Steps:
- Make sauce by combining green onions, mayonnaise, lemon juice, garlic cloves and tarragon. Set aside.
- Brush one sheet of phyllo with butter.
- Place one chicken breast in one corner.
- Spoon on the sauce.
- Top with slice of cheese.
- Roll over the phyllo sheet placing the fold inside.
- Brush with melted butter.
- Sprinkle with parmesan cheese.
- Bake for 1 hour in a preheated 350°F oven.
- Tip: Notes Remove phyllo from freezer night before. When ready to prepare, take out 6 sheets and return package of phyllo to freezer. Place you phyllo between damp sheets of paper towels. Cover with tea towel to keep them damp, otherwise they will dry up and become brittle.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- In a skillet, melt 2 or 3 tablespoons of the butter; saute the onion until golden. Remove onion and set aside.
- Melt 2 or 3 tablespoons butter in the same skillet; saute the mushrooms until all juices are absorbed.
- Add the onions, parsley and garlic and saute 1 minute.
- Stir in the flour and blend well.
- Add the vermouth or dry white wine.
- Stir over medium heat until thickened.
- Season with salt and pepper to taste.
- Remove mushroom mixture from skillet and set aside.
- In same skillet melt remaining butter with olive oil and saute chicken until lightly browned, about 1 minute per side.
- Remove from heat.
- Brush one sheet of phyllo dough with melted butter and sprinkle with bread crumbs.
- Place a second sheet of phyllo over the first; butter and sprinkle with bread crumbs.
- Place a chicken breast in the lower half of the phyllo.
- Put 1/4 of the mushroom mixture and 1/4 of the feta over the chicken.
- Fold up the sides of the phyllo over the chicken, envelope style.
- Repeat with remaining chicken breasts.
- Place on a baking sheet, seam side down, and brush with butter.
- Bake for 35 minutes, or until browned.
- NOTES :
- Recipe may be prepared in advance up to the point the chicken is wrapped in phyllo then frozen.
- To serve, bake frozen at 350 degrees Fahrenheit for 50 minutes.

- Preheat oven to 350f degrees
- Heat 1 tablespoon butter in a nonstick frypan, add shallots, red pepper, ginger, basil, mushroom, salt and pepper, saute for 5 minutes; set aside to cool
- Combine in a bowl, the ground chicken, bread crumbs, lemon zest and juice, parsley and egg
- Add the cooled mixture from the frypan; stir to mix thouroughly
- Refrigerate until ready to use
- Melt 1/4 cup butter
- Brush some of the melted butter on mini muffin tin, set aside
- Prepare 8 phyllo sheets to make crust for tarts
- Keep the phyllo sheets covered with a damp teatowel so that they don't dry out
- Brush butter on one sheet of pastry, lay a second sheet on top and butter it; continue to top each of 4 sheets with butter
- Cut the 4 piled sheets into 12 equel squares
- Fit the 12 squares into the mimi muffin tin to make tarts
- Fill each tart with 1 tablespoon of chicken mix; top with shredded cheese
- Bake in preheated 350f degree oven for 30 minutes or until browned and bubbling and the cheese is melted

- PREPARE THE COMPONENTS:
- Dredge chicken breasts in seasoned flour & brown in 2 T Olive Oil over med-high heat, 'til nicely browned, but not cooked through - Set aside
- Carmelize onions by sauteeing over low heat in 2 T olive oil, stirring occassionally, until soft, brown, and becoming sticky - Set Aside
- Saute chopped mushrooms in 2 T Olive Oil until soft; add Basil, Tarragon, Salt & Pepper to taste - Set aside
- ASSEMBLE THE PACKAGES:

- Combine dried porcini and 1 cup hot water in small bowl; let stand until porcini are soft, about 20 minutes. Drain porcini, reserving liquid.
- Melt 3 tablespoons butter in heavy large pot over medium-high heat. Add fresh mushrooms and garlic; sauté until mushrooms are browned, about 8 minutes. Add porcini, porcini soaking liquid (leaving any sediment behind), broth, wine, prosciutto, lemon peel, thyme, 1 teaspoon salt, and 1/2 teaspoon pepper. Reduce heat to medium-low; simmer uncovered 20 minutes to blend flavors. Whisk cornstarch mixture to combine and add to skillet; stir until mixture thickens slightly, about 1 1/2 minutes. Season sauce to taste with more salt and pepper, if desired. (Can be prepared 1 day ahead. Cool slightly, then cover and refrigerate.)
- Preheat oven to 425°F. Melt 6 tablespoons butter in small saucepan; remove from heat. Place 1 phyllo sheet on work surface (cover remainder with sheet of plastic wrap, then damp towel). Brush phyllo sheet with some of melted butter. Using both hands, gently scrunch buttered phyllo sheet into loose ball, about 2 1/2 to 3 inches in diameter; set on work surface. Repeat with remaining phyllo sheets and melted butter.

CHICKEN POTPIE WITH PHYLLO CLUSTERS
Give chicken potpie the spring treatment. This light, bright recipe is like shedding winter layers. The fancy-looking poufs are just sheets of phyllo dough brushed with butter and scrunched into crackly balls. When baked, they become an extra-crunchy topping for the tarragon-scented filling of shredded chicken, artichokes, and leeks.

- Place chicken in a medium Dutch oven or large saucepan, skin-sides down. Cover with broth and 2 cups water; add 1 teaspoon salt. Bring to a boil, then reduce heat to low and simmer, uncovered, until chicken is just cooked through, about 20 minutes. Transfer chicken to a plate; let cool about 30 minutes. Strain broth, discarding solids (you should have about 3 1/2 cups).
- Remove chicken from bones and shred meat into bite-size chunks. Discard skin and bones. You'll need 2 1/2 cups chicken; save the rest for salads or sandwiches.
- Wash and dry Dutch oven or saucepan; melt butter in it over medium-high heat. Add leeks, carrots, celery, potato, 1 teaspoon salt, and some pepper. Cook, stirring, until leeks are translucent, about 4 minutes. Add vermouth; cook until mostly evaporated, about 1 1/2 minutes.
- Stir in flour; cook 20 seconds, stirring constantly. Stir in 2 3/4 cups broth. Bring to a boil, then reduce heat and simmer, stirring often, until potato is just barely tender, about 5 minutes (mixture will look very thick; that's okay, as the vegetables will release liquid in the oven).
- Stir in chicken, peas, artichokes, and chopped tarragon. Season to taste; transfer to a 2 1/2-quart baking dish (such as a 9 1/2-to-10-by-2-inch-deep round one) and let cool 30 minutes, or refrigerate, covered, up to 1 day.
- Preheat oven to 375°F. Brush a sheet of phyllo lightly with melted butter. Scrunch into a loose ball and place on filling. Repeat with more sheets brushed with butter, covering the filling but leaving a bit of space between pieces. Bake until golden brown and bubbling in center, 45 to 50 minutes. Let cool 20 minutes before serving, garnished with tarragon sprig.
MEXICAN CHICKEN IN PHYLLO
This is a fun and flavorful recipe I got off the side of a box of frozen phyllo dough. The recipe has good flavor, but is not particularly spicy, so feel free to kick up the heat to suit your tastes.

- Heat oven to 375. Lightly butter cookie sheet.
- In a large bowl, combine all ingredients excpet phyllo and butter. Set aside.
- Layer phyllo sheets, brushing each with butter - 2 stacks of 6 sheets.
- Spread 1/2 chicken mixture along short edge of each stack of phyllo sheets.
- Allow mixture to cover only 1/4 of sheets and leave 1 1/2 inches uncovered at each side.
- Fold sides in and brush with melted butter.
- Roll jelly-roll fasion and place on cooke sheet, seam side down. Brush with butter.
- Bake at 375 for 20-25 minutes, or until phyllo is browned and crispy.
- Cut each in half.

- Brush two phyllo sheets with butter; stack one sheet on the other. Brush top with butter. - Season chicken breasts with salt and pepper.
- Butterfly chicken breasts and place each breast between two pieces of plastic wrap that is sprayed with some water.
- Using a meat mallet, pound out chicken breasts until 1/4 inch thick.
- Prepare stuffing according to boxed directions. Let cool.
- Place one kale leaf on each chicken breast and top off with 1/6 of the cooled stuffing.
- Roll each chicken breast into a tight log and if needed, insert a toothpick to keep rolled up.
- Place chicken breasts seam side down onto a pan heated on medium and sprayed with cooking spray. Cook until golden brown and flip over. After done cooking on both sides, remove from heat and let cool.
- Preheat oven to 350°F.
- Take 1 sheet of phyllo dough and either spray with cooking spray or brush with melted butter. Place another sheet of phyllo dough over it and repeat until you have four layers. Divide in half. Repeat for rest of phyllo dough until you have 3 sets of 4 layer sheets that are dived in half to make 6 sets.
- Place a cooled chicken breast on each sheet and roll into a log. Brush with melted butter or spray with cooking spray.
- Place into preheated oven and bake for about 10-15 minutes or until golden brown.

- Pre heat the oven to 190 C, 375 F or Gas Mark 5.
- Heat half the olive oil in a saucepan over a moderate heat, add the onion and garlic and fry until soft.
- Add the casserole mix and chicken stock.
- Bring to the boil, reduce the heat and simmer for 30 minutes.
- Heat the remaining olive oil in a frying pan over a moderate heat, add the smoked paprika and fry for 30 seconds, then add the chicken and fry for 5 minutes until browned.
- Add the asparagus and casserole mix to the chicken.
- Add seasoning to taste, cheese, creme fraiche and parsley.
- Remove from the heat.
- Lay 1 sheet of filo on the work surface and brush with melted butter.
- Repeat this with 2 more sheets.
- Cut this in half.
- Place 2-3 spoonfuls of chicken mixture in the centre of the filo.
- Bring the filo together to form a money bag and brush with melted butter.
- Repeat this process using the remaining filo and chicken mixture.
- Place the parcels onto a baking sheet and bake in the oven for 25-30 minutes until golden.

CHICKEN IN PHYLLO DOUGH
Steps:
- Start by layering ingredients; place chicken first, then pesto sauce enough to cover chicken. Place a slice of mozzarella and then Prosciutto to finish it off. Then roll it all up. You may use a toothpick to hold it in place. It's best to make all the chicken rolled up first then roll them up in dough.
- After you've rolled them up, cut the phyllo dough in half lengthwise. Take a sheet of phyllo dough, remember to layer a moist paper towel on the rest of the phyllo because they will harden up if you don't. Brush Crisco all over one side of the phyllo. Then remove the toothpick from the chicken and place it on the bottom of the phyllo dough by you, right in the middle. Then begin by rolling it up and when you get to halfway tuck in the sides of the phyllo. Place it in a pan and finish by brushing more Crisco on it.
- Place it in a preheated oven at 350 for 1 hour. While this is preparing, mix the mushroom soup with milk. You can either serve it over the chicken when it's done or serve it as gravy for those who may not want mushroom soup.
