator 4 to 12 hours.
- Transfer chicken to paper-towel-lined sheet pan to drain slightly.
- Place leg quarters on grill skin side down over semi-direct heat (avoid intense direct heat so chicken cooks evenly and skin doesn't burn). Cook 6 or 7 minutes. Turn chicken and cook another 6 to 7 minutes. Continue cooking and turning until internal temperature reaches 165 degrees F (74 degrees C), 8 to 10 more minutes. Serve with lemon wedges.

SZECHUAN CHICKEN
Why go out for Chinese food when it is this easy? Serve with rice or Asian noodles. To slice the chicken thin, freeze for 20 minutes or so first or if you are using chicken from the freezer, slice before it is completely thawed. It isn't as hot as you would expect from "Szechuan"--if you want it spicy hot--add more crushed red chilies.

Steps:
- With knife held in slanting position, almost parallel to cutting surface, cut each chicken breast half crosswise into 1/2-inch thick slices.
- In medium bowl, combine soy sauce, sherry, cornstarch, ginger, sugar, and crushed red pepper; add chicken, tossing to coat.
- In wok or large non-stick skillet, heat 1 tablespoon oil over medium-high heat until very hot.
- Add green onions and red and green peppers and cook, stirring frequently, until vegetables are tender-crisp, 2 to 3 minutes.
- With slotted spoon transfer vegetables to bowl.
- Increase heat to high and add remaining 1 tablespoon oil to skillet; heat until very hot.
- Add chicken mixture and stir-fry until chicken looses its pink color throughout, 2 to 3 minutes. (I suggest cutting one of the larger pieces to make sure it is cooked through.).
- Return vegetables to pan; heat through.
- To serve, transfer chicken and vegetables to warm platter and sprinkle with peanuts.

- Fodder. Fodder is nothing more than soaking and sprouting seeds. It is so easy yet so cost-effective. You can sprout many different kinds of seeds, but my personal favorite is wheat.

- Garden Leftovers. When gardening, you often have vegetables or fruits that go bad before they get picked or are just not what you would like to eat or can.
- Their Own Egg Shells. Your chickens can give you eggs but don’t waste their eggshells. Grind them up and feed them back to them! Chickens require calcium to produce eggs with hard shells.
- Sunflowers. Chickens love sunflowers and their seeds. I never knew this until I experimentally grew sunflowers next to the chicken coop last year. My sunflowers grew amazingly well because of all of the natural fertilizer and my chickens had fun trying to jump and eat the sunflowers as they drooped over from their size.
- Fermented Grains. Fermenting grains is the first step to growing fodder. However, if you don’t want to create your own fodder system, you don’t have to.
- Mealworms. Mealworms are another food that can be grown right in your living room and no one would even know it. You purchase mealworms by the poundage from local or online retailers.
