BACON-WRAPPED CHICKEN IN THE OVEN
Chicken wrapped in bacon... Goes well with corn, probably other vegetables or bread, too.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Mix brown sugar, paprika, garlic powder, pepper, salt, and onion powder together in a small bowl. Rub 1/2 of the spice mix over chicken breasts.
- Wrap each breast with 2 to 4 slices of bacon, depending on size. Place in a baking dish and sprinkle remaining spice mix over top.
- Bake in the preheated oven until bacon is crispy and chicken is no longer pink in the center and the juices run clear, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Serve topped with parsley.

CHICKEN BACON BAKE
I made this up one day after my family went wild over the bacon wrapped cocktail weenies. I wanted something a little more figure friendly and so in waltzed the chicken. This WILL make your baking dish ugly, but it soaks away and I promise it is worth it.

- Preheat oven to 375 degrees Fahrenheit.
- Spray a 9x9 baking dish with cooking oil.
- Place two halves of bacon on each piece of chicken.
- Sprinkle brown sugar over the top.
- Cover and bake for 35-45 minutes until juices run clear.
- Remove lid and allow to brown for an additional 5-7 minutes.
- Serve.

CHICKEN BAKE
Inspired by Costco's famous chicken bake, we came up with a hand-held version that's easy to make at home. The cheesy bacon-filled pockets taste great hot from the oven, but can also be made in advance and reheated wrapped in foil in a 400 degrees F-oven for 8 to 10 minutes.

- Preheat the oven to 375 degrees F and line a baking sheet with parchment. Combine the mozzarella, provolone and Parmesan in a large bowl and toss to combine. Transfer 1/2 cup of the cheese mixture to a small bowl and reserve.
- Add the chicken, bacon and chives to the large bowl with the cheese. Drizzle with the Caesar dressing and season with several grinds of black pepper. Toss until everything is combined and well coated.
- Divide the pizza dough into 4 equal pieces and rub lightly with olive oil. Roll one piece into a 7-by-9-inch rectangle. With one of the long sides closest to you, arrange a quarter of the filling in a log across the center of the rectangle, leaving an inch of space at each side edge. Fold in the sides, then fold the bottom piece of dough over the filling and roll up to enclose it, trimming away any excess dough. Pinch the seams together to seal well. Place the roll seam-side down on the prepared baking sheet. Repeat with the remaining dough and filling, leaving about 2 inches between each on the baking sheet.
- Brush the rolls all over with the melted butter and sprinkle with the reserved cheese mixture. Bake until the rolls are golden and the cheese topping is crusty and browned, 25 to 30 minutes. Let cool 5 minutes before serving.
CHICKEN BACON MUSHROOM BAKE
This was a combination of two recipes I thought sounded good on their own but would be better with my own additions. The result was fabulous for a Low Carb Dieter with Type II Diabetes. Prep time did not include slicing mushrooms or shredding cheese as I cannot stand for any length of time. Use all the cheats you can and make any changes to your taste you wish to.

Steps:
- Preheat oven to 350 degrees F.
- In 12-inch cast iron skillet melt 1 tablespoon each butter and olive oil over medium high heat.
- Season chicken with seasoning salt and pepper to taste. Add chicken to skillet and cook for 6-8 minutes till golden (chicken will finish cooking in the oven). Remove to plate and set aside.
- To the same skillet, add the remaining 1 tablespoon each butter and olive oil. Add mushrooms. Cook till tender. This took me about 8-10 minutes. Remove to plate and set aside.
- To the skillet add the fresh spinach, garlic and the 1/2 cup chicken broth. Cook spinach down, season lightly.
- In medium sized mixing bowl using wooden spoon or mixer, mix together cream cheese, parmesan cheese, mozzarella cheese, sour cream, mayonnaise, dried onion flakes.
- Return chicken and mushrooms to the skillet with spinach. Stirring well to mix the ingredients together. Stir in half the crumbled or chopped bacon pieces. Stir in the cheese mixture. Top with remaining bacon and additional tablespoon of parmesan cheese.
- Bake for 30 minutes until golden and bubbling.

- Boil salty water and cook pasta for what it readsbon the packet and pre-heat your oven to 180 degrees
- Fry the diced bacon until crispy, while it's cooking add the onion, mushroom, garlic, diced chicken, salt and pepper, until the chicken is cooked.
- Add the stock into the chicken, bacon mix allow to boil and then bring to a simmer until the liquid goes down to a half.
- Once the liquid is at a half, add the coconut milk and allow it to slightly thicken to the constantcy of single cream. Add the pasta, spinach and cheese, mix and transfer to a casserole or baking dish for 35-40 minutes or until the cheese has melted and the pasta has absorbed most of the liquid
