- Pound chicken breast halves until evenly thin. Dredge chicken with flour. In a large skillet, heat 2 tablespoons of butter over medium heat. Cook chicken in butter for about 4 to 6 minutes on each side, until tender and cooked through. Remove chicken to a shallow baking dish; sprinkle lightly with salt and pepper.
- Add 1 tablespoon butter to skillet and sauté mushrooms until tender. Arrange mushroom slices on top of each piece of chicken; cover with a slice of cheese. Place remaining mushrooms around chicken. Place chicken breasts under a hot broiler until cheese is melted. Serve immediately with hot buttered pasta or rice.
- Chicken with mozzarella cheese serves 4.

- Preheat oven to 350 degrees F (175 degrees C).
- Place chicken breasts between 2 sheets of wax paper. Pound each to 1/4 inch thickness. Spread butter/margarine over the inside, then add salt and pepper to taste.
- Place slice of cheese on breast, roll and close with toothpicks. Repeat with each breast. Dip rolled breasts in flour, then egg, then breadcrumbs. Place coated breasts in a lightly greased 9x13 inch baking dish.
- To Make Sauce: In a saucepan, melt 1/4 cup butter and add garlic. Add wine and simmer all together. Pour sauce over chicken and bake in the preheated oven for 30 to 45 minutes.

- Pound the chicken breasts slightly with a meat mallet.
- In a medium bowl combine the mozzarella cheese with 2 cups plus 2 tablespoons flour, parsley flakes, 1/3 cup Parmesan cheese and dry salad dressing mix; blend well.
- In a shallow bowl whisk milk with eggs until well combined.
- Place the remaining 1 cup flour in another shallow bowl.
- Coat each breast first in flour, shaking off excess, then dip into milk/egg mixture, then roll into cheese mixture coating evenly and pressing into chicken.
- Heat about 1/4-inch of oil in a large skillet over medium heat.
- Add in the chicken breasts and cook for 5 to 6 minutes on each side (or until cooked through.
- Place on a large serving platter; cover loosley with foil.

- Whisk together the flour, 1 1/2 teaspoons of salt, 1 teaspoon of black pepper, and cayenne pepper in a bowl. In a separate shallow bowl, beat the egg. Place the panko crumbs into a third bowl.

- Put chicken in a ziptop bag and add dressing.
- Marinate in refrigerator 2-6 hours, turning bag occasionally to coat.
- In a medium saucepan, bring broth to a boil.
- Add uncooked rice.
- Return to boil; reduce heat.
- Cover and simmer 40 minutes.
- Stir broccoli and scallions into rice.
- Cover and simmer about 5 minutes or until rice is tender and most of the liquid is absorbed.
- Meanwhile, drain chicken, discarding marinade.
- In a nonstick ovenproof skillet, heat oil over medium heat.
